On the synthesis and characterization of sucrose fatty acid polyesters. Part I. On a new synthesis process A new process is described for the synthesis of sucrose fatty acid polyesters (SPE) as transesterification of sucrose acetate with fatty acid methyl esters in the absence of solvents and in the presence of alkali metal catalysts. SPE are formed with yields of 80 to 90% at the following conditions: molar ratio of fatty acid methyl ester to sucrose acetate at least 8:1, reaction temperature between 110 and 120 °C, reaction time 3 h, and catalyst concentration of 2% sodium or potassium.
