Taro (Colocasia esculenta L.), an important food staple for millions of people, is grown exclusively in the tropical and semitropical regions of the world. It is cultivated mainly in developing countries, rarely on large plantations but on small farms with little technology. The purpose of this study was to investigate the effect of cultivars and field preparations of taro corms on the nutrient content and protein nutritional quality. Three local cultivars of taro corms were grown by paddy and upland cultivation in Taiwan. The results showed that taro contained 63.6%–72.4% moisture, and upland-cultivated taro corms retained a higher moisture content compared to paddy taro. Results revealed that taro corms also contained 21.1%–26.2% starch and 1.75%–2.57% crude protein and provided total energy in the range of 97.1–118.3 kcal/100 g fresh taro. Taro corms had reasonably high contents of potassium and magnesium, whose ranges were 2251–4143 and 118–219 mg/100 g dry matter, respectively. Upland-cultivated taro tended to have higher mineral content than paddy taro. Taro corms are moderately good sources of water-soluble vitamins, such as thiamin, riboflavin and ascorbic acid, compared to other tropical roots. A higher soluble sugar content in upland-cultivated taro corms was found than in paddy taro. The cultivar Mein contained higher soluble fibre levels than two other cultivars. Total oxalate and phytic acid levels of taro corms were in the range of 234–411 and 139–169 mg/100 g dry matter, respectively, which included 60%–75% of water-soluble oxalate. Essential amino acid contents of taro proteins from both paddy and upland cultivation were fairly similar to the FAO reference pattern, except for the contents of sulfur-containing amino acids, tryptophan, and histidine.  相似文献

Polyphenoloxidase (PPO) was partially purified from chufa corms through ammonium sulphate precipitation and dialysis. Biochemical properties of chufa PPO were analysed using exogenous substrate catechol. Optimal pH and temperature for PPO activity were 5 and 45 °C. Ethylenediaminetetraacetic acid disodium salt and l-cysteine could not inhibit the PPO activity. However, sodium thiosulphate pentahydrate exhibited the strongest inhibiting effect, followed by ascorbic acid and anhydrous sodium sulphite. Except for K+, other metal ions such as Zn2+, Cu2+, Fe3+, Ca2+, Fe2+ and Na+ accelerated the enzymatic reaction between catechol and PPO. Kinetic analysis showed that the apparent Km and Vmax values were around 10.77 mM and 82 units/ml min. In addition, (−)-gallocatechin gallate, (−)-epicatechin gallate and (+)-catechin gallate isolated and identified from chufa corms were supposed to be the potential endogenous PPO substrates due to their ortho-diphenolic or pyrogallolic structures. These polyphenols might be catalysed by PPO, resulting in the browning of chufa corms after fresh-cut processing.  相似文献

The acidification properties, metabolic activity and technological performance of four individual Lactobacillus plantarum or Leuconostoc freeze-dried starters were investigated during a complete wheat sourdough breadmaking process including 0.2 g/100 g baker's yeast. Microbiological contents (lactic acid bacteria and yeasts), acidification characteristics (pH and total titratable acidity), soluble carbohydrates (maltose, glucose and fructose) and fermentative end-products (lactic and acetic acids, ethanol) contents were evaluated during both sourdough and corresponding bread dough fermentation. Biochemical and technological analysis of the resulting bread products are also presented. Some differences among strains in acidification properties and soluble carbohydrates availability were outlined both in sourdough and bread dough. Each individual Leuconostoc or Lb. plantarum starter was able to produce a characteristic fermentation and was found to ensure the production of breads with overall satisfactory acceptance.  相似文献

The physicochemical, nutritional, and functional variations of Myrtillocactus geometrizans and Myrtillocactus schenckii, were assessed. Variations of characteristics among species and geographic origin were lower compared to prickly pear. Titratable acidity, and total soluble solids varied by 7.7%, and 11%, respectively. Variations of protein (18.5%) and fibre (5.2%) contents were lower when compared to prickly pear. Iron and copper contents make Myrtillocactus a good source of minerals contributing 16% and 20% of daily requirements. Myrtillocactus also could be an outstanding source of fibre (up to 36.9%). Gallic and caffeic acids, and vanillin were identified by HPLC. Betalains, soluble phenolics, and vitamin C contribute to the high antioxidant activity (TEAC) which, if compared with commonly consumed fruits, was higher. The potential for the production of high-quality industrialised products derived from Myrtillocactus is feasible, as long as compositional variations from batch to batch are kept in check.  相似文献

Anatomical studies of the healthy corms of Colocasia esculenta showed an outer corky layer and inner cortex of mainly parenchymatous cells. The ethanol soluble carbohydrates were extracted and identified as maltose, sucrose, glucose and fructose. The two cultivars ‘ikpong’ and ‘cocoindia’ used in these studies also contain appreciable quantities of lipids, proteins and oxalate. The major carbohydrate component of the corm was starch. The two organisms, Botryodiplodia theobromae and Sclerotium rolfsii which were the most important rot pathogens of C. esculenta penetrated and colonised the corm tissue intercellularly and intracellularly. The infected cells were cleared of most of their starch grains and the cells disintegrated within ten days of inoculation. Apart from destroying the histological structure of the corms, the carbohydrate, protein and lipid contents were reduced on infection by both organisms. However, the oxalate content increased after infection by S. rolfsii.  相似文献

Acid soluble collagen (ASC) and pepsin soluble collagen (PSC) were extracted from scale of spotted golden goatfish (Parupeneus heptacanthus) with the yields of 0.46% and 1.20% (based on dry weight basis), respectively. Both ASC and PSC were characterised as type I collagen, containing α1 and α2 chains. β and γ components were also found in both collagens. Based on FTIR spectra, the limited digestion by pepsin did not disrupt the triple helical structure of collagen. ASC and PSC contained glycine (336–340 residues/1000 residues) as the major amino acid and had imino acids of 186–189 residues/1000 residues. Maximal transition temperatures (Tmax) were 41.58 and 41.01 °C for ASC and PSC, respectively. From zeta potential analysis, net charge of zero was found at pH 4.96 and 5.39 for ASC and PSC, respectively. Both collagens exhibited high solubility in acidic pH (2–4) and were soluble in the presence of NaCl at concentration up to 20 and 30 g/l for ASC and PSC, respectively.  相似文献

The antioxidant activities of crude extract and its derived soluble fractions from the flower of Sophora viciifolia were evaluated in five different test systems (DPPH, ABTS, FRAP, reducing power and inhibition of lipid peroxidant models) for the first time. The ethylacetate soluble fraction exhibited the highest antioxidant effect. Correlation analysis suggested that the flavonoids might be the major contributors for the high antioxidant activity of this flower. In addition, 11 compounds were isolated from this flower, and the antioxidant capacities of 5 flavonoids were evaluated by DPPH assay. Compound 3 (luteolin) had a significant DPPH radical-scavenging activity, and was also present at the highest concentration (5.56 mg/g dry sample), implying an important role of 3 for the antioxidant activity of this flower. The study suggests that the flower of S. viciifolia can provide valuable functional ingredients and can be used for the prevention of diseases related to various oxidant by-products of human metabolism.  相似文献

This work describes radiation-induced effects on edible seed protein profiles, carbohydrates, amino acids and genomic DNA during gamma sterilization. The total protein and carbohydrate was decreased with increasing dose compared to control samples. Oryzasativa L. Cv-2233 exhibited a minimum effect in terms of its loss in total soluble protein content, compared to other seeds at 6 kGy, and the soluble protein fraction, containing 14–16 kDa albumins and 22 kDa globulin, was unchanged up to 6 kGy. In Cicer arietinum, the effect of gamma rays was more pronounced on albumin and prolamin with respect to glutelin and globulin. The easy-to-digest and difficult-to-digest proteins were not significantly affected up to 4 kGy. However, the soluble free amino acids of all the seeds increased with increasing dose. The total DNA content and band intensities both decreased with increasing absorbed dose; however, the band positions were unchanged for all seed types.  相似文献

The juice in fruits of 21 genotypes of Japanese quince (Chaenomeles japonica), 1 genotype of Chinese quince (C. cathayensis), 1 genotype of flowering quince (C. speciosa) and 1 genotype of a hybrid taxon (C. ×superba), representing plant breeding material, was extracted and characterized. The content of juice in the fruits varied between 41% and 52%, on fresh weight basis. The juice was very acidic (pH 2.6 and a titratable acidity of 3.5% calculated as anhydrous citric acid, on average) and transparent (52 NTU, on average), with low density and viscosity. The content of soluble solids was also low (7.1°Brix, on average). Proteins constituted 26 mg/100 ml juice on average, but no soluble polysaccharides were present. A high content of vitamin C (59 mg/100 ml juice, on average) and phenols (284 mg/100 ml juice, on average), beside the high acidity of the juice, suggests that chaenomeles juice may be an interesting raw material as ingredient for the food industry and a source of valuable substances. A principal components analysis separated the Japanese quince genotypes from the other genotypes studied, thus indicating a clear difference in the characteristics and chemical composition of the juice.  相似文献

The effects of Lactobacillus plantarum alone or in combination with chitosan were evaluated on quality and color retention in rambutan fruits (Nephelium lappaceum) stored at 25 °C and 10 °C with 75 ± 2.5% of relative humidity for 10 and 15 days, respectively. The development of the microorganisms was evidenced by viability analyses and lactic acid production. The application of L. plantarum significantly improved color retention (a* and L*), and reduced weight losses. The lactobacilli, alone or in combination with chitosan, preserved fruit quality characteristics such as firmness, total soluble solids and titratable acidity. The lactobacilli application on rambutan pericarp produced acidification of pericarp and avoided the browning; thereby desiccation was prevented due to biofilm formation.  相似文献

Fruits of Rosa canina, Rosa dumalis subsp. boissieri, Rosa dumalis subsp. antalyensis, Rosa villosa, Rosa pulverulenta and Rosa pisiformis were assayed for total phenolics, ascorbic acid, total soluble solids, total dry weight, total fat, fatty acids, pH, acidity, moisture, fruit colour and macro- and micro-elements. The highest total phenolic content was observed in Rosa canina (96 mg GAE/g DW). Rosa dumalis subsp. boissieri had the highest total fat content (1.85%), followed by Rosa pulverulenta (1.81%) and Rosa canina (1.78%), respectively. Nine major fatty acids were determined in rose species and α-linolenic acid was found to be dominant for all species. Total soluble solids, total dry weight, moisture and ascorbic acid contents of rose species varied from 29.42% (Rosa villosa)–37.33% (Rosa dumalis subsp. boissieri), 33.85% (Rosa villosa)–40.35% (Rosa dumalis subsp. boissieri), 59.65% (Rosa dumalis subsp. boissieri)–66.15% (Rosa villosa) and 727 mg/100 g FW (Rosa villosa) and 943 mg/100 g FW (Rosa dumalis subsp. boissieri), respectively. Nitrogen and mineral compositions of the rose species, e.g., N, P, K, Ca and Mg, were (averagely): 1.26%, 513 mg/100 g DW, 639 mg/100 g DW, 196 mg/100 g DW and 114 mg/100 g DW, respectively. The present study shows that the native rose genotypes are extremely rich sources of phenolics, carbohydrates and ascorbic acid, demonstrating their potential use as a food or food additive.  相似文献

The monosaccharide compositions of parenchyma cell walls of raw and cooked corms of taro, Colocasia esculenta cv Tausala Pink, were determined. The cell wall constituents were sequentially extracted using CDTA, Na2CO3, 1 M KOH, 4 M KOH and water to leave a final residue (α‐cellulose). The monosaccharide compositions of the cell walls and cell wall fractions from the raw and cooked corms were consistent with the presence in these cell walls of large amounts of cellulose and pectic polysaccharides. The monosaccharide composition of the cell walls of the raw corms resembled the monosaccharide compositions of primary cell walls of other non‐commelinoid monocotyledons and dicotyledons. Cooking of the corms resulted in alteration of the cell walls, with solubilisation of pectic polysaccharides occurring earlier in the sequential fractionation and possibly changes in the extractability of xyloglucans and/or xylans. © 2000 Society of Chemical Industry  相似文献

Three species of dried mushrooms are commercially available in Taiwan, namely Agaricus blazei (Brazilian mushroom), Agrocybe cylindracea (black popular mushroom) and Boletus edulis (king bolete), and their non-volatile taste components were studied. All mushrooms were high in contents of carbohydrate, crude fiber and protein but low in contents of crude ash and fat. Arabitol, myo-inositol, mannitol and trehalose were detected in these three mushrooms, whereas glucose was not found in B. edulis. Contents of total soluble sugars and polyols ranged from 150.33 to 225.08 mg/g. Total free amino acid contents were low in these three mushrooms and ranged from 8.97 to 14.91 mg/g. The contents of MSG-like components ranged from 1.24 to 4.40 mg/g were in the descending order of the A. blazei, A. cylindracea and B. edulis. Total 5′-nucleotides contents of A. blazei and A. cylindracea were higher than that of B. edulis whereas flavor 5′-nucleotides content of A. blazei was higher than those of A. cylindracea and B. edulis. Equivalent umami concentrations values in three mushrooms ranged from 10.46 to 135.90 g per 100 g. Overall, these three mushrooms possessed highly umami taste.  相似文献

Corms starch displayed lower hydration properties, lower apparent viscosity during heating and cooling and higher gelatinisation temperatures than cormels starch. Gels from corms starch showed less syneresis than cormels starch, but no significant differences were observed regarding their hardness. Therefore, the part of the araceas plant from which the starch is extracted must be always defined, because significant differences in their functionality are ascribed to their morphological origin.  相似文献

Opuntia flowers belonging to two species of prickly pear were evaluated at four flowering stages: vegetative, initial flowering, full flowering and post-flowering stage, for possible use as a potential source in the food enrichment. Chemical composition including moisture, ash, protein, fat, soluble sugars, total fibers, mineral amounts and fatty acid profiles of Opuntia ficus-indica and Opuntia stricta flowers were investigated. Functional properties (swelling capacity (SWC), water holding capacity (WHC), water solubility index (WSI) and oil holding capacity (OHC)) were also studied. Results showed that during the maturation of flowers, there is a decrease in protein contents whereas fat contents increase, for both species. High minerals amounts were noticed in Opuntia flowers and they can be considered as an excellent source of minerals. The fatty acids profiles were dominated by the palmitic acid (38–59%). The techno-functional properties (SWC, WSI, WHC and OHC) were found to be important and they can be modulated according to the temperatures. Owing to its chemical profile and functional properties, Opuntia flowers could be used as an ingredient to improve different physical and nutritional properties of foods.  相似文献

Cinnamomum burmannii is cultivated for use as a spice, and as an ornamental tree. With the aim to develop a natural colorant for use in cosmetics and food additives from a new source, in the present study, pigment derived from C. burmannii' peel (CBP) was isolated by alkaline extraction, acid hydrolysis, repeated precipitation and purification by Sephadex G-75 with a total yield of 0.06 g/100 g (wet weight basis). The color values of the pigment was E1 cm1% 278 nm = 65.21. Physical and chemical properties revealed that CBP presses similar properties as most natural pigment. It was scarcely soluble in both water and all common organic solvents, and was soluble only in alkaline aqueous and DMSO. It was stable under ultraviolet light or room-light, stable in the range of 25-100 °C, relatively stable in alkaline aqueous and reducer, but was bleached by strong oxidants (KMnO4, H2O2 and NaOCl). Sodium benzoic acid, tartaric acid, table salt and cane sugar affected it slightly. Spectroscopic analysis of CBP in relation with its structure was also discussed. This is the first report on the characterization of pigment obtained from C. burmannii 'peel.  相似文献

The amount of phenolic acids, flavonoids and betalains in Andean indigenous grains, quinoa (Chenopodium quinoa), kañiwa (Chenopodium pallidicaule) and kiwicha (Amaranthus caudatus), was determined. The total amount of phenolic acids varied from 16.8 to 59.7 mg/100 g and the proportion of soluble phenolic acids varied from 7% to 61%. The phenolic acid content in Andean crops was low compared with common cereals like wheat and rye, but was similar to levels found in oat, barley, corn and rice. The flavonoid content of quinoa and kañiwa was exceptionally high, varying from 36.2 to 144.3 mg/100 g. Kiwicha did not contain quantifiable amounts of these compounds. Only one variety of kiwicha contained low amounts of betalains. These compounds were not detected in kañiwa or quinoa. Our study demonstrates that Andean indigenous crops have excellent potential as sources of health-promoting bioactive compounds such as flavonoids.  相似文献
