红茶茶褐素化学组成及理化性质的分析

摘    要:以红茶茶褐素为研究对象,分析了其化学组成和理化性质。结果表明:红茶茶褐素经分级所得各组分的含量有一定的差异,其中红茶茶褐素是80%甲醇溶出物含量最多。对红茶茶褐素不同浓度甲醇溶出物的基本成分进行了测定,基本成分各自含量存在差异,但在茶褐素分级物中都是茶多酚、蛋白质和多糖占较大比重;酸性基、羧基、酚羟基和儿茶素则含量相对较低。且不同甲醇浓度提取物的红茶茶褐素在不同pH、不同波长下测得的吸光度不同,其各自变化趋势相似且都是在380nm条件下,吸光值随pH变化其波动幅度最大。

Abstract:Using theabrownin of black tea as the research object,these physicochemical property and Chemical composition of theabrownins was both analysed.The results showed that the content of each component had some differences by grading theabrownin of black tea,and the most abundant was 80% methanol dissolve content in theabrownin of black tea.There was also a certain difference of the basic elements of different concentraction methanol dissolve contents,but the polyphenols,protein and polysaccharide of these were all hold the larger proportion,the content of total acidic group,carboxyl,phenolic hydroxyl and catechin were relatively low.And the optical density value of different concentraction methanol dissolve contents were measured and different in different pH and wavelengths.Their trends were similar respectively and the fluctuation range of optical density value was the largest with the change of pH in the 380 nm.
