The aim of this study was to provide some recommendations for selecting a befitting tea and coffee to match chocolate with different cocoa contents. Three coffee samples (chocolate flavored, vanilla flavored and unflavored coffee), four tea samples (black tea, green tea, vanilla flavored tea and citrus flavored tea) and three chocolates (30%, 70%, and 99% cocoa) were hedonically rated by eighty regular chocolate consumers. The beverages were then paired with each chocolate, and the consumers were asked to indicate the hedonic liking of the resulting pairings, and to indicate whether the chocolate or beverage flavor dominated the pairing flavor. This study showed that liking of chocolate and coffee pairings and chocolate and tea pairings significantly varied (p < 0.001) across samples. Consumers preferred pairings with 30% cocoa and 70% cocoa chocolate to pairings with 99% cocoa chocolate. Overall, coffee is significantly (p < 0.001) preferred to tea as a chocolate partner.Chocolate and beverage pairing liking was biased by the liking of the beverage tasted alone, the liking of chocolate tasted alone, beverage type, chocolate type and the level of flavor match between chocolate and tea or coffee in a given pairing. When chocolate and beverage flavor balanced out in a given pairing, chocolate and coffee/tea pairings were significantly preferred by the consumers. A significant decrease in acceptance was observed when beverage or chocolate flavor dominated the flavor of the pairing, much more so when the chocolate flavor dominated the pairing flavor. However consumers don't enjoy any preferred chocolate with any preferred tea or coffee because some flavors match better than do others. Indeed, consumers formulate their hedonic responses taking into consideration what flavors go well together more than they rely exclusively on their hedonic judgments of the chocolates, the teas, and the coffees tasted alone.  相似文献

The purpose of this study was to determine the sensory properties and acceptability of lab developed prototypes of conventional, diabetic (with no sugar), and diabetic/reduced calorie milk chocolates (no sugar and 25% calorie reduction) with high-intensity sweeteners, sucralose and stevioside, and partial fat replacement with whey protein concentrate (WPC). PLS was performed in order to relate sensory properties and consumer acceptability and to determine drivers of liking and disliking. There was no difference between conventional, diabetic and diabetic/reduced calorie milk chocolates for brightness, cocoa aroma, cocoa butter aroma, and cocoa flavor (p > 0.05). Acceptability was higher for sucrose substitution by sucralose than by stevioside and partial fat replacement reduced acceptability of flavor even more (p ? 0.05). Crucial attributes which determine consumer acceptability in samples are sweet aroma, melting rate, and sweetness, whereas bitterness, bitter aftertaste, adherence, and sandiness were drivers of disliking.  相似文献

Mapping food-evoked emotions in addition to sensory profiling is topical. In sensory profiling, the Temporal Dominance of Sensation (TDS) method focuses on the assessment of the temporal evolution of dominant sensory attributes over time. We hypothesize that food-evoked emotions also show temporal dynamics that can be related to dynamic sensory perception. This study assessed temporal dynamics of sensory and emotional attributes during chocolate tasting. We used TDS to determine dynamic sensory properties of dark chocolates providing a list of 10 sensory attributes. Comparably, Temporal Dominance of Emotions (TDE) was assessed by replacing the sensory attributes with 10 emotional attributes. Sixty-two participants assessed TDS and TDE of five commercially available dark chocolates (plain and flavoured). Multivariate comparisons (Hotelling test) showed significant differences between products based on the dominance duration of sensory (p < 0.05) and emotional attributes (p < 0.05). TDS difference curves revealed products to differ based on their dominant sensory attributes, with different attributes peaking at different time moments. TDE difference curves showed that products also differed in the temporal distribution of dominant emotional attributes. Comparing the average dominance rates between plain dark and flavoured dark chocolates revealed that for flavoured dark chocolates mainly flavour attributes and positive/active emotions were perceived as salient whereas for plain dark chocolates textural as well as taste attributes were dominant accompanied by more negative/non-energetic emotions. A joint CVA plot on the duration of dominance for sensory and emotional attributes per product revealed that temporal evolution of sensory – and emotional attributes was related. This suggests a mutual reciprocity between those two entities (sensory and emotional attributes) resulting in more complex, richer product characterization. In conclusion, these findings show TDE to be a promising new venue in characterising food-evoked emotions in relation to sensory profiling.  相似文献

Cocoa butter is responsible for physico-chemical, rheological and sensory properties of chocolates. Forastero cocoa beans are rich in cocoa butter. Roasting of cocoa beans is an essential step of their processing, giving rise to many desirable transformations. On the other hand, it causes changes in certain valuable ingredients including also cocoa butter. This article studies the influence of roasting conditions, i.e. temperature, humidity and flow velocity of roasting air, on the fatty acid composition, peroxide value and content of conjugated dienes and trienes in cocoa butter extracted from cocoa beans. Generally, in most cases roasting did not increase the peroxide value. In the constant conditions due to obtained results of PV, CD and CT values it is recommended to roast cocoa beans at the temperature of 150 °C, 1 m/s air velocity and 5% relative humidity. In the variable conditions lower values of PV, CD and CT were achieved when cocoa beans were roasted in variants with changing temperature from 150 °C to 135 °C or with changing air velocity from 1 to 0.5 m/s. Generally, the roasting process substantially did not change the content of each fatty acid, regardless of the applied conditions.  相似文献

The total antioxidant capacity (TAC) and total phenolic compounds (TPC) of cocoa beans and chocolate produced from spontaneous and inoculated fermentations of different cocoa varieties were evaluated. Fourier transform infrared spectroscopy (FTIR), as well as conventional methods: 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), was used to determine TAC and TPC. Chocolate showed higher (p < 0.05) TPC (47.17–57.16 mg GAE/g) and TAC (1.66–2.33 mM TE/g and 8.86–11.35 mM TE/g as measured by DPPH and ABTS, respectively) than cocoa beans (6.30–26.05 mg GAE/g, 0.24–1.17 mM TE/g and 1.29–4.83 mM TE/g for TPC, DPPH and ABTS, respectively). Partial least square (PLS) model for infrared data showed a good calibration coefficient (R2cal > 0.94), indicating that the FTIR technique represents a fast and reliable tool to evaluate TPC and TAC in cocoa beans and chocolate.  相似文献

In the present study a structuring technique was developed to produce chocolate which resists deformation at temperatures above 40 °C. It was hypothesized that by adding ethylcellulose (EC) solubilized in ethanol (EtOH) to chocolate and evaporating the EtOH an organogel could be formed in situ with the fat phase of the chocolate. Heat resistant chocolate (HRC) was produced by mixing a 20% EC in EtOH solution with molten chocolate. The EtOH was evaporated and the resulting chocolate was incubated at 40 °C for 2 h and tested for hardness. The effect of various EC viscosities (4, 10, 20, 22, and 45 cP) and concentrations ranging from 1.0 to 2.2% on different types of chocolates was studied. Milk chocolate containing 1.9% EC had a hardness of 26.0 N whereas the control chocolate was too soft to be tested. Further experiments revealed that white and dark chocolates had hardnesses of 29.5 and 10.5 N, respectively. The hardness of the chocolate was dependent on the chocolate formulation and concentration of EC, and independent of EC viscosity. It was observed that the addition and evaporation of EtOH from the compound milk chocolate samples led to an increase in the lightness of the chocolate surface if the EtOH was evaporated at temperatures of 40 °C or higher. Addition of EC to chocolate represents a new strategy for the manufacture of HRC. Future work should focus on determining the mechanism by which heat resistance is achieved in these chocolates.  相似文献

Cocoa bean fermentations controlled by means of starter cultures were introduced on several farms in two different cocoa-producing regions (West Africa and Southeast Asia). Two starter culture mixtures were tested, namely one composed of Saccharomyces cerevisiae H5S5K23, Lactobacillus fermentum 222, and Acetobacter pasteurianus 386B (three heaps and one box), and another composed of L. fermentum 222 and A. pasteurianus 386B (seven heaps and one box). In all starter culture-added cocoa bean fermentation processes, the inoculated starter culture species were able to outgrow the natural contamination of the cocoa pulp-bean mass and they prevailed during cocoa bean fermentation. The application of both added starter cultures resulted in fermented dry cocoa beans that gave concomitant milk and dark chocolates with a reliable flavour, independent of cocoa-producing region or fermentation method. The addition of the lactic acid bacterium (LAB)/acetic acid bacterium (AAB) starter culture to the fermenting cocoa pulp-bean mass accelerated the cocoa bean fermentation process regarding citric acid conversion and lactic acid production through carbohydrate fermentation. For the production of a standard bulk chocolate, the addition of a yeast/LAB/AAB starter culture was necessary. This enabled an enhanced and consistent ethanol production by yeasts for a successful starter culture-added cocoa bean fermentation process. This study showed possibilities for the use of starter cultures in cocoa bean fermentation processing to achieve a reliably improved fermentation of cocoa pulp-bean mass that can consistently produce high-quality fermented dry cocoa beans and flavourful chocolates produced thereof.  相似文献

The sensory quality of chocolate is widely determined by the qualitative and quantitative composition of volatile compounds resulting from microbial metabolism during fermentation, and Maillard reactions taking place during drying, roasting and conching. The influence of applying mixed starter cultures on the formation of flavour precursors, composition of volatile aroma compounds and sensory profile was investigated in cocoa inoculated with cultures encompassing a highly aromatic strain of Pichia kluyveri or a pectinolytic strain of Kluyveromyces marxianus, and compared to commercially fermented heap and tray cocoa. Although only minor differences in the concentration of free amino acids and reducing sugars was measured, identification and quantification by dynamic headspace gas chromatography–mass spectrometry (HS/GC–MS) revealed pronounced differences in the composition of volatiles in roasted cocoa liquors and finished chocolates. 19 of the 56 volatile compounds identified in the chocolates were found in significantly higher amounts in the tray fermented sample, whilst significantly higher amounts of 2-methoxyphenol was measured in the two inoculated chocolates. The P. kluyveri inoculated chocolate was characterized by a significantly higher concentration of phenylacetaldehyde and the K. marxianus inoculated chocolate by significantly higher amounts of benzyl alcohol, phenethyl alcohol, benzyl acetate and phenethyl acetate compared to a spontaneously fermented control. Sensory profiling described the heap and tray fermented chocolates as sweet with cocoa and caramel flavours, whilst the inoculated chocolates were characterized as fruity, acid and bitter with berry, yoghurt and balsamic flavours. The choice of fermentation technique had the greatest overall impact on the volatile aroma and sensory profile, but whilst the application of starter cultures did affect the volatile aroma profile, differences were too small to significantly change consumer perception of the chocolates as compared to a spontaneously fermented control.  相似文献

The present study investigated the effect of active and modified packaging as well as packaging material oxygen permeability on quality retention of dark chocolate with hazelnuts. Dark chocolate was packaged in: a) polyethylene terephthalate//low density polyethylene (PET//LDPE), and b) polyethylene terephthalate coated with SiOx//low density polyethylene (PET-SiOx//LDPE). Samples were packaged either under, vacuum or N2 or with an oxygen absorber and stored in the dark at 20 °C for a period of 12 months. “Commercial” control samples for comparison purposes consisted of chocolate packaged in aluminum foil in air while “model” control samples used for sensory evaluation consisted of chocolate packaged in glass jars and stored at ? 18 °C. Quality parameters monitored were: peroxide value, hexanal content, color, fatty acid composition and volatile compounds. Of the sensory attributes color, texture, odor and taste were evaluated. PV ranged between 0.80 for fresh dark chocolate with hazelnuts and 6.51 meq O2/kg chocolate fat for commercially packaged samples after 12 months of storage. Respective values for hexanal were 0.53 and 7.56 mg/kg. % Saturated fatty acids (SFA) increased with a parallel decrease in monounsaturated fatty acids (MFA) and polyunsaturated fatty acids (PUFA) after 12 months of storage mainly in least protected samples (commercial package). Likewise, after 12 months of storage an increase in concentration of aldehydes, ketones, alcohols and alkanes (p < 0.05) with a parallel decrease in pyrazines where observed especially in case of least protected products after 6 and 12 months of storage. In general after 12 months of storage chocolate showed whitening of the surface resulting to an increase in L* and a* values (p < 0.05) and a decrease in b* value. Dark chocolate with hazelnuts retained acceptable quality for ca. 8 months in commercial packages. For samples packaged in PET//LDPE irrespective of storage atmosphere the shelf life was 8 to 9 months and for samples packaged in PET-SiOx//LDPE irrespective of storage atmosphere the shelf life was 11 months. Finally for samples packaged with an oxygen absorber irrespective of packaging material the shelf life was at least 12 months.Industrial relevanceChocolate packaged with an oxygen absorber in a barrier packaging material will maintain its aroma, taste and nutritional quality substantially longer than other packaging methods.  相似文献

Two spontaneous Malaysian cocoa bean box fermentations (one farm, two plantation plots) were investigated. Physical parameters, microbial community dynamics, yeast and bacterial species diversity [mainly lactic acid bacteria (LAB) and acetic acid bacteria (AAB)], and metabolite kinetics were monitored, and chocolates were produced from the respective fermented dry cocoa beans. Similar microbial growth and metabolite profiles were obtained for the two fermentations. Low concentrations of citric acid were found in the fresh pulp, revealing low acidity of the raw material. The main end-products of the catabolism of the pulp substrates glucose, fructose, and citric acid by yeasts, LAB, and AAB were ethanol, lactic acid, acetic acid, and/or mannitol. Hanseniaspora opuntiae, Lactobacillus fermentum, and Acetobacter pasteurianus were the prevalent species of the two fermentations. Saccharomyces cerevisiae, Lactobacillus plantarum, Lactobacillus pentosus, and Acetobacter ghanensis were also found during the mid-phase of the fermentation processes. Leuconostoc pseudomesenteroides and Acetobacter senegalensis were among the prevailing species during the initial phase of the fermentations. Tatumella saanichensis and Enterobacter sp. were present in the beginning of the fermentations and they could be responsible for the degradation of citric acid and/or the production of gluconic acid and lactic acid, respectively. The presence of facultative heterofermentative LAB during the fermentations caused a high production of lactic acid. Finally, as these fermentations were carried out with high-quality raw material and were characterised by a restricted microbial species diversity, resulting in successfully fermented dry cocoa beans and good chocolates produced thereof, it is likely that the prevailing species H. opuntiae, S. cerevisiae, Lb. fermentum, and A. pasteurianus were responsible for it.  相似文献

The effects of selected properties of spray-dried milk fat powders on chocolate were determined. Milk powders produced from control or ultrafiltered (UF) milks with various levels of fat were blended with skim milk powder to give a standard 26 g fat 100 g−1 powder. Particle size of the chocolate mixes after refining decreased as the fat content and free-fat content of the powders increased. Despite this, increasing fat and free-fat contents of powders reduced the Casson viscosity of the subsequent molten chocolates. Casson viscosities using powders from control or UF milks were similar, but decreased as the particle size of powders increased and particle size after refining the chocolate mix decreased. Casson yield value and hardness decreased as fat content of powders increased. Casson yield value increased with vacuole volume of powders. It is possible to alter important properties of chocolates using milk powders of varying fat contents, free-fat contents and particle sizes.  相似文献

BACKGROUND: Spontaneous cocoa bean fermentation is characterised by a succession of microbial activities. Cocoa flavour precursors are developed during fermentation and drying of cocoa beans. Polyphenols and alkaloids contribute to astringency and bitterness of cocoa and chocolate. RESULTS: Population dynamics, metabolite target analyses, and chocolate production were performed for seven independent spontaneous cocoa bean heap fermentations in Ghana. Although the same micro‐organisms were involved in these heaps, carried out at different farms or in different seasons, heap temperatures and microbial metabolite concentrations were different. This could be due to heterogeneity and size of the heaps, but was mainly ascribed to microbial variability. Indeed, differences in microbial activity could be linked with the flavour of chocolates made from the corresponding dried, fermented cocoa beans. Whereas the polyphenol and alkaloid contents of cocoa beans were crop‐ and heap‐dependent, epicatechin and theobromine levels decreased during fermentation due to diffusion out of the bean cotyledons and polyphenol oxidation and condensation. Residual levels were responsible for the degree of bitterness of the final chocolates. CONCLUSION: Differences in microbial activities between different heap fermentations can result in dried fermented cocoa beans and chocolates with different flavour characteristics. Due to the attack of cacao (Theobroma cacao L.) plants by the fungus Moniliophthora perniciosa which caused witches’ broom disease in the state of Bahia, Brazil, resistant clonal material with elevated productivity and superior physical characteristics has been selected for use in the genetic improvement program and by the cocoa producers themselves. The present study aimed to characterize the cocoa butter and chocolates produced from nine cacao varieties and also from the Amelonado cacao produced in the same region (denominated as Common), with a view to quality improvement. The cocoa butter was characterized for its solid fat content and triacylglycerol composition, and the chocolates for their moisture and protein contents, maximum particle diameter, pH value, acidity, rheological properties and instrumental texture, as well as a sensory test for acceptability with 50 consumers. A relationship was found between the triacylglycerol composition and solid fat curves of the cocoa butters and the instrumental texture of the chocolates, the highest values for the latter parameter being observed for the varieties with greater amounts of symmetrical triacylglycerols and greater solid fat contents at the temperatures evaluated. From a sensory point of view, it was shown that overall acceptance and buying intention were mainly determined by the attributes of “astringency,” “bitterness,” “acidity” and “chocolate flavor.” It was also shown that chocolates produced from varieties descendent from the Trinitario group were differentiated from those descendent from the Forastero group, showing the preference of consumers for these materials and the possibility of a gain in quality in the genetic improvement of cacao by including varieties descended from the Trinitario and Criollo groups in the crossing programs, associating disease resistance with product quality.  相似文献

The aim of this paper is to study the effects of exposure to different types of chocolate on consumer responses. Three different chocolates were considered, one established market leader and two new chocolates from a product development project. A group of consumers participated two times in a central location test and were exposed to different chocolates over a 4 weeks period between the two occasions. Main focus is on informed liking with the inclusion of brand name. Both average effects and individual differences in consumers’ responses are discussed. The main conclusion of this study is that the liking of the established chocolate was similar before and after exposure (with a slight decrease in liking) while the liking went significantly up for one of the new products.  相似文献

This study explored the feasibility of producing peanut–cowpea milk for use in vegetable milk chocolates. Development of the vegetable milk followed a 3 × 2 factorial design, with peanut–cowpea ratio (1:1, 1:2 and 1:3), and treatment with enzyme (i.e. enzyme hydrolyzed and non-hydrolyzed milk) as the factors. The milk was dehydrated and then milled using a hammer mill (mesh size 40). It was then used in recipes to produce chocolates and evaluated sensorially based on ranking for preference. Skimmed milk powder was used to produce the control chocolate. The ratio of cowpea to peanut affected the chemical and functional characteristics of the vegetable milk. Vegetable milk made from 1:2 ratios of peanuts:cowpea produced the most preferred chocolates. The successful application of this by industry will improve the utilization of the legume crops and enhance their market value.  相似文献

Regime (direction, amount, rate, and pattern) of change in aroma active compounds was quantified as a function of four pulsed electric field (PEF) treatment times, three fruits, and 10 physical and eight sensory properties using the best-fit multiple linear regression (MLR) models. The PEF treatment times did not deteriorate 94% of the sensory properties and 70% of the physical properties and significantly change 57% of a total of 73 aroma active compounds detected for sour cherry juice, and apricot and peach nectars. The best performing MLR models belonged to 1-methyl-4-prop-1-en-2-ylcyclohexene as a function of fruit type, treatment time, and titratable acidity (= 49 mg/L; Radj2 = 95.7%; Rcv2 = 94.9%) and to 2-[(2S,5S)-5-ethenyl-5-methyloxolan-2-yl]propan-2-ol as a function of fruit type, and treatment time (SE = 157 mg/L; Radj2 = 98.2%; Rcv2 = 98.0%), respectively (n = 48; p < 0.001).Industrial relevancePulsed electric field (PEF) is one of the leading nonthermal food technologies especiallyfor processing of high acid low viscosity foods with satisfactory quality and microbial inactivation. It was shown in this study that PEF with different treatment times can successfully be applied in the pasteurization of sour cherry juice, and apricot and peach nectars with minimum loss of aroma active compounds and sensory and physical properties. Both PEF processing conditions and results can be used as a guide to determine PEF processing parameters for industrial scale processing of juices/nectars.  相似文献

Physical parameters, microbial growth, bacterial species diversity [mainly lactic acid bacteria (LAB) and acetic acid bacteria (AAB)], and metabolite kinetics were monitored, and chocolates were produced from the fermented dry cocoa beans. The main end-products of the catabolism of the pulp substrates (glucose, fructose, and citric acid) by yeasts, LAB, and AAB were ethanol, lactic acid, mannitol, and/or acetic acid. Lactobacillus fermentum and Acetobacter pasteurianus were the predominating bacterial species of the fermentations as revealed through (GTG)5-PCR fingerprinting of isolates and PCR-DGGE of 16S rRNA gene PCR amplicons of DNA directly extracted from fermentation samples. Fructobacillus pseudoficulneus, Lactobacillus plantarum, and Acetobacter senegalensis were among the prevailing species during the initial phase of the fermentations. Also, three novel LAB species were found. This study emphasized the possible participation of Enterobacteriaceae in the cocoa bean fermentation process. Tatumella ptyseos and Tatumella citrea were the prevailing enterobacterial species in the beginning of the fermentations as revealed by 16S rRNA gene-PCR-DGGE. Finally, it turned out that control over a restricted bacterial species diversity during fermentation through an ideal post-harvest handling of the cocoa beans will allow the production of high-quality cocoa and chocolates produced thereof, independent of the fermentation method or farm.  相似文献

Cupuassu (Theobroma grandiflorum Willd. Ex Spreng) Shum. is a Brazilian Amazon rainforest fruit, phylogenetically close to cocoa (Theobroma cacao L.), with excellent flavor and high agro-economic potential, whose seeds can also be used to prepare a product similar to chocolate. Here, we compared the chemical composition and in vitro antioxidant capacity of cupuassu and cocoa liquors. In addition, we evaluated the effect of the daily intake of cupuassu and cocoa liquors (3.6 and 7.2 g/kg body weight) on oxidative stress and lipid profile in streptozotocin (STZ)-induced diabetic rats. Although cocoa liquor presented higher polyphenol, caffeine contents and in vitro antioxidant capacity, saturated fatty acid contents were also higher than in cupuassu liquor. Daily administration of both cocoa and cupuassu liquors resulted in ameliorated body weight gain and liver weight/body weight ratio in STZ-diabetic rats. Plasma triacylglycerol levels were strongly reduced by both doses of liquors, while HDL-c was raised in 27% when the highest doses of cupuassu and cocoa were administrated. Plasma antioxidant capacity was improved, and lipid peroxidation in plasma and tissues decreased in a dose-dependent manner. In spite of the lower polyphenol content of cupuassu, these results indicate advantages of cupuassu compared to cocoa in relation to potential health benefits.  相似文献
