Abstract:On the basis of explanation of traditional production of red kojic rice in China, this paper introduced the production technology of red kojic rice for brewing, red kojic rice with high-yielding pigment, and the production of functional red kojic rice. The prospect of red kojic rice industry was forecasted also.
