清代中晚期中西饮食文化交流

摘    要:清代是中西饮食文化交流的重要时期,分为闭关自守和门户开放两个阶段。第一阶段中西饮食文化交流的规模和力度都受到极大的限制,交流的时间短,交流内容局限于高档菜肴和广东地方特色菜,并以西方人对东方餐饮文化的感受为交流特点;第二阶段中西饮食文化交流的规模和力度空前增强,中国人接触西餐的机会明显增多,西餐的影响扩大了。同时,大规模的海外移民,推动了中国饮食文化的广泛外传。

Abstract:Qing Dynasty is an important period for the cultural exchange between Chinese and Western diets. It could be divided into two stages; closing the country to international intercourse and opening the door to the outside. At the first stage, the scale and strength of the exchange was greatly limited. The time of exchange was short and its content was only confined to the dishes of high cost and Guangdong dishes of local special flavor. In addition, at the time the exchange was characteristic of the Westerners being affected by Eastern food and drink; at the second stage the scale and strength of the exchange was unprecedentedly promoted. From then on, Chinese people had obviously much more chance to contact Western style food and the influence of Western food extended as well, with the numerous immigrations abroad Chinese dietetic culture also spread far and wide to other countries.
