| 摘 要： | 花生是公认的优质植物蛋白资源,花生蛋白的营养价值与动物蛋白相近。对花生蛋白的成分、功能特性、营养价值、提取方法以及开发利用现状进行了综述,并对花生蛋白的开发利用前景进行了展望。

| Abstract: | Peanuts represent a rich source of plant protein.The nutrition of peanut protein is similar with that of animal protein.The latest research advances at home and abroad were reviewed from the aspects of the composition,functional properties,extracting method and exploitation of peanut protein.The prospects for the exploitation of peanut protein in the future were viewed. |
