摘    要:以啤酒糟为原料,提取可溶性膳食纤维,后者与脱脂乳混合,接入浮酸菌发酵。经调配、均质等工艺,制成乳酸发酵纤维饮料。综合利用啤酒加工下脚料,既节约,又环保。

Abstract:Soluble dietary fiber isolated from spent grains was mixed with defatted milk and fermented by Lactobacillus. After formulation and homogenization, a new Lactobacillus fermented fiber beverage was manufactured. The operation was considered economical and environment-friendly.
