| 摘 要： | 通过测定猪油的过氧化值(POV)、总抗氧化能力、羟自由基(.OH)以及超氧阴离子自由基(O2.)的清除能力检测马尾松、黑松和湿地松3种松针水提液和醇提液的抗氧化能力。结果表明:3种松针水提液的总抗氧化能力、抑制猪油的脂质过氧化都具有较好效果(P<0.01),但醇提液效果不及水提液;3种松针的醇提液和水提液(湿地松水提液除外)对.OH的清除效果极显著(P<0.01),对O2.也有很强的清除作用,而且清除能力与质量浓度有一定的关系。结论:3种松针水提液及醇提液均具有一定的抗氧化能力。
