芝麻油品质检测方法的研究现状与分析

摘    要:针对近些年来芝麻油掺伪现象日益严重的问题,对目前采用的芝麻油品质检测方法及其研究现状进行了综述分析。主要介绍了常用的显色法、色谱法、光谱法、电子鼻技术以及一些联用的方法在芝麻油掺伪检测中的研究现状,通过检测脂肪酸、甘三酯、芝麻林素、芝麻酚等特征物质来实现芝麻油品质的有效检测。

Abstract:For the sesame oil adulteration problem in recent years, some current methods for sesame oil quality detection and the research status were discussed. Some common methods for quality detection such as color-displaying method, chromatography, spectroscopy, electronic nose and combi- nation methods were introduced. The quality of sesame oil can be effectively detected by detecting some characteristic components such as fatty acid, triacylglycerol, sesamolin and sesamol.
