Fatty acid composition of intramuscular, intermuscular, subcutaneous, omental and kidney knob fat depots of eighty male light lambs (±21 kg live weight) from five Spanish sheep breeds was analysed. Fat depot, anatomical depot location (internal, external and intramuscular), breed (Spanish Merino, Grazalema Merino, Churra Lebrijana, Segureña and Montesina), weaning type (weaning at 45 days after birth or no weaning) and subcutaneous fat thickness factors were analyzed using a statistical model to quantify their contribution to the variation of each fatty acid. Production system was the main factor to explain variations in overall fatty acid profiles (34.68%). However, for several fatty acids and indices (arachidonic, linoleic, PUFA, n − 3/n − 6) anatomical depot location was the most significant factor. Feeding system explained 65.49% of CLA variance, indicating a strong influence of suckling period length on CLA deposition in lambs’ fat. Moreover, due to the lack of interaction between anatomical depot location or depot and breed type or weaning system for total CLA, for future research only one depot would be enough to study the effect of those factors on CLA levels.  相似文献

The effects of breed, slaughter weight and ageing time on the meat quality of the three most important Spanish breeds were considered. Two hundred and twenty-five lambs of Rasa Aragonesa-local meat breed-, Churra-local dairy breed- and Spanish Merino were used. Animals (75 of each breed) were slaughtered at three different live weights (10–12, 20–22 or 30–32 kg), and the meat was aged for 1, 2, 4, 8 or 16 days. The meat pH, colour, amount of haem pigments, intramuscular fat, moisture, hydroxyproline content and sarcomere length were measured at 24 h post-mortem. Meat texture was measured by compression after each ageing time. The pH of the samples ranged from 5.50 to 5.58. Meat colour varied with breed and slaughter weight (P  0.01), the M. longissimus thoracis was lighter in the youngest animals and in the Churra breed and redder in Merinos. Intramuscular fat increased and moisture decreased for heavier lambs. Differences in collagen were associated with breed (P  0.01); total and insoluble collagen contents were higher in the Churra breed. Sarcomere length was only slightly affected by slaughter weight. Meat from the Churra breed had the highest values at high levels of compression. Suckling lambs (10–12 kg) had greater myofibrillar toughness than heavier lambs and ageing strongly influenced myofibrillar tenderness.  相似文献

Consumers (n = 265) tasted semitendinosus (ST), semimembranosus (SM) and gluteo biceps (GB) (right and left) from 180 entire male lambs. Muscles were from three Spanish breeds: Rasa Aragonesa (local meat breed), Churra (local dairy breed) and Spanish Merino. Within breed, three slaughter live weights were considered (10–12, 20–22 or 30–32 kg). Isolated muscles were aged under vacuum package for 1, 2, 4, 8 or 16 days. Consumers evaluated tenderness, flavour quality and overall acceptability. Globally, the three attributes were significantly influenced by breed, slaughter live weight and ageing. Considering breed effect, Churra had the lowest scores for tenderness in the heaviest lambs while Spanish Merino was the most tender at 20–22 kg but there were no differences between either for 10–12 kg lambs. Muscles from the heaviest lambs were considered the toughest and those from the 10–12 kg lambs the most tender. Tenderness improved with ageing, but more for SM and GB. Flavour was better in the lightest lambs and, in general, it was not affected negatively by ageing. Consumers preferred meat from the 10–12 kg lambs in all breeds (the most tender and with the best flavour) and aged for intermediate to long periods (4–16 days). For the three attributes, the ST muscle had the best ratings at short ageing times and GB at long ageing times.  相似文献

Effect of breed on carcass measurements and meat quality characteristics were investigated by using 46 lambs from Turkish Merino, Ramlic, Kivircik, Chios and Imroz breeds. Chios and Imroz carcasses had smaller values for carcass quality characteristics. Breed had no significant effect on pH at 45 min and 24 h post-mortem, water holding capacity and cooking loss. Kivircik and Imroz lambs had lower Warner Bratzler shear force values than those of Ramlic and Turkish Merino lambs (P < 0.01). Meat samples from Kivircik lambs had the highest redness value. Differences among breeds for sensory characteristics, except tenderness were not significant. Tenderness scores given to meat samples of Kivircik lambs were significantly higher (P < 0.01) than those of Turkish Merino, Ramlic and Imroz lambs. Indigenous Kivircik breed, which had high carcass quality as those of improved breeds, might be considered for production of better quality meat in Marmara Region of Turkey.  相似文献

The influence of breed on carcase and meat quality traits was studied in 48 suckling lambs (approximately 1 month old) from the Churra, Castellana and Manchega Spanish breeds and Awassi crosses. Carcase quality traits were determined by visual assessment and objective measurements. Meat quality was assessed by instrumental and sensory analysis. Breed effect was significant for fatness, carcase conformation and fat colour (visual indicators); dressing %, carcase weight, carcase length, buttock and chest measurements, and lean and fat proportions in the left half of the carcase. A significant breed effect was observed for some instrumental measurements of meat quality (meat colour and cooking losses), and for some sensorial attributes (tenderness and juiciness). These results suggest that there is a measurable effect of breed on both carcase and meat quality traits in this type of young suckling lamb, owing to differences in precocity and inherent productive capabilities.  相似文献

The aim was to evaluate the effect of maternal rearing system on the chemical composition and odour profile of meat from suckling lamb. Twenty-four single male suckling lambs raised exclusively on maternal milk came from two rearing systems (extensive and intensive), and from Castellana and Churra breeds. The fatty acid composition of lamb meat from both breeds was affected by the rearing system, and Churra lamb reared under the extensive system had noticeable changes in odour attributes as detected by panellists and an electronic nose. Using partial least squares-discriminant analysis, the electronic nose was able to discriminate accurately between samples of Churra and Castellana meat according to their production system. However, it was not able to correctly classify meat samples from the extensive and intensive systems when both breeds were analysed together. The results suggest a significant effect of the rearing system and breed on suckling lamb meat quality traits.  相似文献

The main objective of this study was to evaluate the effects of ewe dietary treatments on the intramuscular fatty acid composition of suckling lambs. Twenty-four pregnant Italian Merino ewes were divided into two equal groups. One group (pasture-fed group) was allowed to graze a natural pasture and the other group (stall-fed group) was penned indoors and fed with hay and concentrate. After lambing, all ewes stayed with their respective lambs for the whole experimental period. Lambs were slaughtered at 100 days of age with an average live weight of 20kg. Fatty acid profiles of milk and lamb meat (longissimus lumborum muscle) were analysed. Intramuscular fat from pasture-fed lambs showed higher (P<0.001) proportions of polyunsaturated fatty acids. The percentage of lauric (C12:0; P<0.05), palmitic (C16.0; P<0.001) and oleic (C18.1; P<0.001) fatty acids were higher in the intramuscular fat from stall-fed lambs, whereas pasture-fed lambs showed greater proportions of linolenic (C18:3; P<0.001), eicosapentaenoic (C20:5; P<0.001) and docosapentaenoic (C22:5; P<0.05) fatty acids. Moreover, the intramuscular fat from pasture-fed lambs displayed a higher (P<0.001) PUFA/SFA ratio, and a lower (p<0.001) n-6/n-3 ratio. The conjugated linoleic acid (CLA) tended to be higher (P=0.07) in the intramuscular fat from pasture-fed lambs. This study confirmed that pasture enhanced the unsaturated fatty acid profile of intramuscular fat in lambs including n-3 fatty acids.  相似文献

Intramuscular, subcutaneous and kidney knob fat depot fatty acid profiles were studied in 104 male suckling kids from seven Spanish breeds: Blanca Andaluza, Blanca Celtibérica, Moncaína, Negra Serrana-Castiza, Pirenaica, Malagueña and Murciano-Granadina. Kids were raised in the traditional production system on mother's milk and slaughtered at around 7 kg live weight. Differences were observed between dairy (Malagueña) and meat breeds (Blanca Andaluza, Blanca Celtibérica, Moncaína, Negra Serrana-Castiza, and Pirenaica). Malagueña showed higher monounsaturated and conjugated linoleic fatty acid levels than the other breeds. Highest percentages of saturated fatty acids were observed in meat breeds. For intramuscular fat depot, the range for desirable fatty acids was 66.16–72.27% was. The influence of breed on fatty acid profiles of intramuscular, subcutaneous and kidney knob fat depots studied was evident. Intramuscular fat depot is proposed as a differentiating factor between dairy and meat breed goat kids, but not between meat breed kids.  相似文献

The main objective of this study was to evaluate the effects of supplementing lactating ewe diets with extruded linseed on the fatty acid (FA) composition of intramuscular and subcutaneous fat depots of suckling lambs. Twenty-four pregnant Churra ewes were divided into two groups based on the milk production, age, body weight and parity, and assigned to one of two treatments. Each ewe of the Control treatment was supplemented with 70 g/day of FAs from a calcium soap of palm oil, while the other treatment group (Lin) was supplemented with 128 g/day of extruded linseed. All lambs were reared exclusively on milk and were slaughtered when they reached 11 kg live weight. FA profiles of ewe milk, lamb meat and subcutaneous adipose tissue were determined by GC. Lamb performance was not affected by the treatments. Muscle fat and adipose tissue from the Lin treatment showed higher proportions of polyunsaturated fatty acids (PUFA). The percentages of α-linolenic (C18:3 n − 3), docosahexaenoic (C22:6 n − 3), vaccenic (trans-11 C18:1) and rumenic (cis-9, trans-11 C18:2) acids in both fat depots were higher in Lin than in Control suckling lambs. Furthermore, meat fat from Lin carcasses displayed a lower n − 6/n − 3 ratio than Control samples. Intramuscular depots clearly showed a greater content of PUFA, including cis-9, trans-11 C18:2, and a lower n − 6/n − 3 ratio than subcutaneous fat. The results from this study demonstrate that dietary extruded linseed supplementation of lactating ewes enhances the nutritional quality of suckling lamb fat depots such as intramuscular and subcutaneous fats.  相似文献

The effects of breed and slaughter weight on chemical composition, fatty acid groups, texture, and sensory characteristics of meat of 141 suckling male kids from 5 Spanish breeds were studied. There was a decrease in texture and lightness and hue angle with the increase of the slaughter weight. Fatty acid composition was correlated with the intramuscular fat content. All the breeds except MO had values of n-6/n-3 ratio below 4, which is the healthy limit recommended, and a low atherogenic index as well as a low intramuscular fat content. A multivariate analysis discriminated light kid, which had the most tender and juicy meat, from heavy kid which had more intense kid and milk odours. Blanca Andaluza and Pirenaica had most tender and juicy meat. The effect of slaughter weight on meat traits should be considered separately for each breed to find the most appropriate meat according to consumers preferences.  相似文献

A total of 72 lambs weighing between 10.1-13.0 kg (category C of the European Union grading for light lambs) from the Bragan?ano, Campani?o, Merino Branco, Merino Preto e Serra da Estrela breeds were studied. These breeds represent 66.8% of the Portuguese sheep population. Evaluations were made at the same subcutaneous fat contents in the carcass (88.5 g kg(-1)). Small, significant (p < 0.05) differences in the range of muscle and bone contents were found; the ranges being 30 and 25 g kg(-1), respectively. These variations led to significant diferences in the muscle:bone ratios, the highest value being 3.30 and the lowest 2.73. Significant differences were also found in the content of higher-priced joints (leg + chump, loin + ribs and anterior ribs) and in the proportion of kkcf (9 g kg(-1)). No significant differences were found in the content of total fat [subcutaneous, intermuscular and kidney knob and channel fat (kkcf)] and in the muscle: total fat ratios.  相似文献

In Spain, ewe milk is mainly used for cheesemaking, and farming systems have traditionally been based on the use of autochthonous breeds. However, in recent years, the progressive introduction of highly productive foreign breeds in Spanish farms has led to an increasing interest in the characterization of dairy sheep breeds to evaluate whether genetic selection schemes should focus on productivity or milk technological aptitude. The purpose of this work was to explore milk composition and coagulation to classify 4 of the main dairy sheep breeds used in Spain. This study included 832 individual ewe milk samples from the breeds Manchega, Assaf, Merino de Grazalema, and Merino de Los Pedroches. Samples were analyzed for native pH, composition (fat, protein, lactose, and total solids), coagulation properties, and individual laboratory curd yield. An indicator of coagulation efficiency was also determined. Canonical discriminant analysis was performed to establish differences and similarities among breeds based on the measured variables. In addition, cluster analysis was performed to study and quantify the concrete relationships among the discriminated groups. Discriminant analysis proved to be a powerful tool to accurately draw distinctions between breeds. In all cases, discrimination among breeds was evident and the 4 breeds could be easily differentiated. Cluster analysis showed greater similarity between Merino de Grazalema and Assaf compared with the other breeds, and F-statistics indicated a higher discriminating ability for the variables related to milk composition. However, Merino de Grazalema and Manchega were difficult to separate according to milk composition, but the coagulation process differenced them clearly. Coagulation also evidenced similarities between Manchega and Merino de Los Pedroches, although the latter was revealed to be the most different breed of all 4, which could lay the ground for its differentiation as an independent breed in the Official Catalogue of Spanish Livestock Breeds.  相似文献

This study was conducted to evaluate concentrate level (CL) and slaughter body weight (SW) effects on growth performances, carcass traits and meat quality of Barbarine lambs. Twenty-four weaned male lambs (23.1 kg), receiving an oat-hay based diet, were allotted into two groups. The LCL group received low concentrate level (300 g) and the HCL group received high concentrate level (600 g). Lambs were slaughtered at two prefixed weights (35 and 42 kg). For each group and each weight, six lambs were slaughtered. Lambs from HCL group had higher ADG, carcass yields, carcass compactness and subcutaneous fat thickness, and lower carcass meat proportion. CL increase did not affect meat pH, meat and fat color, chemical and fatty acid composition. Late slaughtering improved carcass yields and increased carcass adiposity. However, it did not affect carcass meat proportion and shoulder tissue composition. SW had effect on meat color and fatty acid composition.  相似文献

Physico-chemical and sensory characteristics of lamb meat were evaluated in crossbred ram lambs from Merino ewes and Oxford Down, Texel, Charollais, Suffolk and Merinolandschaf sires. The lambs were slaughtered at average age 119.2 days, live weight 34.6 kg and carcass weight 16.3 kg. Samples of M. longissimus lumborum et thoracis were used for measurements of pH values, electrical conductivity (EC), drip loss, contents of dry matter (DM), protein, intramuscular fat (IMF), ash, and hydroxyproline and for sensory analysis. The breed of sire significantly affected pH 24 and 48 h postmortem, EC 24 h postmortem, protein content and juiciness (P < 0.05). Significant negative correlations between pH48 and DM (− 0.255) and pH48 and IMF (− 0.258) were found (P < 0.05). A significant positive correlation between EC48 and drip loss (0.366) was observed (P < 0.05). Progeny of Charollais sires had meat of better quality than the others; the highest content of protein and IMF, the lowest drip loss and the best juiciness and texture.  相似文献

Forty-eight lamb carcasses were divided into four groups (n = 12) according to slaughter weight (24 and 29 kg) and sex (male and female). Colour, pH, moisture, and intramuscular fat were not affected (p > 0.05) by slaughter weight or sex. With respect to fatty acid composition, slaughter weight had significant effects on C12:0 (p < 0.01), C14:0, C16:0, and C18:1 n-9 (p < 0.05) in Longissimus lumborum (LL) muscle. The percentage of C12:0 and C14:0 decreased as slaughter weight increased, while C16:0 increased. In Semimembranosus (SM) m., only C18:3 n-3 and C20:2 n-6 were affected (p < 0.001) by slaughter weight. Total PUFA in LL m. was greater (p < 0.01) in females than in males. Although in general, sensorial quality was not significantly affected by slaughter weight or sex, meat from lighter lambs (24 kg) had greater general acceptability than meat from heavier lambs (29 kg).  相似文献

The aim of this work was to study the effect of the inclusion of calcium soap (CS) in ewes’ diet on the fatty acid profile of suckling lambs. Sixty suckling lambs of three breeds (Castellana, Churra and Assaf) were divided into two equal groups. One group was fed with a diet composed of beetroot pulp, alfalfa, barley, corn, soy, cotton and 4% of CS, and the other with a control diet without CS. The fatty acid profiles of the ewe’s milk samples collected on the day before slaughter and of the lamb subcutaneous fat collected from the back of the carcasses were analysed. The addition of calcium soap to the ewe’s diet did not change the milk fatty acid profile but significantly increased SFA and decreased both the PUFA and MUFA levels of suckling lamb fat. PCA analysis revealed a good separation of the lamb samples according to the diet of the mothers, showing that diet is more important than breed in explaining sample variability.  相似文献

选择5月龄苏尼特羊、小尾寒羊各10?只,测定其屠宰性能,再分别取背最长肌测肉品质、脂肪酸含量以及挥发性成分并进行比较。结果表明:苏尼特羊的净肉率和肉骨比显著大于小尾寒羊(P<0.05)。苏尼特羊的色泽(a*、b*)、嫩度优于小尾寒羊(P<0.05),熟肉率和pH值没有显著差异;从脂肪酸含量分析发现,苏尼特羊肉中饱和脂肪酸与多不饱和脂肪酸含量均高于小尾寒羊,其中C16:0和C18:0含量显著高于小尾寒羊(P<0.05),但含量比较丰富的不饱和脂肪酸(C18:1、C18:2n6c和C20:4n6)在2?种羊之间没有显著差异(P>0.05)。羊肉的挥发性成分主要由羰基化合物和醇类化合物组成,不同品种对挥发性成分的相对含量和构成影响很大,苏尼特羊的醛类和酮类化合物含量高于小尾寒羊,但醇类化合物含量低于小尾寒羊,筛选主要风味化合物为己醛、辛醛、壬醛、1-辛烯-3-醇和2,3-辛二酮。  相似文献
