食用植物油中反式脂肪酸的暴露评估

摘    要:采用气相色谱法检测我国居民常用食用植物油中反式脂肪酸的含量,运用Crystal Ball软件对食用植物油样品中反式脂肪酸的暴露水平和暴露影响因子的敏感性进行分析,结果显示反式脂肪酸日均暴露量的平均值为1.81E-4kg/d;食用植物油中反式脂肪酸含量的敏感性最强,占99.3%,拉平时间为负值,表明它对反式脂肪酸日均暴露量起负面的影响。

Abstract:The content of trans fatty acids of vegetable oils was determined by gas chromatographic method.The exposure assessment and sensitivity analysis of exposure factors of the trans fatty acids of samples of vegetable oils were obtained by the Crystal Ball software.The results showed the average daily dose of residents in our county was 1.81E-4 kg/d by intake of vegetable oils.The strongest sensitivity of the the content of trans fatty acids of vegetable oils accounting for 99.3%.The even time is negative,which it is indicated that it has negative effects on daily exposure of trans fatty acids.
