The possibilities of detecting hazelnut paste adulterated with refined and non-refined vegetable oils have been studied. Research was focussed mainly on peanut, high oleic-acid sunflower, corn and soybean oils which have a similar composition to hazelnut oil. The analytical procedures to detect fatty acid (FA), triacylglycerol (TAG) and tocopherol profiles as indicators of adulteration were determined. The better indicators experimentally determined were seven FA (palmitic, stearic, linoleic, linolenic, arachidonic, behenic and lignoceric acids) and different TAG with three unsaturated FA (the code letters used for FA are: P = C16:0; S = C18:0; O = C18:1; L = C18:2;; Ln = C18:3) (LLLn, LLL and OOO), two unsaturated FA (POL, PLL and SOO), and one unsaturated FA (PPL). As expected, when refined vegetable oils were added to hazelnut paste, the increment of stigmasta-3,5-diene allowed detection at levels of 2% oil added. Limits of detection were measured using standard and adulterated hazelnut with different amounts of non-refined vegetable oils added (5%, 10%, 20% and 30%). The distribution of tocopherols and tocotrienols is highly useful, except in the case of added sunflower oil. The differences between the experimental and theoretical values of the TAG with equivalent carbon number (ΔECN) of 42 does not improve the detection limit of hazelnut paste adulterated with peanut or sunflower oils. Similarly, tocopherols usually added to refined vegetable oils as an antioxidant were also determined.  相似文献

采用气相色谱-飞行时间串联质谱和超临界二氧化碳提取技术,分析评价5 种木本油料种籽油的脂肪酸组成及相对含量。油茶和榛子种籽油中富含油酸,亚油酸是沙棘和文冠果种籽油中的主要脂肪酸,牡丹种籽油中的亚麻酸含量最高。沙棘种籽油的单不饱和脂肪酸与饱和脂肪酸比值为1.57:1,亚油酸与亚麻酸的比值为1.56:1,符合功能性健康食用油的标准;牡丹种籽油是补充人体ω-3脂肪酸的优质食用油;油茶和榛子种籽富含单不饱和脂肪酸,适合食品加工;文冠果种籽油含有3 种长链单不饱和脂肪酸(如神经酸等)。本实验评价了5 种木本油料油脂脂肪酸的组分,对指导企业生产生物活性油和人们的健康消费具有重要意义。  相似文献

Adulteration of virgin olive oil with less expensive oils such as hazelnut oil is a serious problem for quality control of olive oil. Detection of the presence of hazelnut oil in olive oil at low percentages (<20%) is limited with current official standard methods. In this review, various classes of phytosterols in these two oils are assessed as possible markers to detect adulterated olive oil. The composition of 4-desmethyl- and 4-monomethylsterols is similar in both oils, but the 4,4′-dimethylsterols differ. Lupeol and an unknown (lupane skeleton) compound from 4,4′-dimethylsterols are exclusively present in hazelnut oil and can be used as markers via GC–MS monitoring to detect adulteration at levels as low as 2%. The phytosterol classes need to be separated and enriched by a preparative method prior to analysis by GC or GC/MS; these SPE and TLC methods are also described in this review.  相似文献

The aim of the work was to investigate the suitability of contact angle measurement as an index of overall oil degradation phenomena and oil uptake of French fries during frying. In order to measure the contact angle, an image analysis method was developed and applied to four vegetable oils (palm oil, palm super olein, sunflower oil and a blend of hazelnut and high-oleic sunflower oil) in actual frying experiments. With liquid oils, contact angle modification proved to be a sound index of overall oil degradation, being inversely correlated with oil acidity, peroxide value, total carbonyl compounds, K232, and viscosity. A significant correlation between contact angle and potato oil uptake was found for sunflower oil. For the other oils, factors such as the structure of food subjected to frying or the oil melting point and viscosity seem to be important in influencing oil uptake.  相似文献

The paper reports the phenolic content of kernels, bagasse pellets (residue of oil pressing) and oils from five different cultivars and a mix of cultivars. Phenolic compounds were identified by high-performance liquid chromatography coupled with mass spectrometry. Two compounds, glansreginin A and glansreginin B, were detected for the first time in hazelnuts. The main polyphenolic subclass comprised of mono- and oligomeric flavan 3-ols, which accounted between 34.2 and 58.3% in hazelnut kernels and between 36.7 and 48.6% in pellets of the total phenolics detected. In hazelnut oils four compounds have been detected, their content levels ranged from 0.97 to 0.01 μg g 1. Total phenolic content ranged from 491.2 to 1700.4 mg GAE kg 1 in kernels, from 848.4 to 1148.5 mg GAE kg 1 in pellets and only from 0.14 to 0.25 mg GAE g 1 in oils. The percentage of radical scavenging activity ranged from 60.0 to 96.4% for kernels, 63.0 to 73.2% for pellets and from 17.7 to 29.9% for oil. The study provides clear evidence on high phenolic contents and similarly high antioxidant potential of hazelnut kernels and bagasse pellets. The latter could be used as ingredients in cooking and baking or even for production of plant-based pharmaceuticals.  相似文献

Hazelnut oils obtained from three varieties of Chinese hybrid hazelnuts (cv. ‘Liaozhen 3 (LZ)’, ‘Pingou 21’ (PG) and ‘Yuzhui’ (YZ)) were used to compare the lipid oxidation characteristics (peroxide value, p-anisidine value and conjugated diene value), fatty acid profiles and major active components (squalene, carotenoids and tocopherols) under oxidation condition at 60 °C for 40 days, in addition, the molecular structure changes in the three hazelnut oils were monitored by Raman spectroscopy. The lipid oxidation of the three hazelnut oils had similar tendencies, and the oxidation rate was slower in the early stage and faster in the later stage. Polyunsaturated fatty acids (PUFAs) tended to decrease mainly due to the decrease in linoleic acid. LZ had higher contents of tocopherol, carotenoids and PUFAs than the other varieties, while YZ owned the highest content of squalene. Tocopherol and carotenoids of the three hazelnut oils showed easy loss, while squalene was relatively stable. Raman spectroscopy can effectively indicate the degree of oxidation and carotenoid levels of hazelnut oil. This study can provide a scientific basis for variety selection in planting and utilisation of active ingredients for the hazelnut industry.  相似文献

The presence or absence of filbertone in 21 admixtures of olive oil with virgin and refined hazelnut oils obtained using various processing techniques from different varieties and geographical origins was evaluated by solid phase microextraction and multidimensional gas chromatography (SPME–MDGC). The obtained results showed that the sensitivity achievable with the proposed procedure was enough to detect filbertone and, hence, to establish the adulteration of olive oil of different varieties with virgin hazelnut oils in percentages of up to 7%. The very low concentrations in which filbertone occurs in some refined hazelnut oils made difficult its detection in specific admixtures. In any case, the minimum adulteration level to be detected depends on the oil varieties present in the adulterated samples. In the present study, the presence of R- and S-enantiomers of filbertone could be occasionally detected in olive oils adulterated with 10–20% of refined hazelnut oil.  相似文献

The lack of any official analytical method to detect the adulteration of olive oil with a low percentage of hazelnut oil is explained by the similarities in the chemical compositions of both kinds of oils. To counter this problem, an artificial neural network based on 1H-NMR and 13C-NMR data has been developed to detect olive oil adulteration, and the results from this ANN are presented here. A training set consisting of hazelnut oils, pure olive oils, and olive oils blended with 2–20% hazelnut oils was used to design and train a multilayer perceptron with 100% correct classifications. This mathematical model was also validated using an external validation set of blend samples (3–15%) and genuine samples. The detection limit of the model was around 8%.  相似文献

The possibilities of a spectrofluorimetric method joined to multivariate analysis to assess the genuineness of olive oil in admixtures with hazelnut oils were studied. Virgin olive, virgin hazelnut and refined hazelnut oil samples and admixtures between them at 5, 10, 15, 20, 25 and 30% adulteration were analysed at ex=350 nm. The precision of the method, in terms of repeatability and internal reproducibility, was established by means of the analysis of a virgin olive oil sample under different conditions, the RSD showing values less than 10%. Raw data of the spectra were subjected to mathematical treatment by calculation of the first derivative, selection of the maximum values and application of one-way ANOVA, to assess the most prominent variables in the discrimination process. The response to the addition of adulterant was linear, adjusted-R2=0.99 for virgin olive and refined hazelnut oil mixtures, and 0.98 for virgin olive and virgin hazelnut oil mixtures. Stepwise linear discriminant analysis applied to each admixture separately and to the whole set of samples allowed 100% correct classifications.  相似文献

Previous studies have shown significant differences between the moisturizing effects and skin tolerances of virgin and refined vegetable oils when incorporated in cosmetic emulsions. They have also shown significantly greater and longer lasting moisturizing potential for a cosmetic emulsion containing virgin vegetable oils when compared with refined oils in the same emulsion. Results were obtained with sweet almond and hazelnut oils. Hazelnut oil has now been analysed to show the effect of refining. The phospholipid content of the oil decreased from 286 ppm in virgin oil to traces in refined oil.
These oils were added at 10% to a cosmetic emulsion applied twice a day for 28 days to the skin of 56 volunteers and the changes in moisturizing effect measured by means of the capacitance method (corneometer CM 240 Khazaka). Measurements were made under conditions of controlled temperature and humidity on the first day of application and repeated after 21 and 28 days of treatment. A significant increase in the moisturizing effect of the emulsion containing virgin hazelnut oil was found and this was itself significantly greater than the emulsion containing refined oil. Both emulsions had a greater moisturizing effect when compared with the control emulsion and the untreated skin.
Phospholipids were isolated by dialysis from virgin oil and added to the refined oil (234 ppm). The moisturizing effect obtained with the emulsion containing the enriched refined oil was shown to be the same as that obtained with the virgin oil emulsion.  相似文献

 Identification of volatile compounds in different edible oils (i.e. olive oil, almond oil, hazelnut oil, peanut oil and walnut oil) was performed using simultaneous distillation-solvent extraction followed by gas chromatographic-mass spectrometric analysis. An alternative approach which allows the direct injection of the oil sample (i.e. without any kind of pre-treatment) and involves the use of on-line coupled reversed phase liquid chromatography-gas chromatography (RPLC-GC) was also considered and the advantages of avoiding off-line preseparation for the analysis of volatile compounds were underlined regarding difficulties associated with the lipophilic nature of most volatile compounds and, hence, with the reliability of their analysis. Genuine olive and hazelnut oils from diverse geographical origins, as single varieties and blends, were mixed at different percentages and analysed by the method based on the quantification of free and esterified sterols. Two formulas based on three sterols (Campesterol, Δ7-stigmastenol and Δ7-avenasterol) together with empirical decision rules were able to detect the presence of hazelnut oil in olive oil when the percentage of the former was more than 6–8%, although this figure was much lower in the most of the adulterations. Results of univariate and multivariate statistical procedures based on the analysis of 116 samples are presented in support of the method efficiency.  相似文献

Present study includes evaluation of fatty acid composition, tocols profile, and oxidative stability of some fully refined edible oils. Fully refined sunflower, soybean, corn, hazelnut, peanut, and canola oils were analyzed for fatty acids by capillary gas liquid chromatography, tocols by normal phase-high performance liquid chromatography and oxidative stability by rancimat. Free fatty acid, peroxide value, and iodine value of investigated oils were determined by titrimetric methods. Saturated, mono-, and polyunsaturated fatty acids were found to be in the ranges between 2.03–18.58, 23.39–77.26, and 14.39–58.52%, respectively. Tocols and oxidative stability of the investigated oils were found to be in the ranges between 488.88–913.51 mg kg?1 and 3.05–4.99 h, respectively.  相似文献

Fourier-transform infrared spectroscopy (FTIR), followed by multivariate treatment of the spectral data, was used to classify vegetable oils according to their botanical origin, and also to establish the composition of binary mixtures of extra virgin olive oil (EVOO) with other low cost edible oils. Oil samples corresponding to five different botanical origins (EVOO, sunflower, corn, soybean and hazelnut) were used. The wavelength scale of the FTIR spectra of the oils was divided in 26 regions. The normalized absorbance peak areas within these regions were used as predictors. Classification of the oil samples according to their botanical origin was achieved by linear discriminant analysis (LDA). An excellent resolution among all categories was achieved using an LDA model constructed with eight predictors. In addition, multiple linear regression models were used to predict the composition of binary mixtures of EVOO with sunflower, corn, soybean and hazelnut oils. For all the binary mixtures, models capable of detecting a low cost oil content in EVOO as low as 5% were obtained.  相似文献

 A method is proposed for the determination of the adulteration of olive oil with hazelnut oil which is based on the study of the enantiomeric makeup of (E)-5-methylhept-2-en-4-one (filbertone). The possibilities of either using a sample preparation technique or performing direct injection of the samples (i.e., without any kind of sample pretreatment) are considered and both simultaneous distillation extraction followed by gas chromatographic analysis and direct injection in on-line coupled reverse-phase liquid chromatography to gas chromatography are used. In both cases, a chiral stationary phase is employed in the gas chromatography step and the determination of the enantiomeric composition of filbertone is recommended for an accurate evaluation and quick control for detecting the adulteration of olive oil with hazelnut oil. The quality of a hop variety or a hop product can readily be assessed by a fully automated sequence of selective extraction, fractionation and quantitative analysis. To illustrate the elegance of the method, nine hop varieties and three hop extracts were compared with respect to the content of important marker compounds in the hop oils and of the hop acids. Supercritical fluid extraction at different densities of carbon dioxide was applied to extract selectively, the hop oils and the hop acids, respectively. The hop oils were further fractionated into an apolar and a polar fraction by solid phase extraction and consecutive elution with n-hexane and ethyl acetate. Separation and identification were achieved by capillary gas chromatography coupled to mass spectrometry. Myrcene, β;-caryophyllene, α;-humulene and β;-farnesene in the apolar fraction, linalool, undecan-2-one, tridecan-2-one and humuladienone in the polar fraction were selected for quantitative evaluation of the respective hop oils. Sulphur-containing compounds were revealed by capillary gas chromatography using sulphur-selective atomic emission detection. Complete separation and quantification of all hop α;-acids and β;-acids was effected by microemulsion electrokinetic chromatography coupled to diode array detection .  相似文献

Gas chromatographic analysis revealed the qualitative composition of the essential oil from Australiangrown ginger to be similar to that of oils from other areas. The major constituents are a group of sesquiterpene hydrocarbons based on the bisabolene carbon skeleton. These compounds are accompanied by a number of monoterpene hydrocarbons and other substances. However, of particular interest, is the presence of a relatively high proportion of geranial and neral. These compounds are believed to invest Australian-grown ginger oil with a distinctive ‘citrus-like’ aroma.  相似文献

以甘蓝型、白菜型和芥菜型3种不同基因型菜籽为原料,采用全二维气相色谱-飞行时间质谱法对冷榨菜籽油中挥发性风味成分进行鉴定,结合嗅觉检测器对其进行气味分析,并通过感官评定构建冷榨菜籽油风味轮廓图。研究表明:全二维气相色谱-飞行时间质谱法共分离共鉴定出156种挥发性成分,其中38种物质具有特征气味,主要包括异硫氰酸酯、含硫化合物、醇类、醛类、酸类、酮类、内酯和杂环类化合物;对于不同基因型原料而言,异硫氰酸酯和含硫化合物是冷榨菜籽油中风味差异的关键组分,甘蓝型、白菜型和芥菜型3种冷榨菜籽油的异硫氰酸酯总量分别为6. 94%、40. 86%和54. 94%,含硫化合物总量分别为2. 7%、0.44%、1.73%;通过感官评定,3种冷榨油中甘蓝型菜籽油中的辛辣味最弱,卷心菜味最强,白菜型菜籽油中青草味最明显,芥菜型中的酸味最明显;3个不同品种间种子味、坚果味、腐败味、发霉味、苦味差异不显著(P0.05)。  相似文献
