掺假蜂蜜检测技术的研究综述

摘    要:通过对蜂蜜掺假的形式、特点等入手,概述了目前在蜂蜜掺假检测中的几种主要可行性方法及其特点:稳定碳同位素比率法、高效阴离子交换色谱-脉冲安培检测法、近红外光谱法、淀粉酶活性检测法和显微镜检验法。最后,对掺假蜂蜜检测技术的发展进行了展望。

Abstract:According to the situation of the forms and characteristics of honey adulteration,this paper reviewed several current main methods and its features on the feasibility of detecting:stable carbon isotope ratio method,high-performance anion-exchange chromatography-pulsed amperometric detection,near-infrared spectroscopy,enzymatic activity detection and microscopic analysis.The prospect of detecting techniques of honey adulteration was also discussed.
