萝卜红天然食用色素生产新工艺研究

摘    要:以云南通海紫萝卜为原料 ,生产萝卜红天然食用色素。采用树脂分离吸附手段 ,使萝卜中所含色素同非色素物质分离 ,达到提高天然色素品质的目的。该工艺生产的萝卜红色素吸光度E1%1cm( 5 2 0nm)≥ 6 0 ,较原生产工艺的萝卜红色素E1%1cm( 5 2 0nm)≥ 4有较大幅度提高 ,浓缩液体积小 ,仅为浸提液的 1/2 0 ,节约了能耗。

Abstract:Radish raw material in Tonghai county of Yunan province was used to produce natural edible radish red.Resin- separation- loading technique was adopted to separate the pigment from other s ubstances in Radish in order to improve the quality of the natural pigment. Quality of R adish red made by this method [absorbance E 1% _ 1cm (520 nm)≥60 ] is better than that by the former method [E 1% _ 1cm (520 nm)≥4].Moreover ,this method has the advantage of less energy consumption as t he volume of the concentrated product is only 1/20 that of the extrating liqui d.
