TH-AADY和生香ADY在小曲米酒生产中的应用

摘    要:将耐高温酒用活性干酵母,生香活性干酵母配合糖化酶应用于小曲大饼米酒生产中,大饼用量由21%减至15%,原料出酒率提高了4.73%,酒质也较以前有所提高,取得了明显的经济效益。

Abstract:We applied the high - temperature - resisting alcoholic active dry yeast and perfume active dry yeast with the saccharogenic amylase to the production of xiaoqu - dabing rice wine and acquired obviously economic benefit. The cost of Dabing decreases from 21% to 15% , the liquor yield of its meterial increases 4.37% and the quality of wine is improved also.
