摘    要:以大豆11S球蛋白为原料,对微生物转谷氨酰胺酶聚合大豆11S球蛋白的酶解产物进行研究。利用响应曲面法(RSM)分析建立二次回归模型,对加酶量、反应时间、反应温度和pH值4因素进行优化组合。确定聚合的最佳工艺条件为反应温度35℃,加酶量21.12U/g,反应时间2.4h,pH6.1。在最佳工艺条件下,聚合后产品的表面疏水性最低可达到20.45,其溶解性能大大提高。

Abstract:s Taking 11S globulin as raw material,the surface hydrophobicity as index,hydrolyzates of soybean 11S globulin were polymerized by microbial transglutaminase were studied.Quadratic regression model was established by RSM,combination of four factors(dose of enzyme,reaction time,reaction temperature and pH value) was optimized.The optimum conditions of polymerizing were:reaction temperature 35 ℃,dose of the enzyme 21.12 U/g,reaction time 2.4 h,pH 6.1.The lowest surface hydrophobicity of products was reached to 20.45 under these optimum reaction conditions.
