摘    要:优化溶剂提取、分离条件,并利用高效液相色谱法测定了野生和栽培黑木耳中的还原型谷胱甘肽(GSH)含量.结果表明:野生木耳和栽培木耳均含有较高的GSH,其中野生木耳的GSH含量(2.354 5mg/g)高于栽培木耳(1.148 0mg/g),这可能与其生长环境有关;木耳可作为一种重要的外源性GSH来源的食用菌.

Abstract:The optimal extraction solvent and isolation condition for Reduced Glutathione(GSH) in wild and cultivated Auricularia auricula is investigated,furthermore,the GSH content is determined by High Performance Liquid Chromatography(HPLC) method.The results shows that both the wild and the cultivated Auricularia auricula contains higher GSH content,i.e.,the wild Auricularia auricula is 2.354 5 mg/g on a dry weight basis,the cultivated is 1.148 0 mg/g.The cause of the higher GSH content for the wild Auricularia auricula seem related to growing environment.It shows the Auricularia auricula should become an important edible fungus for exogenous GSH.
