The objective of this study was to evaluate the perception and the attitudes towards probiotic foods of the population in the city of Rio de Janeiro, Brazil. Four hundred and twenty (100.0%) people were interviewed in small-, medium- and large-sized supermarkets located in various parts of the city of Rio de Janeiro. One hundred and twenty-two (29.05%) people defined probiotic foods correctly. Ninety-one (21.67%) were unable to mention a single example of a probiotic food. The results of this study indicate the need for an elementary easy-to-understand educational programme using accessible language in order to fix the concepts related to these products.  相似文献

Growing global food demand has generated a greater interest in the consumption of new and diversified protein sources. Novel foodstuffs represent a challenge for food law as they need proper safety assessments before obtaining market permission. The case of edible insects and European law is a good representation of this issue because a selection of food grade insect species may be available on the European market in the coming years. However, European legislation does not explicitly address edible insects. Consequently, this has left a grey area, allowing different interpretations of the legislation among Member States. The aim of this paper is to analyse the challenge of the safe management of edible insects in the context of the current legal framework. The current Novel Food legislation, as well as the forthcoming version of the legislation, will be analysed and discussed in relation to edible insects. Particular attention will be paid to the evolution of legislation and to the experiences of both EU and non-EU countries. In recent years, a number of different stakeholders have supported the legalization of edible insect consumption in Europe, but market permission is just the first step towards a new framework for a novel food in a regulatory context. Once admitted, edible insects require proper rules to assure consumers and stakeholders of their benefits and safety. This overview highlights the need to develop clearer legislation to govern the future production and consumption of new food in Europe, provide guarantees to producers, and achieve consumer protection.  相似文献

Staphylococcus aureus produces exoproteins that contribute to its ability to colonize the mammary gland such as hemolysins, coagulase, slime, and protein A. This study characterized phenotypically and genotypically these virulence factors in 50 Staph. aureus isolates. These isolates were obtained from milk samples from subclinical mastitis cases identified in 15 dairy cattle farms located in the state of Rio de Janeiro, Brazil. All of the confirmed Staph. aureus samples were PCR positive for the coa gene, which displayed 3 different size polymorphisms. The amplification of the spaA X region yielded a single amplicon for each isolate with the prevalent amplicon sized 315 bp. The Staph. aureus isolates were 24 and 16% positive for the hla and hlb genes, respectively, and 22 and 20% positive for the icaA and icaD genes, respectively. Amplification of the agr gene RNAIII was positive in 74% of the strains. Twenty-seven different profiles were identified among the samples, indicating a great diversity of Staph. aureus involved in the etiology of mastitis cases in the analyzed region. These findings are valuable to the comprehension of the distribution of the profiles of Staph. aureus strains isolated from subclinical mastitis cases in the state of Rio de Janeiro.  相似文献

ABSTRACT:  The aim of this study was to evaluate habits and practices of cheese consumers toward their level of knowledge of food safety. A total of 1000 people were interviewed in several cities of the state of Rio de Janeiro, Brazil. Five hundred thirty-eight (53.8%) people consume cheese daily, while 318 (31.8%) and 144 (14.4%) consume cheese weekly and monthly, respectively. Five hundred twenty-two (52%) people reported its usage as an ingredient used in the preparation of other dishes, while 320 (32%) of the interviewed people consume cheese directly as a part of the diet. Typical Brazilian cheeses such as "Minas Frescal" and "Prato" cheese are preferred by 528 (52.8%) of the consumers. Of the total consumers, 764 (76.4%) purchase cheese from supermarkets, while 236 (23.6%) from open-air markets. Inspected cheese is purchased by 350 (35%) consumers, while 650 (65%) buy it without knowing if they were submitted to previous fiscalization. Four hundred thirty (43%) consumers do not know any disease transmitted by cheese that has not been inspected. Overall, educational campaigns must be developed by the Sanitary Surveillance and the Health Agencies to improve the knowledge of the consumer about food safety of cheeses.  相似文献

A liquid chromatography–tandem mass spectrometry (LC–MS/MS) method, which has recently been developed and validated, was used for the identification and quantification of polyether ionophore, macrolide and lincosamide residues in commercial eggs sold in the metropolitan area of Rio de Janeiro, Brazil. The method was applied to 100 samples and the results showed a high incidence of polyether ionophore residues (25%). Salinomycin was detected in 21% of samples, but only two non-compliant results (5.3 and 53 µg?kg?1) were found if maximum limits (tolerances) established by European Union were adopted in Brazil and if a method decision limit (CCα) of 3.4?µg?kg?1 was considered. In 8% of analyzed samples, more than one studied coccidiostat was found. The lincosamide, lincomycin, and the macrolide, tylosin, were detected at trace levels in 4 and 1% of the samples, respectively. Lasalocid, clarithromycin and erythromycin were not found.  相似文献

调理肉制品因食用方便、附加值高、讲究营养均衡、包装精美和小容量化而深受消费者喜爱,生产量和消费量与日俱增,现已成为国内城市人群和发达国家消费的主要肉制品品种。但目前我国调理肉制品主要以速冻调理肉制品为主,货架期短是调理肉制品发展的主要制约瓶颈。因此,开展调理肉制品保鲜技术研究,延长其货架期至关重要。本文从保鲜剂保鲜、非热杀菌保鲜和气调保鲜等方面重点介绍了调理肉制品的保鲜技术研究进展,并对调理肉制品保鲜的发展前景进行了展望。  相似文献

Abstract: Various bioactive chemical constituents were quantified for 21 honey samples obtained at Rio de Janeiro and Minas Gerais, Brazil. To evaluate their antioxidant activity, 3 different methods were used: the ferric reducing antioxidant power, the 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) radical‐scavenging activity, and the 2,2′‐azinobis (3‐ethylbenzothiazolin)‐6‐sulfonate (ABTS) assays. Correlations between the parameters were statistically significant (?0.6684 ≤ r ≤?0.8410, P < 0.05). Principal component analysis showed that honey samples from the same floral origins had more similar profiles, which made it possible to group the eucalyptus, morrão de candeia, and cambara honey samples in 3 distinct areas, while cluster analysis could separate the artificial honey from the floral honeys. Practical Application: This research might aid in the discrimination of honey floral origin, by using simple analytical methods in association with multivariate analysis, which could also show a great difference among floral honeys and artificial honey, indicating a possible way to help with the identification of artificial honeys.  相似文献

Carbonyls in urban air continue to receive scientific and regulatory attention as toxic air contaminants and for their important role in photochemical smog. However, few data are available for speciated carbonyls in urban air. Ambient concentrations of up to 61 carbonyls have been measured in Rio de Janeiro, Brazil. The most abundant carbonyls were formaldehyde and acetaldehyde (study-averaged concentrations of 10.8 +/- 4.1 and 10.4 +/- 4.6 microg m(-3), respectively, in samples of 3-h duration collected from May to November 2000 at a downtown location during the morning vehicle commute) followed by acetone, 2-butanone, and benzaldehyde. Ambient concentrations of other carbonyls (except acetophenone) correlated well with those of acetaldehyde and of formaldehyde. This study examines the ambient acetaldehyde/ambient formaldehyde concentration ratio in Brazilian cities since the mid-1980s in the context of changes in Brazil's reliance on ethanol as a vehicle fuel. This ratio has begun to decrease in recent years due to fleet turnover and is likely to decrease further as older cars fueled with ethanol are replaced by lower-emitting models that run on a gasoline-ethanol blend. The carbonyls measured are ranked with respect to ozone formation potential (using MIR coefficients) and reaction with OH (using carbonyl-OH reaction rate constants). Ozone formation is dominated by formaldehyde (43% of total) followed by acetaldehyde (32%) and methylglyoxal (8%); other carbonyls each contributed < or = 4% of total. For reaction with OH, acetaldehyde ranks first closely followed by formaldehyde.  相似文献

This pilot survey aimed to assess the occurrence of tetracyclines and the 4-epimers of oxytetracycline, tetracycline and chlortetracycline in commercial pasteurized milks sold in the metropolitan area of Rio de Janeiro, Brazil, between October 2009 and March 2010. A liquid chromatography–tandem mass spectrometry (LC–MS/MS) method, developed and validated in our laboratory, was used. All 100 analyzed samples were compliant, but 14 contained oxytetracycline in concentrations ranging from the method limit of detection (3.7?µg?l–1) to the method limit of quantification (12.2?µg?l–1). One sample contained oxytetracycline and tetracycline simultaneously (at a concentration slightly higher than method limit of quantification, 7.0?µg?l–1). The presence of 4-epioxytetracycline and 4-epitetracycline in contaminated samples with the parent drugs could not be confirmed as traces were detected only in the quantification MRM transition. No other tetracyclines were detected.  相似文献

The AmpC enzyme is normally expressed constitutively in Escherichia coli, and its overproduction confers resistance to cefoxitin. A newly reported AmpC, the extended-spectrum AmpC (ESAC), is related to resistance to cefepime, a fourth-generation cephalosporin. This enzyme presents more flexibility in the active site due to insertions, replacements, and deletions on AA sequences. Many isolates producing ESAC were reported in human clinical isolates, but E. coli ESAC producers were reported in animals only in France. The animal E. coli strains can produce this enzyme and possibly disseminate it to human and production environments. In our study, 3 strains of E. coli from milk and feces bovine samples, collected in Rio de Janeiro, Brazil, were suspected to produce ESAC. After excluding other mechanisms of resistance, the gene was sequenced to verify ESAC characteristics. These strains presented replacement of AA in omega and R2 loops, suggesting ESAC production. This is the first report to study ESAC E. coli in dairy farms in Brazil.  相似文献

Over the past 9 years, 468 bacterial strains isolated from raw and pasteurized milk, beef and pork, bovine and chicken liver, chicken heart, gizzards and lung sausage, hamburger, cheese and lettuce in different regions of the State of S?o Paulo and in the city of Rio de Janeiro were received by the Reference Laboratory for Yersinia in Brazil. All were confirmed to be Yersinia spp. The 468 Yersinia isolates were grouped as 184 strains because some of the bacteria isolated from the same food sample belonged to the same species, and were considered to be a single strain. The Yersinia food strains were classified as Y. enterocolitica (46), Y. intermedia (67), Y. frederiksenii (20), Y. kristensenii (8) and 43 of them were biochemically atypical. Mariculture activity has increased its production along the Atlantic Coast of Brazil over the last years. This protein source for human consumption may also represent risks due to the exposure to bioaccumulated contaminants in the tissues of organisms reared in polluted shallow waters. This study evaluated the bioaccumulation of pesticides and dioxin-like compounds in two commercial marine bivalve species reared at different sites along the Rio de Janeiro State coast (SE-Brazil). We observed distinct contamination profiles in bivalve tissues reared at each sampling site, which may be related to human activities historically developed in those areas. A pronounced tendency for higher contamination levels in animals sampled in the last month of winter (September) is discussed as being likely due to environmental issues, rather than biological factors. Based on Minimal Risk Level, Maximum Residue, Acceptable Daily Intake and Toxic Equivalent, bivalves are classified as safe for human consumption.  相似文献

Ochratoxin A (OA) is receiving attention world-wide because of the hazard it poses to human health. The aim was to test the distribution of OA in grape juice, pulps of frozen grapes, and national and imported table wine obtained from markets in Rio de Janeiro, Brazil. Analytical methodology using immunoaffinity column for OA extraction and clean-up with a final separation on a reversed-phase (C(18)) column and fluorescence detection in high-performance liquid chromatography showed a detection limit of 21 ng l(-1). The mean recovery was 91% for red wines and 82% for white wines; while the mean recoveries for juices and pulps of frozen grapes were 91.6 and 88%, respectively. Of 64 samples of grape juice and frozen pulps, 25% were positive for OA, being the mean content of 37 ng l(-1) with a maximum concentration of 100 ng l(-1). In wines, the mean concentration detected in 80 samples analysed was 34.4 ng l(-1) with 28.75% of positive samples. Red wines showed the highest percentages and levels of contaminated samples: 38% and 37 ng l(-1), respectively. The white wine contained levels above 26 ng l(-1) in 17.75% of the analysed samples. The levels of contamination detected in red wine sold in Río de Janeiro were not enough to surpass the virtually safe dose established as 5 n g kg(-1) body weight of daily intake.  相似文献

The microbiological quality of 60 ice cream samples of three commercial brands (A, B and C) of various flavours, commercialized in some towns in the State of Rio de Janeiro, Brazil, was evaluated. Total bacteria count (TCB), coliforms at 35°C (CT), coliforms at 44°C (CF) and presence of Staphylococcus aureus were performed on all samples. TCB ranged from 2.0 × 10 2 to 6.9 × 10 5 cfu/mL, CT from < 3–≥ 2400 MPN/mL, CF from < 3–1100 MPN/mL and S. aureus from < 10–1.4 × 10 6 cfu/mL. The level of bacterial contamination found in this study reflects the unhygienic conditions prevalent in manufacturing and storage of ice creams. Actions are thus necessary by the Brazilian regulatory agencies to require the ice cream processing plants to adopt quality guarantee systems, such as good manufacturing practices and hazard analysis and critical control points system.  相似文献

The Brazilian market for dairy products made from goat milk is increasing despite the seasonality of production and naturally small milk production per animal, factors that result in high-priced products and encourage fraud. In Brazil, no official analytical method exists for detecting adulteration of goat dairy products with cow milk. The aim of this study was to design a strategy to investigate the adulteration of frescal (fresh) goat cheeses available in the Rio de Janeiro retail market, combining analysis of cheese composition and the perception of adulteration by consumers. Commercial goat cheeses were tested by using a duplex PCR assay previously designed to authenticate cheeses, by targeting the mitochondrial 12S ribosomal RNA genes of both species simultaneously. The PCR test was able to detect 0.5% (vol/vol) cow milk added during goat cheese formulation. The analysis of 20 locally produced goat cheeses (20 lots of 4 brands) showed that all were adulterated with cow milk, even though the labels did not indicate the addition of cow milk. To estimate the ability of consumers to perceive the fraudulent addition of cow milk, a triangle test was performed, in which cheeses formulated with several different proportions of goat and cow milk were offered to 102 regular consumers of cheese. Detection threshold analysis indicated that almost half of the consumers were able to perceive adulteration at 10% (vol/vol) cow milk. Effective actions must be implemented to regulate the market for goat dairy products in Brazil, considering the rights and choices of consumers with respect to their particular requirements for diet and health, preference, and cost.  相似文献

A total of 207 L. monocytogenes strains isolated from different types of cheeses commercialized in the city of Rio de Janeiro, Brazil, were serotyped and evaluated for their ability to produce beta-haemolysin and lecithinase and to adsorb Congo red dye. Of the 207 strains, 59.9, 27.5 and 12.6% belonged to serotypes 1/2a, 1/2b and 4b, respectively. In addition, 175 strains of L. monocytogenes produced lecithinase while strains of the other species did not. Some of the non-L. monocytogenes strains adsorbed the dye Congo red, while some L. monocytogenes did not. Statistical analysis of the results showed significant differences (P < 0.05) amongst the virulence tests and the three serotypes found. In the present study, 32 L. monocytogenes strains were also analyzed by RAPD (randomly amplified polymorphic DNA). RAPD analysis allowed the discrimination among strains of different serotypes, as well as among strains of the same serotype. It is important to emphasize that the use of more than one primer is needed for characterization of L. monocytogenes strains. With RAPD the strains were grouped into six different profiles, some of them common for strains belonging to different serotypes. The results also indicated a close genetic relationship among strains of different serotypes.  相似文献

The performance of different chemometric approaches to discriminate artisanal and industrial pork sausages using traditional physicochemical parameters was investigated. A total of 90 samples of sausages marketed in various supermarkets and open-markets in Rio de Janeiro, Brazil were analyzed for their content of moisture, protein, fat, nitrite, sodium and calcium. Principal component analysis (PCA) and hierarchical cluster analysis (HCA) were used as exploratory methods, while linear and non-linear classification methods, such as k-nearest neighbors (k-NN), soft independent modeling of class analogy (SIMCA), partial least square discriminant analysis (PLSDA) and artificial neural networks (ANN) were used for assessing the data. Different behaviors for all parameters were analyzed between the classes. Principal component analysis and hierarchical cluster analysis did not show a complete discrimination of the samples. KNN and ANN results showed excellent performance for both categories with 100% correct prediction while SIMCA and PLSDA presented performance of 100% and 85.7% for inspected and artisanal sausages, respectively. According to the SIMCA, PLSDA and ANN, the contents of moisture and fat showed the highest discriminative power. Overall, the findings emphasize the use of multivariate techniques to evaluate the quality of processed foods, as pork sausages.  相似文献

A large variety of cheeses exist in Brazil, reflecting historical and cultural aspects. Brazilian artisanal cheeses present differences in the processing, ripening time (when applied), type of milk used, texture, size, shape, color, moisture content, flavor, the use or not of starter cultures, among others. This review describes the main artisanal cheeses produced in Brazil, focusing on general and particular characteristics associated with their making process and geographical identity. Overall, the high variability of the physicochemical data and deficiency of information on sensorial properties of Brazilian artisanal cheeses were noticed. On the other hand, culture‐dependent methods were mostly used to expand the knowledge into the microbiology of these cheeses, whereas their microbial diversity has been recently discovered through the use of 16S rRNA gene sequencing‐based methods. The certification of a geographical indication for Brazilian artisanal cheeses may encompass an essential milestone for adding value to these products. Regardless of their significance in the diet, culture, and economy of producing regions, taken together, the reviewed literature discloses the need of insightful studies to generate scientific data to support the expansion of the market, while ensuring the protection of historic aspects related to the production of Brazilian artisanal cheeses.  相似文献

Several statistical methods have been developed in an attempt to reproduce the human capability of pattern recognition. Self-organizing maps (SOMs) are a type of artificial neural network (ANN) with unsupervised learning designed to examine the structure of multidimensional data. This study aimed to conduct a segmentation of the geographical and genotypic coffee grown in the coffee region of Paraná — Brazil using the SOM for cluster analysis. Fourteen arabica coffee genotypes from two different cities were collected (Paranavaí and Cornélio Procópio). Density, caffeine, chlorogenic acids, tannins, total and reducing sugars, proteins, and lipids of the green coffee beans were analyzed. Using these data, the SOM was able to discriminate the 14 genotypes and also segmentation of the geographical origin was observed. Reducing sugars, caffeine, and chlorogenic acid were the most important variables for separation of the region of cultivation of arabica coffee genotypes. It was concluded that the SOM was able to recognize the coffee genotypes and geographical origin using the chemical profile data.  相似文献
