The aim of the present work was to evaluate the chemical composition and the radical-scavenging and antioxidant activities of hot pepper fruits (Capsicum annuum L. var. acuminatum) at three maturity stages (small green, green and red). GC–MS analysis of n-hexane and chloroform fractions showed a different composition between the three stages of ripening. The first stage of maturation (small green) showed the highest radical-scavenging activity (IC50 of 129 μg/ml). Using the bovine brain peroxidation assay, the methanolic extract of green pepper showed significant antioxidant activity (IC50 of 522 μg/ml). Addition of methanolic extract of red and green pepper inhibited oxidation of linoleic acid. Methanolic extract of red pepper showed greater antioxidative potency than the others (IC50 of 3 μg/ml). The different composition of lipophilic compounds and the various amount of phenolics, showed in the three stage of ripening of C. annuum var. acuminatum fruits, modifies the antioxidant activity.  相似文献

The steam volatile components of Yucatan Habanero chile pepper (Capsicum chinense Jack. cv. Habanero) at two ripening stages (green and orange) were analyzed using GC and GC/MS. Both samples had several compounds in common. One hundred and two compounds were identified, from which (E)-2-hexenal, hexyl 3-methylbutanoate, (Z)-3-hexenyl 3-methylbutanoate, hexyl pentanoate, 3,3-dimethylcyclohexanol, and hexadecanoic acid were found to be the major constituents. During Habanero chile pepper maturation, the majority of volatile compounds decreased or even disappeared, some of them with green odour notes while esters, which have fruity odour notes, increased at the same time.  相似文献

Capsaicin and dihydrocapsaicin content, their antioxidant activity, the activity of the fraction containing flavonoids, as well as the activity of l-phenylalanine ammonia-lyase (PAL) were studied in the fruit of the hot pepper Capsicum annuum L., var. Cyklon and Bronowicka Ostra. For analyses, pericarps of fruit at two stages were used: before the beginning of maturation — green; and mature — red. The fruit of the cv. Bronowicka Ostra was characterized by a higher PAL activity, capsaicinoid level and higher antioxidant activity than that found in Cyklon. It was found that red fruit of both cultivars had higher antioxidant activity in the capsaicinoid and flavonoid fractions. The PAL activity was as much higher in the red than in the green (unripe) fruits. The antioxidant activity under the same experimental conditions was similar in both capsaicinoid and flavonoid fractions of cv. Bronowicka Ostra.  相似文献

Healthy fruits of Capsicum annuum L. cv. Chelsea (yellow bell pepper) and one infected by Colletotrichum gloeosporioides were analysed for polyphenols via high-performance liquid chromatography coupled with tandem mass spectrometry (HPLC–MS/MS). Among seven polyphenols characterized, four components in the C. annuum fruits were identified for the first time. To investigate the characteristics of the polyphenols as defence materials, the content change of the fruit polyphenols inoculated with C. gloeosporioides was monitored by HPLC. It was observed for the first time that de novo induced N-caffeoyl putrescine (1) and caffeoyl O-hexoside (2) appeared to act as a phytoalexin in the defence mechanism of the C. annuum fruits against C. gloeosporioides, and constitutively formed feruloyl O-glucoside (3), kaempferol O-pentosyldihexoside (4) and dihydroxyflavone O-hexoside (7) as a phytoanticipin in the diseased C. annuum fruits.  相似文献

Oxidation of dihydrocapsaicin (8-methyl-N-vanillyl-6-nonanamide) by peroxidase (EC 1.11.1.7) from Capsicum annuum var. annuum fruits yielded one absorbent oxidation product with E262= 4.7 103 M?1 cm?1. Dependence of oxidation rate on dihydrocapsaicin and H2O2 concentrations revealed Michaelis-Menten type kinetics with inhibition at high substrate concentrations and optimal pH near 6.0. Dihydrocapsaicin was oxidized by pepper peroxidase, and participation of peroxidase in capsaicinoid metabolism of pepper fruits should be taken into account.  相似文献

Total capsaicinoids, colour and volatile compounds of 10 Habanero chilli pepper (Capsicum chinense Jack.) cultivars grown in Yucatan, grouped by their colours: four red, five orange and one brown, were determined. The content of capsaicinoids, responsible for the pungency of chilli peppers, varied between 41.8 and 65.9 mg g−1 dry fruit. Mean concentration of orange cultivars was 55.0 mg g−1, while red cultivars had 45.0 mg g−1 dry fruit, indicating that the first ones are more pungent. The composition of volatile compounds of the Habanero chilli peppers differs clearly for the different cultivars. Orange and brown cultivars have in general higher amounts of esters, with their fruity odour notes, than red cultivars. These differences are reflected in the amount of total volatiles, which is higher in orange and brown cultivars in comparison with red cultivars. From these results it can be concluded that orange and brown cultivars are better in terms of their flavour-relevant chemical composition than red cultivars.  相似文献

In the present study the total phenols, flavonoids, carotenoids and capsaicinoids content, the in vitro antioxidant and hypoglycemic activities of extracts of air-dried fruits from two Capsicum annuum cultivars were investigated. A different composition between the two cultivars was evidenced. C. annuum var. acuminatum medium extract presented a major content of phenols, carotenoids, capsaicin and dihydrocapsaicin while C. annuum var. acuminatum big extract is characterized by the highest quercetin, luteolin and kaempferol content with 68.0, 87.6 and 29.7 μg/g dried weight, respectively, analyzed by HPLC. Medium pepper showed the highest radical scavenging activity in DPPH assay (IC50 of 85.3 μg/ml) while big pepper have an interesting activity in ABTS assay (IC50 of 16.4 μg/ml) and the highest inhibition of linoleic acid oxidation with an IC50 value of 1.2 μg/ml after 30 min of incubation. A selective inhibitory activity against α-amylase was demonstrated for C. annuum var. acuminatum big lipophilic fraction (IC50 values of 8.7 μg/ml). The obtained results suggest that C. annuum cultivars could be used as valuable flavor with functional properties for foods.  相似文献

In order to determine whether changes in pectin fractions facilitate or not the traditional drying of red pepper fruits (Capsicum annuum L.) and the possible consequences of these changes on the dehydration conditions for paprika processing, that have an impact on the evolution of carotenoid content (responsible for colour), this evolution and other parameters were monitored during a traditional drying process in correlation with the temperature-time combinations used. Evolution of microbial flora was followed to analyse their possible contribution, as an exogenous source, to enzymatic polygalacturonase (PG) activity. Our results indicated that the mild temperature-time regime mediated the selection and proliferation of a microbial flora that contributed to enzymatic PG activity modifying the pectic fraction. The enzymatic activity generated rises in the calcium pectate (CaP) fraction, which favoured the drying of fruit with an initial low content of soluble pectins (SP) and CaP. Thus, the changes in texture helped during the transfer of moisture, facilitating the dehydration process, and therefore, a milder temperature-time regime was required. Consequently, bioactive compounds of the fruit, such as capsorubin, capsanthin and provitamin A carotenoids, remained almost unaltered. On the other hand, when the SP fraction increased during dehydration, the process was delayed, and this was also correlated with a higher content in SP and CaP in fresh fruit, indicating that the fruits were harvested at a later stage of ripeness. In this case a more intense temperature-time regime was needed, negatively affecting the carotenoid content by decreasing it significantly.  相似文献

ABSTRACT: A rapid, single-stage, quantitative extraction procedure is described for high-performance liquid chromatographic (HPLC) analysis of capsaicin and dihydrocapsaicin in whole chili peppers. Individual and multiple Capsicum chinense (orange habañero) pepper samples were analyzed in a 2 y study. Peppers, both undried and dried, contained average values of 1250 ppm capsaicin and 540 ppm dihydrocapsaicin relative to undried weight. Relative to dry weight, the orange habañero peppers contained 8840 ppm capsaicin and 3940 ppm dihydrocapsaicin.  相似文献

Echinocandin acylase from Actinoplanes utahensis NRRL 12052 (ECB deacylase) was used for the hydrolysis of capsaicins (trans-8-methyl-N-vanillyl-6-nonenamide and 8-methyl-N-vanillyl-6-nonanamide) into vanillylamine. Caspaicins were extracted from Capsicum annuum var. Red Cayenne. The enzyme was partially purified and used for improving molar conversion and reaction rate of the biotransformation. Under optimised conditions, the preparative biotransformation of 8.2 mM capsaicins on 200 ml scale allowed for 92% molar conversions and 59% of recovered vanillylamine.  相似文献

BACKGROUND: Because of the great variability in size, shape, colour, pungency and aroma of Calabrian Capsicum annuum(hot pepper), this study was carried out to furnish producers with information on volatile compounds and capsaicinoid content useful for the genetic improvement of this species. Fully ripened fresh peppers of the most widely cultivated varieties were studied. Capsaicinoid content was determined by reverse phase high‐performance liquid chromatography/diode array detection (RP‐HPLC/DAD). Volatile compounds were determined by headspace solid phase microextraction/gas chromatography/mass spectrometry (HS‐SPME/GC/MS). RESULTS: Sixty‐four volatile compounds were identified, the main classes being alcohols, aldehydes, terpenes and aliphatic branched‐chain hydrocarbons. The ‘Naso di cane’ (C. annuumvar. abbreviatum) variety contained the lowest amount of volatiles, especially alcohols and aldehydes, while the highest levels of capsaicin and dihydrocapsaicin were found in ‘Vulcan’ and ‘Corno di capra’ varieties. CONCLUSION: From statistical evaluation of the data obtained, each variety showed a typical composition of capsaicinoids and volatiles determining the taste and odour of the hot peppers. During the past decade, it has been reported that the consumption of certain foods and spices such as pepper may have a positive effect on health. The present study evaluates the influence of fruit ripening on total phenols, flavonoids, carotenoids and capsaicinoids content and antioxidant, hypoglycaemic and anticholinesterase activities of Capsicum chinense Jacq. cv Habanero. The chemical investigation showed a different composition between the two stages of ripening (immature and mature). Generally, the concentration of carotenoids and capsaicinoids increased as the peppers reached maturity, whereas the concentration of phenols declined. The immature fruits showed the highest radical scavenging activity (IC50 of 97.14 μg/ml). On the contrary, the antioxidant activity evaluated by the β-carotene bleaching test showed a significant activity for mature peppers (IC50 value of 4.57 μg/ml after 30 min of incubation). Mature peppers inhibited α-amylase with an IC50 of 130.67 μg/ml. The lipophilic fractions of both mature and immature peppers exhibited an interesting and selective inhibitory activity against α-amylase with IC50 values of 29.58 and 9.88 μg/ml, respectively. Both total extracts of mature and immature peppers inhibited butyrylcholinesterase selectively. The obtained results underline the potential health benefits as a result of consuming C. chinense Habanero and suggest that it could be used as new valuable flavour with functional properties for food or nutriceutical products on the basis of the high content of phytochemicals and found biological properties.  相似文献

Five different coloured sweet peppers (Capsicum annuum cv. Signal), white, green, yellow, orange and red were analysed for total carotenoids, α‐tocopherol, sugars (glucose, fructose and sucrose), organic acids (citric and ascorbic acids) and anti‐oxidant properties. The mature fruits, ‘Signal Red’, ‘Signal Orange’ and ‘Signal Yellow’ contained higher carotenoids, α‐tocopherol, sugars and organic acids than the immature fruits, ‘Signal Green’ and ‘Signal White’. Among the mature fruits, ‘Signal Red’ was the highest in total carotenoids [9.15 mg (100 g)?1 of fresh weight] while ‘Signal Orange’ was the highest in α‐tocopherol [5.40 mg (100 g)?1 of fresh weight]. ‘Signal Red’ and ‘Signal Orange’ contained the most sugars and organic acids. The suppression of 2,2′‐azobis (2,4‐dimethylvaleronitrile) (AMVN)‐induced oxidation of methyl linoleate by the acetone extracts from the coloured sweet peppers resulted as follows: ‘Signal Red’ > ‘Signal Orange’ ≈ ‘Signal Yellow’ > ‘Signal Green’ ≈ ‘Signal White’. The order of 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) radical scavenging activities of the acetone extracts was similar to that of suppression of methyl linoleate oxidation.  相似文献

Simultaneous analysis of purine alkaloids and catechins in tea from dry leaves of Camellia sinensis, Camellia ptilophylla and Camellia assamica var. kucha by a reversed-phase high-performance liquid chromatography (RP-HPLC) method. This HPLC method had been proved to be appropriate for the identification and quantification of purine alkaloids and catechins, and exhibited good correlation coefficients, detection levels and recovery rates. Caffeine, theobromine, theacrine, (+)-catechin, (−)-epicatechin, (−)-epigallocatechin, (−)-epigallocatechin gallate, (−)-epicatechin gallate, (−)-gallocatechin gallate and (−)-gallocatechin were identified and quantified in the three species of genus Camellia Sect. Thea. There was 2.72% caffeine and 0.26% theobromine in C. sinensis, 4.85% theobromine in C. ptilophylla, and 1.58% theacrine, 0.94% caffeine and 0.45% theobromine in C. assamica var. kucha. Theacrine in C. sinensis and C. ptilophylla, and caffeine in C. ptilophylla were not detected. These data highlight differences in the relative proportions of purine alkaloids in the three species of Camellia Sect. Thea. In addition, different catechins were identified and quantified. The highest content of catechin in dry leaves was (−)-epigallocatechin gallate (EGCG) 3.51%, (−)-gallocatechin gallate (GCG) 9.88% and (−)-epigallocatechin gallate (EGCG) 6.78% in C. sinensis, C. ptilophylla and C. assamica var. kucha, respectively.  相似文献

Citrus peel is rich in flavanone glycosides and polymethoxyflavones. In view of their importance for industrial application as well as for their pharmacological properties, their content was analyzed in the mature fruits of several Citrus paradisi (grapefruit) and Citrus sinensis (orange) varieties, with a view to select the most interesting for isolation. The results shows that the Star Ruby grapefruit and the Sanguinelli orange stand out for their high contents of naringin and hesperidin, respectively. The presence of the polymethoxyflavones nobiletin, heptamethoxyflavone and tangeretin, could be ascertained in all the grapefruit varieties analysed. Higher polymethoxyflavone levels were recorded in orange, with Valencia Late showing the greatest nobiletin, sinensetin and tangeretin contents and Navelate the highest heptamethoxyflavone levels. An in vitro study revealed that these compounds acted as antifungal agents against Penicillium digitatum, the polymethoxyflavones being more active than the flavanones in this respect. The possible participation of these phenolic compounds in the defence mechanism of Citrus against P. digitatum is discussed.  相似文献

The interest in the consumption of pepper fruits (Capsicum annuum L.) is, to a large extent, due to its content of bioactive nutrients and their importance as dietary antioxidants. A greenhouse experiment was carried out to determine the effects of salinity and different ripening states of pepper fruits on several compounds with antioxidant properties. Fruits from plants grown under three saline treatments (0, 15, and 30 mM NaCl) were collected at three maturity states (green, turning, and red). Antioxidant activity in the hydrophilic (HAA) and lipophilic (LAA) fractions, lycopene, β-carotene, ascorbic acid, total phenolic compounds and reducing sugars were determined. From the nutritional point of view, the red state was the most appropriate state of maturation, since red peppers had the highest levels of lycopene, β-carotene, and sugars and the highest antioxidant activity for both hydrophilic and lipophilic fractions. The effect of salinity depended on the maturity state of the peppers: it had no effect on HAA, β-carotene or sugars, but decreased ascorbic acid and total phenolic compounds, and increased LAA and lycopene. The use of a moderately-saline water was beneficial when peppers were harvested in the red state, by increasing HAA and LAA in fruits, with no significant effects on other parameters.  相似文献

The developed duplex real-time PCR method allows the simultaneous detection of traces of potentially allergenic white mustard (Sinapis alba) and celery roots (Apium graveolens var. rapaceum), celery stalks (A. g. var. dulce) and leaf celery (A. g. var. secalinum). The duplex assay does not show any cross-reactivity with 64 different biological species, including various members of the Brassicaceae and Apiaceae family. In raw model sausages spiked with white mustard and celery roots, the LOD was found to be 0.001% white mustard and 0.005% celery. In model sausages brewed at 75–78 °C for 15 min the LOD was found to be 0.005% white mustard and 0.005% celery. The duplex real-time PCR assay was applied to check if commercial food products are labelled in compliance with the legal regulations.  相似文献

The growth and nitrate uptake of the aerial microalga Coelastrella striolata var. multistriata, which was isolated from the surface of rocks, were characterized under a variety of conditions in this study. The maximum specific growth rate of the alga, having prominent inorganic nitrogen uptake in the fresh medium, was 0.30 d−1, as calculated in the growth logarithmic phase. It was also shown that the alga had abilities to be reddish orange to green colour (depending on the nitrogen source concentration in the medium) and to synthesize very high amounts of a complex mixture of carotenoids, such as canthaxanthin, astaxanthin and β-carotene. The reddish orange cells of the alga could accumulate 56.0 mg of major secondary carotenoids per g biomass. In the content of carotenoids, canthaxanthin, astaxanthin and β-carotene in the cells were 47.5, 1.5, and 7.0 mg/g dwc, respectively. Additionally, it was shown that the algal extract containing those carotenoids had an antioxidant potential in lipid foods. In the near future, the aerial microalga C. striolata var. multistriata will be used as a functional material in a variety of commercial applications, such as feed supplements, natural antioxidants and food dyes.  相似文献

Chemical stains were investigated with the aim of developing a method for detecting eggs of stored-product insects in refined wheat flour (white flour), so that eggs and flour particles could be distinguished easily. Eggs of the rust-red flour beetle, Tribolium castaneum, the saw-toothed grain beetle, Oryzaephilus surinamensis and the rice moth, Corcyra cephalonica were detected by staining with 0.1% bromocresol green or 1:1 mixture of bromocresol green+0.5% orange G solution after acid digestion of the flour particles. In contrast to the standard AACC method of staining with iodine solution where both eggs and flour particles were stained brownish-yellow or yellow, bromocresol green alone or in mixture with orange G, differentially stained the insect eggs and the flour particles distinct orange and green, respectively. Eggs in flour could also be detected using 0.05% acid fuchsin but both eggs and flour particles were stained uniformly pink.  相似文献
