研究了类苍白、松软、表面汁液渗出(pale soft exudative,PSE)兔肉的制备方法,以保证PSE兔肉科学研究用实验材料品质的一致性。以新鲜的兔背最长肌和后腿肉为实验材料,参照猪、家禽PSE肉的制备方法,研究37 ℃水浴条件下兔背最长肌和腿肌肉感官品质、pH值、色泽、失水率、弹性、肌原纤维蛋白溶解度及弹性储能模量(G′)的变化。结果表明:随着处理时间的延长,兔背肌和腿肌的感官品质下降;pH值、a*值、弹性、蛋白质的溶解度及凝胶G′值均显著下降(P<0.05);L*值和失水率显著增加(P<0.05)。水浴2 h时,兔背肌肉的极限pH<5.74,L*>63.40,汁液损失率>25.36%;3 h时,兔腿肌肉的极限pH<5.84,L*>56.82,汁液损失率>17.85%。在37 ℃保温2 h,兔背肌肉表现出了PSE肉的特征;在37 ℃保温3 h,兔腿肌肉表现出了PSE肉的特征。  相似文献

This study evaluated the variation in instrumental and sensory meat quality within the m. longissimus thoracis et lumborum of carcasses with normal and PSE meat. Out of 80 slaughtered pigs, respectively, 9 and 7 carcasses were selected with a pH30 value > or=5.80 (normal pork) and a pH30 value <5.80 (PSE pork). Instrumental and sensory meat quality measurements were performed at three locations on these carcasses: longissimus thoracis (LT), longissimus thoracis et lumborum: (LTL-mid-loin) and longissimus lumborum (LL). Meat of the thoracis site (LT) was paler, but more favourable for pH45, cooking loss, juiciness, tenderness and preference scores than meat of the mid-loin part. The lumborum site (LL) was more or less in between the other two locations for meat quality, but closer to the LTL than the LT site. The meat quality variation within the m. longissimus thoracis et lumborum followed a similar pattern for normal and PSE carcasses. It can be concluded that the mid-loin part is best suited as a reference place for meat quality assessment, if one wants to eliminate carcasses with unacceptable meat.  相似文献

ABSTRACT: The studies of natural actomyosin (NAM) extracted from normal and pale, soft, and exudative (PSE) pork longissimus muscle stored at -20°C for up to 6 mo, revealed that the surface hydrophobicity (S0-ANS) of NAM from PSE pork was significantly ( P < 0.05) higher than that from normal pork indicating greater conformational changes in proteins from PSE meat that resulted in the exposure of hydrophobic aromatic amino acid residues on the surface. Also, the S0-ANS of NAM was a function of storage time. The equations were as follows: S0-ANS = 16.9 × storage mo + 123 for normal and S0-ANS = 17.5 × storage mo + 164 for PSE. NAM from frozen normal pork had lower α-helical content than comparable fresh pork. With extended frozen storage, viscosity of NAM from PSE meat was lower than that from normal pork. The sulfhydryl and disulfide contents were unchanged. Electrophoresis revealed an extra 95 to 100 kDa band from PSE meat NAM, possibly from α-actinin or myosin degradation. Water-binding capacity (WBC) of normal and PSE meat decreased with increasing storage time; however, there were only minor changes in thaw loss. The decrease of WBC of pork meat partially can be explained by the increase of S0-ANS observed for the NAM. These results suggest that proteins from PSE pork are more susceptible to denaturation and degradation in fresh meat and following frozen storage.  相似文献

Consumers (n = 116) evaluated color (pink intensity), appearance (wet/dry), overall acceptability and purchase intent of normal, PSE and DFD pork loin slices in PVC and in vacuum packages. Packaging x muscle condition affected (p < 0.05) appearance, overall acceptability and consumer purchase intent of pork slices. Color differences were perceptible to consumers between packaging treatments. PVC-packaged pork was pinker than vacuum-packaged pork. Vacuum-packaged, PSE pork appeared drier than PVC-packaged PSE pork. Normal pork was more acceptable than PSE pork regardless of packaging. DFD pork acceptability was not different from that of normal pork when vacuum packaged. In general purchase intent paralleled consumer evaluation of overall acceptability. Instrumental color data and pH for samples evaluated are also presented.  相似文献

比较了PSE(白肌)、RFN(正常)、DFD(黑干)3种质量猪肉冷藏期间的肉色稳定性。宰后24h直接切块取样的3种质量猪肉(背最长肌)于(2±1)℃下避光透氧包装[O2透过率=2.06×10-3mL/(m2.h.Pa)]冷藏6d,采用色度计法测定了样品表面L*(亮度)值、a*(红色度)值、b*(黄色度)值、hueangle(色调角)值。从上述指标的变化研究了3种质量猪肉表面的肉色稳定性。3种质量猪肉表面肉色稳定性顺序为:DFD>RFN>PSE;a*值下降、hueangle值上升可反映肉色稳定性变差。  相似文献

为比较瘦肉型的杂交商品猪肉和本地猪肉对湖南腊肉品质的影响,实验选取三元杂交商品猪的背最长肌(A)和腹部五花肉(B)、本地宁乡猪的背最长肌(C)和腹部五花肉(D)为原料加工湖南腊肉。测定了加工过程中腊肉理化指标变化和腊肉的颜色、挥发性性成分等。实验结果表明:在腊肉成品中,相同部位原料肉加工的腊肉,杂交商品猪肉的水分含量显著高于宁乡猪加工的腊肉样品(AC,BD),但食盐含量和亚硝酸盐含量呈现相反的变化趋势,即商品杂交猪肉腊肉具有较低的食盐含量和亚硝残留量(AC,BD);4组实验腊肉样品中,L*值均呈下降趋势,两个品种的猪肉中背最长肌的a*值呈现先下降后上升趋势,腹部五花肉的变化规律不明显;样品A、B、C、D分别鉴定出挥发性成分40种、24种、54种、23种。说明了不同原料肉品种和不同部位对湖南腊肉的品质有一定影响。  相似文献

The use of the pH(60) and colour parameters (L, a, b) as chilled pork drip loss predictors 24 h post-mortem as well as the influence on this meat characteristic of an early blast cooling regime (90 min post-mortem) were investigated. Despite the best correlation found with pH(60) (-0·647), both indicators were found to be poor for this purpose, it being impossible to use them alone for pork quality classification (PSE/DFD status). Comparing the evolution between the drip losses on chilled and early deep frozen (-60°C) longissimus dorsi pork cuts, the results indicate that both the thawing regime and the time the samples stay in refrigeration, influence the observed trends significantly. The general drip loss enhancement seen after thawing as well as the increasing meat toughness, judged subjectively, must be due to cold-shortening and/or thaw rigor phenomena.  相似文献

目的:探讨注射水和氯化钙溶液对宰后冷藏期间猪背最长肌肉色及其稳定性的影响。方法:猪背最长肌于宰后1.5h注射肉质量分数5%的水和200mmol/L氯化钙溶液,分别测定其冷藏期间肉色a*值、总色素含量、高铁肌红蛋白(MetMb)相对百分含量、MetMb还原酶活性等指标。结果:注射氯化钙溶液能降低肉中a*值、总色素含量、MetMb还原酶活性和乳酸脱氢酶-B(LDH-B)活性,增加MetMb相对百分含量和丙二醛(MDA)含量。注水能降低肉中总色素含量和MetMb还原酶活性,增加MetMb相对百分含量。结论:注射水和氯化钙溶液均能降低宰后冷藏期间猪背最长肌中总色素含量,增加MetMb相对百分含量,从而加快猪背最长肌的褪色,不利于其冷藏期间新鲜肉色的维持。  相似文献

Water-holding capacity (WHC) is one of the main pork quality characteristics. The objective of this study was to determine the influence of (denaturation of) sarcoplasmic proteins on WHC. Myofibrils extracted from red, firm, non-exudative (‘normal’) and PSE (pale, soft, exudative) pork longissimus muscle were combined with sarcoplasmic extracts (with or without proteins) from PSE and normal pork longissimus samples. Weight increase of myofibrils (mg increase mg−1 myofibrillar protein) was used as a measure of WHC. When combined with protein-containing sarcoplasmic extract from normal pork, WHC of myofibrils from PSE (2.6 mg mg−1) and normal (2.8 mg mg−1) pork was higher (P < 0.05) than when combined with sarcoplasmic extract from PSE meat (1.3 mg mg−1 for PSE and 1.9 mg mg−1 for normal myofibrils). Protein-free sarcoplasmic extracts were prepared by heating the extracts for 30 min at 80 °C. WHC of myofibrils combined with protein-free sarcoplasmic extract from PSE and normal pork was not significantly different. WHC of myofibrils combined with protein-free extract was lower than WHC of myofibrils combined with protein-containing extract. Ionic strength or pH could not explain the observed differences. It was concluded that sarcoplasmic proteins do influence WHC. The mechanism of this influence still needs to be determined. © 1999 Society of Chemical Industry  相似文献

Normal, pale–soft–exudative (PSE), and dark–firm–dry (DFD) pork Longissimus dorsi muscles were vacuum-packaged, irradiated at 0, 2.5 or 4.5 kGy, and stored at 4 °C for 10 days. The pH, color and lipid oxidation of pork were determined at 0, 5 and 10 days of storage. Volatile production from pork loins was determined at Day 0 and Day 10, and sensory characteristics at Day 7 of storage. Irradiation increased the redness of vacuum-packaged normal, PSE and DFD pork. However, the 2-thiobarbituric acid reactive substances (TBARS) values of three types of pork were not influenced by irradiation and storage time. Irradiation increased the production of sulfur (S)-containing volatile compounds, such as mercaptomethane, dimethyl sulfide, carbon disulfide, methyl thioacetate, and dimethyl disulfide, as well as total volatiles in all three types of pork. Normal pork produced higher levels of total and S-containing volatile compounds than the PSE and DFD pork did. The volatiles produced by irradiation were retained in the vacuum packaging bag during storage. Although the odor preference for the three meat types of pork was not different, the panelists could distinguish irradiated meat from the non-irradiated. Industrial relevance: Several US meat companies have already started test-marketing irradiated meat products. Irradiation and the subsequent storage of pork improved the color of PSE and DFD pork, and showed generally similar effects on the production of volatiles, except that there appeared to be a lower level of S-volatiles in the PSE than in the other two samples. This indicated that irradiation can increase the utilization of low-quality pork (PSE and DFD). DFD pork, in particular, which has shorter shelf-life than the others, could benefit the most from irradiation because the shelf-life of DFD meat can be extended significantly by both the methods of vacuum packaging and irradiation.  相似文献

The meat quality of halothane heterozygotes (Nn) was investigated using British Landrace (n = 18) and Landrace × Large White pigs (n = 67). Normal and PSE meat were identified in both breeds using M. longissimus dorsi (LD). In Landrace × Large White Nn pigs, the potential meat quality identified using small biopsy LD samples (500 mg) showed a wide spectrum in water-holding capacity (WHC), ranging from normal (43%) to PSE (57%). Predictions of meat quality in live pigs were confirmed from post-mortem assessments of LD samples based on pH(1) and fibre optic probe measurements. Our results show that Nn pigs have the propensity to produce a higher proportion of PSE than normal carcasses. The predictive meat quality test performed on small biopsy LD samples offers an opportunity not currently available to the pig industry, to select Nn pigs with the potential to produce pork of superior WHC.  相似文献

以不同部位冷鲜猪肉(背最长肌、后腿肉、腰大肌)为对象,研究肉样在2种贮藏条件(实际销售贮藏条件:4℃-13 h-紫外照射,0℃-11 h-避光;实验室设置条件:4℃-24 h-紫外照射)下色泽、肌红蛋白含量、高铁肌红蛋白还原酶活等的变化,旨在为提高冷鲜肉在销售贮藏期间的肉色稳定性提供依据。结果表明:实验室条件下,3个部位(背最长肌、后腿肉、腰大肌)冷鲜猪肉的色泽感官评定、a*值、氧合肌红蛋白含量和高铁肌红蛋白还原酶活性等均显著优于实际销售条件(P<0.05),实验室条件下更利于不同部位冷鲜猪肉的贮存。另外,在实验室条件下,3个部位中猪背最长肌肉色最稳定,其次是后腿肉,腰大肌肉色稳定性最差。  相似文献

本文以李果实作为研究对象,基于高光谱图像技术对不同成熟度的李果实(未熟、半熟、成熟和过熟)样本的图像信息进行采集,对采集样本的图像进行中值滤波去噪处理。运用Matlab软件编程对各种成熟度样本的图像进行颜色特征值提取,分别获得RGB和HSV彩色图像模型不同分量的平均值(μ)和标准差(σ)作为颜色特征值,并建立RGB、HSV颜色特征值以及RGB-HSV特征值相融合的样本成熟度PLS判别模型,并对所建立的判别模型进行预测。结果表明,基于RGB-HSV相融合颜色特征值的判别模型准确率优于RGB与HSV,其对未熟、半熟、成熟、过熟的判别准确率达到了98.4%、90.0%、85.6%及90.9%。该方法建立的判别模型不仅简化,而且增强了模型的判别能力,为实现李果实成熟度的无损检测和判别提供理论依据。  相似文献

为了得到冷却猪肉新鲜度的变化规律,本研究以冷却猪肉里脊部分为研究对象,进行球蛋白沉淀实验、感官评价、pH值、水分含量、肉浸液以及肌肉表面颜色值测定。结果表明:球蛋白沉淀实验、pH值能够较好地反应肉品新鲜度的变化,色差分析符合一定的规律:肌肉表面色差测定中,20℃条件下,a*变化与贮藏时间显著相关(P<0.05),L*变化显著(P<0.05);4℃条件下,b*、C变化与贮藏时间极显著相关(P<0.01),L*值与pH值极显著相关(P<0.01);对于肉浸液,L*、b*、C、ΔE*均发生显著性变化(P<0.05),20℃条件下L*、b*、C、ΔE*与贮藏时间和pH值显著相关(P<0.05),而4℃条件下,L*、C、ΔE*与贮藏时间显著相关(P<0.05),L*、a*、b*、C、ΔE*值与pH值极显著相关(P<0.01);冷链过程中,当L*高于48.73、a*高于4.72、b*高于9.18时可认定冷却肉为新鲜肉。  相似文献

The objective of this research was to design and implement an inexpensive computer vision system for measuring the color of a highly heterogeneous food material not only in shape as well in color such as potato chips in L*a*b* units from RGB images. The system was composed of (i) a digital color camera for acquiring the images in a digital format, (ii) a computer for storage the images, (c) image analysis routines integrated into a software programmed in Matlab that converts the color RGB of the food image into L*a*b* units. In this way the color of potato chips can be calculated in L*a*b* units over representative areas and in a reproducible way. The kinetics of color changes in potato slices during frying at four temperatures was followed using the implemented computer vision system (CVS). Color values in L*a*b* units were recorded at different sampling times during frying at the four oil temperatures using the total color change parameter (ΔE). Chips fried at higher temperatures get darker as expected and showed by the CVS. The implemented computer vision system can be used to study as well foods different from potato chips by selecting their proper settings for image acquisition and digital image processing.  相似文献

Consumers (n=556) rated pink color, wet/dry appearance, overall acceptability and purchase intent of normal, pale, soft and exudative (PSE), and dark, firm and dry (DFD) pork loin slices in PVC packages in five retail supermarkets. DFD samples appeared driest and PSE samples appeared wettest. Samples in the higher ranked two purchase intent categories appeared more wet than those in the lower three categories. The pinker PSE samples and all DFD samples were in the higher ranked purchase intent categories. Purchase intent generally paralleled overall acceptability; however, prediction equations indicated that wet/dry appearance, color and overall acceptability all contributed to purchase intent decision depending on muscle condition.  相似文献

ABSTRACT: The effects of 5 endpoint temperatures for cooked, internal color were determined for boneless pork longissimus muscle from 4 treatment groups: normal, normal-injected, PSE, and DFD. Visual and instrumental color, myoglobin denaturation, and acid phosphatase (ACP) of raw and cooked samples were evaluated. Visual internal color became (P < 0.05) less pink as endpoint temperature increased; however, DFD chops were more pink (P < 0.05) and PSE chops were less pink (P < 0.05) than other treatments at most endpoint temperatures. Cooked color was similar (P > 0.05) for chops from normal and normal-injected groups. Myoglobin denaturation increased as endpoint temperature increased. ACP activity in raw chops was not affected by treatment group and it was a good indicator of doneness at 71.1 °C.  相似文献

Loss of protein functionality of pale soft and exudative (PSE) meat and a surplus of mechanically deboned turkey meat (MDTM) has negative economic impacts on the meat industry. The objective of this research was to add functional proteins from an extract of MDTM to PSE meat to create a value-added pork sausage product. Sausages manufactured from PSE incorporating an MDTM extract exhibited a 30% increase in rigidity (P<0.05) compared to those manufactured using brine alone. Sausages made from PSE and normal pork with the MDTM extract demonstrated little difference in water holding capacity (P>0.05), and reductions of 4.1 and 3.1% in cooking loss (P<0.05), respectively, compared to sausages made employing brine alone. Introducing functional proteins derived from MDTM to processed meat made with PSE pork has the potential to enhance the economic value to both of these low value raw materials.  相似文献

Pale, soft, exudative (PSE), normal, and dark, firm, dry (DFD) pork was held 7 days at 4°C under light or dark then color was evaluated instrumentally and visually. Change in reflectance (R630-R580) was used to estimate color changes due to oxymyoglobin. PSE pork was lighter (high L*) than normal and DFD pork, but did not change over time. An increase in a* and R630-R580 occurred the first day for normal and DFD, but not for PSE samples. A subsequent increase in hue angle and decrease in R630-R580 (loss of redness) occurred in PSE and normal, but not in DFD samples. Changes in hue angle and R630-R580 were more rapid in PSE than in normal samples. Light exposure accelerated all changes except L*. Visual redness inversely correlated with L* value.  相似文献

Drip loss from thawed, pressure-shift-frozen longissimus dorsi pork was not different from drip loss from fresh meat samples, while cryogen-frozen (using liquid nitrogen at –70 °C) and air-frozen (–20 °C) pork both had significantly higher drip loss (12%) upon thawing when compared to pressure-shift-frozen and fresh pork (4%). Pressure-shift-frozen pork was discolored, with a significant decrease in CIE redness parameter a*, and showed signs of denaturation upon visual inspection. A high molecular weight protein band (Mw 97,000) characteristic for gel electrophoresis (SDS-PAGE) for drip from fresh, air-frozen, and cryogen-frozen pork was not present in drip from pressure-shift-frozen pork. Ice crystals in the frozen pork, as evaluated by image analysis of cavities in digitized pictures from light microscopy of 14 m-thick meat slices (cut transverse to the fiber direction) embedded in tissue wax following treatment with Carnoys fixative and ethanol, increased in the order: pressure-shift-frozen<cryogen-frozen<air-frozen pork. Meat structure, as evaluated visually following thawing, deviated from fresh meat structure only for pressure-shift-frozen pork. It is accordingly concluded that pressure denaturation of meat proteins is more important for structure appearance than growth of ice crystals, and that protein denaturation increases water-binding capacity in pressure-shift-frozen pork.  相似文献
