Due to its significant physical and chemical functions in emulsification, film formation, liposuction, water retention, and anti-oxidation, soy protein isolate has a huge application potential in the field of microcapsule wall material. Present studies showed it played a significant role in improving the oxidative stability of biologically active substances. This article reviews some common preparation methods and current research progress of soy protein isolate microcapsules. Its development potentials were also introduced. |
