摘    要:对黑毛茶接种冠突散囊菌,压制为重量为5g左右的圆柱形的茯砖茶再发酵制作微型茯茶。采用单因素试验和正交试验,通过研究茶叶含水量、汽蒸时间、渥堆温度及渥堆时间,筛选出合适的工艺条件,并确定制作微型茯茶的最佳工艺参数。结果表明,影响微型茯茶品质的环境因子依次为含水量〉渥堆温度〉汽蒸时间〉渥堆时间,最优水平为含水量26%、汽蒸...

Abstract:To develop a kind of mini Fu-brick tea weighing about 5g by inoculating Eurotium cristatum,some related parameters were studied during the process.Results showed that the queue of various factors was the moisture content of raw material,pile fermentation temperature,steam time,pile fermentation time.The optimum culture conditions for fermentation were the moisture content of raw material 26%,steam time 10min,piling time 2h,and piling temperature 70℃.Under that culture condition,the soup of products was red and transparent,had dense incense,tasted sweet and mellow.
