| 摘 要： | 微生物检测步骤多,操作繁,耗时长,反馈慢,往往给食品生产和流通带来一定的影响,如何提高检测速度成为微生物检测的发展重点。阻抗法便是利用微生物能改变培养基导电性能的特性,实现快速检测微生物的数量和种类的一种方法。介绍了阻抗法的发展历史、研究进展、现有的检测用仪器及其应用于微生物检测中的优越性,概述了阻抗法在不同食品微生物检测项目中的应用。

| Abstract: | Microbial detection has a multistep,complex operation and gets result slowly.It often brings difficulty to food production and circulation.How to improve the efficiency has become the focus in microbial detection.Based on the fact that microbes can alter the electrical conductivity of medium,electric resistance can be used to realize rapid detection of microbes.In this paper,the property,development,instruments and applications of electric resistance were summarized. |
