紫茉莉花色素的提取及其稳定性研究

摘    要:文章对紫茉莉花色素的提取及其稳定性进行了研究,主要是通过蒸馏水提取色素,用分光光度法测定其吸光度值,从而来判断紫茉莉花的稳定性及影响因素。结果表明,放置时间对紫茉莉花红色素的稳定性没有太大影响,pH值对色素影响明显,该色素适合于在pH<5的条件下使用,通过初步研究发现,该色素具有一定的开发利用价值。

Abstract:This paper probes into the extraction of the pigment from mirabilis jalapa and its stability.The pigment is extracted by distilled water and its absorbency is tested by spectrophotometer to study its stability and influential factors.Results show that maturing and relaxation time has little effect on the stability of pigment.The pH has significant effects on the tone of the pigment,and this kind of pigment can be used in pH<5.Study shows that the pigment has good value in use and is worth developing.
