PSE肉和DFD肉中糖原含量变化分析

摘    要:利用蒽酮比色法进行检测正常肉、PSE肉和DFD肉中糖原含量的变化。糖原标液水解率为95.8%~98.7%,平均值为97.46%,相对标准偏差为1.25%。在0h,正常肉、PSE肉和DFD肉中糖原的平均含量分别为0.7560、0.7456、0.5284mg/g,RSD为0.3689%~0.7566%。PSE肉中糖原含量2h后下降到0.0420mg/g,RSD为2.3890%。正常肉和DFD肉的糖原含量在72h后分别下降到0.0608mg/g和0.0794mg/g,RSD为2.1445%和4.5931%。

Abstract:The change of muscle glycogen of normal,PSE and DFD pork were determined by anthrone agent and spectro photometer.Standard sample solution of glycogen was hydrolyzed from 95.8% to 98.7%,average was 97.46%,RSD was 1.25%.At 0h,average content of muscle glycogen of normal pork was 0.7560mg/g,that of PSE and DFD pork were 0.7456mg/g and 0.5284mg/g,RSD was from 0.3689% to 0.7566%.The average content of muscle glycogen of PSE pork reduced to 0.0420mg/g after 2h,normal pork and DFD pork reduced to 0.0608mg/g and 0...
