Antioxidant potential for previously identified optimum levels of aloe vera (AV), fenugreek (FGK), ginseng (G), mustard (M), rosemary (R), sage (S), soya protein (SPI), tea catechins (TC) and whey protein concentrate (WPC) were evaluated in raw and cooked patties manufactured from frozen pork. The optimum levels determined were: AV (0.25%), FGK (0.01%), G (0.25%), M (0.10%), R (0.10%), S (0.05%), SPI (0.10%), TC (0.25%) and WPC (4%). Test ingredients were evaluated against synthetic antioxidants butylated hydroxyanisole/butylated hydroxytoluene (BHA/BHT) (0.01%) and a supplemented meat containing natural antioxidant, α-tocopherol (1000 mg α-tocopheryl acetate/kg feed). Ranking the decreasing antioxidant effectiveness of added ingredients in raw patties on day 9 showed that: Control>G>SPI>FGK>AV>M>WPC>S>α-tocopherol>R>TC>BHA/BHT. Cooking resulted in a four-fold increase in TBARS values over raw patties with TC being the most effective antioxidant having significantly (P<0.001) lower TBARS values than the cooked control on days 3, 6 and 9. Ranking of decreasing antioxidant effectiveness of added ingredients showed that: M>SPI>G>FGK>α-tocopherol>AV>control>S>BHA/BHT>R>WPC>TC. BHA/BHT had the most beneficial effect on cooked meat redness with Hunter 'a' values being significantly (P<0.05) higher than the control on days 3, 6 and 9. Ranking of Hunter 'a' values for added test ingredients showed that FGK>WPC>control>R>BHA/BHT>α-tocopherol>TC>AV>SPI>M>G>S on day 9. Hunter 'L' and 'b' values showed no significant trend over the storage period in either raw or cooked patties. The pH values of both raw and cooked pork control patties and products containing added test antioxidants were variable and while a number of trends were observed, no significant differences were recorded between samples.  相似文献

The effect of oxidized corn oil and vitamin E (α-tocopheryl acetate) in pig diets on the oxidative stability of muscle lipids and on the surface colour characteristics of fresh and previously frozen pork chops in refrigerated storage was investigated. Lipid oxidation (TBARS values) and surface redness (Hunter 'a' values) were significantly influenced (P < 0·01) by dietary α-tocopheryl acetate levels but not by degree of oxidation of dietary corn oil. Lipid oxidation and colour deterioration during refrigerated storage were greater in previously frozen chops compared to fresh chops. TBARS values were lower and Hunter 'a' values higher in pork chops from pigs fed 100 and 200 mg α-tocopheryl acetate/kg diet compared to pigs fed 10 mg/kg diet after 2, 4, 6 and 8 days of refrigerated storage. Hunter 'a' values were significantly correlated (P < 0·01) with the logarithm of TBARS values. The results suggest that oxidation of myoglobin precedes oxidation of muscle lipids in pork chops stored at 4°C.  相似文献

以真空包装熟猪肉饼为试材,探讨不同质量分数迷迭香提取物的抗氧化、抑菌能力及其对肉饼品质的影响。将0.03%、0.06%和0.09%的迷迭香提取物分别添加到肉饼中,对肉饼在10 d冷藏期间的硫代巴比妥酸(thiobarbituricacid reactive substance,TBARS)值、菌落总数、挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量、pH值、红度值(a*)和质构进行测定,并与0.02%二丁基羟基甲苯(butylated hydroxytoluene,BHT)进行比较。结果表明:添加迷迭香提取物的各处理组抗脂肪氧化能力高于空白对照组(P<0.05),迷迭香提取物添加量为0.09%的处理组在前7 d的冷藏过程中抑菌能力显著高于空白对照组(P<0.05)。添加迷迭香提取物的各处理组TVB-N含量在冷藏4 d后显著低于空白对照组,而pH值在整个冷藏过程中均显著低于空白对照组(P<0.05)。在冷藏1 d后,添加0.09%迷迭香提取物的肉饼a*值与空白对照组相比显著上升,而在冷藏7、10 d后,添加迷迭香提取物的各处理组a*值均显著升高(P<0.05)。此外,添加迷迭香提取物的各处理组咀嚼性在冷藏4、7、10 d后显著升高,硬度在冷藏1、10 d后显著升高,迷迭香提取物添加量为0.09%的肉饼在冷藏4、7 d后硬度也显著提升(P<0.05)。可见,迷迭香提取物能有效抑制真空包装熟猪肉饼的脂肪氧化及微生物生长,并且能在一定程度上改善其颜色和质构。  相似文献

研究不同剂量迷迭香提取物对4 ℃冷藏调理猪肉饼抗脂肪氧化、抑菌能力及品质特性的影响。将0.03%、0.06%和0.09%的迷迭香提取物分别添加到调理猪肉饼中,测定其在10 d冷藏过程中硫代巴比妥酸值、菌落总数、pH值、颜色(L*、a*、b*值)、出品率和感官指标的变化。结果表明:与对照组相比,添加迷迭香提取物的各处理组具有显著的抗脂肪氧化效果和更高的出品率(P<0.05),效果与添加0.02%二丁基羟基甲苯相当。迷迭香提取物添加量为0.06%和0.09%的处理组在冷藏7 d后表现出显著的抑菌能力(P<0.05),这两组的pH值在冷藏期间显著低于对照组(P<0.05)。迷迭香提取物添加量为0.06%的猪肉饼在冷藏4 d后红度值(a*)与对照组相比显著升高(P<0.05),迷迭香提取物添加量为0.09%的猪肉饼在10 d冷藏过程中亮度值(L*)显著低于对照组(P<0.05),而这两组猪肉饼的黄度值(b*)在冷藏期间均显著高于对照组(P<0.05)。此外,猪肉饼的香气、质地和总体可接受程度均没有随迷迭香提取物添加量的增加而发生显著变化(P>0.05)。可见,迷迭香提取物在调理猪肉饼中具有较好的抗氧化和抑菌效果,并且在一定程度上能改善肉饼颜色,而对肉饼的感官品质不会造成不良影响。  相似文献

Fresh pork sausage patties containing carrageenan, without or with soy protein and an antioxidant were packaged with or without vacuum. They were evaluated for sensory properties, visual color, thiobarbituric acid reactive substances (TBARS), and Hunter color ‘L’, ‘a’, ‘b’ values at 4-wk intervals during 16 wk frozen storage. Rosemary extract was as effective as butylated hydroxytoluene (BHT)/propyl gallate (PG)/citric acid (CA) in antioxidant properties, but patties with BHT/PG/CA showed less surface discoloration (P < 0.05). In fat-control (FC) products, antioxidants combined with vacuum packaging provided optimum protection against rancidity. With vacuum packaging (VP), reduced-fat products maintained acceptable quality (TBARS and sensory properties) during 16 wks frozen storage.  相似文献

Functional and sensory properties of raw and cooked pork patties with added irradiated freeze-dried green tea leaf extract powder were studied. Components of green tea were extracted by 70% ethanol, and the extract was irradiated to obtain a bright color. The irradiated green tea extract was freeze-dried and the powdered sample (0.1%) was added to the pork patties (Trt C). Pork patties without any ingredient (Trt A) and with nonirradiated, freeze-dried green tea extract powder (Trt B) were also prepared for comparison. Lipid oxidation, radical scavenging effect, color, and sensory properties of pork patties with treatments were analyzed at 5-day intervals for 15 days with storage at 4?°C. The lipid oxidation had a lower (P<0.05) and radical scavenging effect was greater (P<0.05) in the raw and cooked pork patties with added Trt B and Trt C, than those of Trt A (control). The pork patties with Trt B and Trt C had a higher Hunter color a*-value and less cooking loss than that of Trt A. Sensory panelists preferred the odor of the raw pork patties and color of the cooked pork patties of Trt C (P<0.05). Generally, no significant difference between Trt B and Trt C was found. Therefore, irradiated, freeze-dried green tea extract powder can be used for producing functionally-improved meat products.  相似文献

基于蘑菇中含有麦角硫因等天然抗氧化物质,选取金针菇作为原料,利用醇提取法获得富含麦角硫因的金针菇提取物,将其添加到猪肉糜中(6 g/kg),冷冻贮藏12周后,通过测定脂肪氧化、蛋白质氧化、核苷酸和感官评价等指标来评价金针菇提取物对冷冻肉糜品质的影响。结果表明,金针菇提取物的麦角硫因含量为15.29 mg/g。在冷冻贮藏的第0、1、4、8和12周,添加金针菇提取物显著降低了肉糜的pH(P<0.05);显著减缓了猪肉糜的脂肪氧化和蛋白氧化(P<0.05);显著提高了冷冻肉糜的IMP和AMP含量(P<0.05),表明添加金针菇提取物可以抑制氧化,可在一定程度上增加鲜味物质的含量,并抑制苦味物质的生成;感官评价结果表明,添加金针菇提取物可以在一定程度上提高冷冻肉糜的风味、滋味、嫩度及整体可接受性。以上结果表明,添加富含麦角硫因的金针菇提取物可以有效延缓猪肉糜冷冻过程中的氧化变质,增强猪肉糜的鲜味,提高猪肉糜的感官品质。因此,它可作为天然抗氧化剂应用于肉类保藏。  相似文献

BACKGROUND: There is great interest in the use of naturally occurring antioxidants to delay oxidation in meat products. The effect of rosemary extract (RE), green tea extract (TE), tocopherol, trolox, ascorbic acid (AA) and ascorbyl palmitate (AP), at levels of 50–200 ppm of antioxidant components, on colour (CIE L*a*b*), lipid (TBARS) and protein oxidation (thiol groups) in fresh, frozen and cooked pork patties during illuminated chill storage was investigated. Individual components of RE and TE were also tested. RESULTS: RE, TE, AP, tocopherol and trolox equally inhibited lipid oxidation in fresh and frozen patties, whereas for cooked patties RE was most effective. AA stimulated lipid oxidation. No dose effect in the range of 50–200 ppm was found for fresh and frozen patties, whereas for cooked patties higher doses of RE and TE more efficiently prevented lipid oxidation. Protein oxidation was hardly influenced by antioxidant treatment. Colour stability decreased as follows: tocopherol, AA and AP > RE and TE > trolox. Antioxidant properties of the extracts and their major antioxidant components were comparable. CONCLUSION: The relative effect of the antioxidants depends on the oxidation parameter assessed, the applied dose and the hydrophilic/lipophilic character. Chemical, physical, and sensory effects of 0.4% sodium tripolyphosphate (STPP), tetrasodium pyrophosphate (TSPP) and three commercial phosphate blends were studied in frozen beef patties over a 90-day storage period at ?20°C. Addition of phosphates significantly (P<0.05) increased pH, soluble orthophosphates, Hunter color a values, cook yields and overall acceptability scores. Phosphate addition did not affect (p>0.05) proximate analysis, texture, and flavor scores. Hunter L (lightness) and b (yellowness) values were also unaffected by phosphates. Overall quality of patties, as measured by thiobarbituric acid (TBA) numbers and cooking yields, was improved by all phosphates. There were indications that phosphates interfered with the distillation TBA test.  相似文献

The comparative antioxidant activity of added tea catechins on susceptibility of cooked and overwrapped red meat (beef and pork), poultry (chicken, duck and ostrich) and fish (whiting and mackerel) to lipid oxidation was investigated. Fresh meats, poultry and fish, purchased from a local market, were trimmed to remove bones, skin and visible fat and minced through a 4-mm plate. The minced muscle from each species was treated with either 1% NaCl (S), 300 mg tea catechins kg−1 minced muscle (TC) or 1% NaCl plus 300 mg tea catechins kg−1 minced muscle (TCS). Control minced muscle samples (C) contained neither NaCl nor tea catechins. Patties (50 g), prepared from treated and untreated minced muscle, were cooked until the core temperature reached 75°C, cooled down to room temperature and held in a refrigerated (4°C) and illuminated (616 lux) display cabinet for 10 days. Oxidative stability (TBARS) was measured at 3-day intervals. The susceptibility of cooked patties to lipid oxidation was closely related to lipid content, concentration of unsaturated fatty acids and presence of iron in different species. Addition of NaCl to raw minced muscle significantly (P<0.05) promoted lipid oxidation for cooked patties regardless of species sources. Tea catechins added at a level of 300 mg kg−1 minced muscle significantly (P<0.01) inhibited the pro-oxidation caused by NaCl and controlled lipid oxidation for all cooked muscle patties examined. Tea catechins at concentrations greater than 300 mg kg−1 were necessary to reduce oxidation for mackerel patties containing high levels of lipids and unsaturated fatty acids. The high affinity of tea catechins for the lipid bilayers of muscle and the radical scavenging abilities of tea catechins may be possible mechanisms to explain the oxidative stability in cooked muscle foods.  相似文献

This study investigated the efficacy of licorice extract (LE) to curtail lipid oxidation and protect sensory attributes of ground pork during refrigerated and frozen storage. Pork patties (20% fat) were formulated with 0%, 0.02%, 0.05%, and 0.1% (meat basis) LE or rosemary extract (RE) as comparison or 0.01% (fat basis) BHA with 0 or 1.5% NaCl. Raw and precooked (75 °C) patties were packaged in polyvinylchloride overwrapped trays and stored at 2 °C up to 7 and 14 d, respectively, or at –20 °C up to 6 mo. Lipid oxidation (thiobarbituric acid‐reactive substances [TBARS]) and sensory attributes of stored patty samples were evaluated, radical scavenging activity of the LE was measured, and the active phenolic compounds were identified. Cooking yield (<85%) was similar among antioxidant treatments, and lipid oxidation was minimal in refrigerated or frozen raw samples. However, TBARS values in refrigerated precooked control patties (0.22 mg/kg) rose to 9.3 to 9.4 mg/kg after 14 d, compared to 3.4 to 4.4 and 4.4 to 6.9 mg/kg in patties treated with 0.1% LE and RE, respectively. In frozen precooked samples, TBARS (0.22 mg/kg) increased to 1.3 mg/kg (P < 0.05) in control patties after 6 mo and had no significant change in patties treated with 0.1% LE or 0.01% butylated hydroxyanisol. Sensory panel evaluation confirmed strong inhibition of rancidity production by LE, corroborating its remarkable antiradical activity due to the presence of multiple phenolics. The results indicate that licorice has great potential as a natural antioxidative additive to extend the shelf‐life of precooked pork.  相似文献

研究石榴皮提取物的抗氧化性能及不同质量分数(0.01%、0.05%和0.10%)石榴皮提取物的添加对生猪肉 饼pH值、蒸煮损失、色差和冷藏过程中脂肪及蛋白氧化的影响。结果表明:石榴皮提取物富含多酚和黄酮,其总 抗氧化能力、自由基清除能力、Fe2+螯合能力随石榴皮提取物质量分数增大而增强;石榴皮提取物的添加对生猪肉饼的 pH值和蒸煮损失率无显著影响,但对生猪肉饼的亮度值、红度值有一定的负面作用;石榴皮提取物能有效抑制生猪肉 饼冷藏过程中氢过氧化物、丙二醛及蛋白羰基生成,且质量分数越高抑制效果越好,整体效果优于丁基羟基茴香醚。  相似文献

Effects of adding 1% rosemary extract were determined on the microbial growth and quality characteristics of ground chicken breast patties treated with in-package dielectric-barrier-discharge (DBD) cold plasma (CP). Chicken patties were CP-treated at 70 kV for 180 s. Total plate counts (TPC), pH, color, and lipid oxidation (LPO) were measured at time 0 and day 5 of storage. ANOVA showed that there were no three-way (rosemary*CP*storage) interactions and no rosemary*CP interaction (P > 0.05) regardless of measured variable, indicating that rosemary extract has the same effects on CP treated patties as on non-CP treated samples regardless of storage. Adding rosemary extract resulted in reduced microbial growth, LPO, and L* values and increased pH, a*, and b* values in both CP treated and non-CP treated patties. In conclusion, rosemary is a promising additive for maintaining microbial quality and controlling LPO in CP-processed meat.  相似文献

ABSTRACT:  The effect of grape seed extract (GS; 0.01% and 0.02%), oleoresin rosemary (OR; 0.02%) and water-soluble oregano extract (WS; 0.02%) on oxidative and color stability of cooked beef and pork patties stored at 4 °C for 8 d was determined. Fresh beef or pork lean and trim were ground, mixed (30% fat), and divided into 5 portions. Antioxidants mixed with salt (2%) were added. Patties were formed, cooked to an internal temperature of 71 °C, overwrapped in PVC, and stored at 4 °C. Lipid oxidation, assessed using thiobarbituric acid reactive substances (TBARS) and sensory evaluation, instrumental and visual color, and pH were determined after 0, 2, 4, 6, and 8 d. Based on TBARS values and off-odors associated with lipid oxidation such as rancidity, wet cardboard (for beef patties), and grassy (for beef and pork patties), grape seed extract resulted in the best antioxidant activity in both meat species. It did not change instrumental color measures of redness, yellowness, or color intensity, and appeared to reduce visual green discoloration in beef patties. The higher GS concentration (0.02%) exhibited more antioxidant activity than the lower concentration (0.01%). Therefore, grape seed extract at 0.02% has the potential to reduce oxidative rancidity and improve shelf life of refrigerated cooked beef and pork patties.  相似文献

Sensory and physical characteristics of beef patties containing 20% fat, 8% fat, or 8% fat plus 20% soy protein isolate (SI), soy flour (SF), soy concentrate (SC), or a mixture (MIX) of carrageenan (0.5%), starch (0.5%), and phosphate (0.2%) were compared after 0, 4, 8, and 12 wks storage at - 18°C. MIX had higher Hunter a* values than other treatments. Cook loss was lowest for MIX and highest for all beef patties. Soy extenders decreased beefy flavor and increased off-flavor scores. Time in frozen storage increased off-flavor, rubbery texture, and TBA value, and decreased red color and Hunter b* value of ground beef patties. Quality may be lowered in frozen-stored high fat, or low-fat-soy extended beef patties.  相似文献

The effect of supplementation of beef cattle diets with tea catechins (TC) (1000mg/animal/day) and rosemary extract (RE) (1000mg/animal/day), for 103 days preceding slaughter, on the oxidative stability of M. longissimus dorsi (LD) steaks was evaluated. Dietary supplementation with TC and RE did not increase plasma total antioxidant status (TAS), LD α-tocopherol concentrations or pH. In LD steaks stored aerobically or in modified atmosphere packs (80% O(2):20% CO(2)) (MAP) for up to 8 days at 4°C, surface redness (CIE 'a' redness value) and lipid stability (TBARS, mg MDA (malondialdehyde)/kg muscle) were not significantly improved as a result of supplementation with TC and RE. Similarly no improvement in the sensory properties and lipid stability of cooked LD slices, stored aerobically or in 30% CO(2):70% N(2) for up to 11 days at 4°C, was observed. An in vitro fermentation study demonstrated that TC and RE were not fermented to any great extent under simulated rumen conditions. Direct addition of TC (1000ppm) and RE (1000ppm) significantly (P<0.05) improved the colour and lipid stability in LD patties stored in 80% O(2):20% CO(2) for up to 8 days at 4°C, thus, demonstrating the antioxidant potential of TC and RE supplements employed in the present study.  相似文献

The interactions of three natural antioxidants, tea catechins, carnosine, and α-tocopherol and their effect on color, lipid stability, Metmyoglobin percentage and Metmyoglobin-reducing activity of raw beef patties were evaluated. Increase in the content of tea catechins in the mixture lead to higher lipid stability and lower Metmyoglobin percentage. Carnosine had a notable effect on improving Metmyoglobin-reducing activity and producing better color stability at a low concentration. α-Tocopherol and tea catechins enhanced lipid stability. Interaction between tea catechins, carnosine, and α-tocopherol improved lipid stability and color stability of raw beef patties. The optimal values of tea catechins, carnosine, and α-tocopherol in the mixture were 3–19%, 78–94%, and 0–12%, respectively.  相似文献

为研究茶多酚对香肠发色效果的影响,将0.015%的茶多酚添加至香肠中,对香肠颜色感官评分、发色率、色泽亮度L*、红度a*、黄度b*和香肠亚硝酸钠残留量进行测定,并分析以上参数之间相关性。实验表明,添加0.015%的茶多酚处理样,香肠的颜色感官评分、发色率、色泽亮度L*、红度a*的变化上都优于对照样,且呈现出更少的亚硝酸盐残留量,特别在发酵贮藏末期(35d),较对照样减少亚硝酸盐残留量高达28%。因此可以认为茶多酚对香肠有良好的发色效果。  相似文献

In this study protein-containing by-products of deoiling processes rich in phenolics were applied to meat to be used as potential food ingredients in developing meat products with antioxidant effect. The effect of rapeseed meal (Brassica rapa L.), camelina meal (Camelina sativa), soy meal and soy flour (from soybean, Glycene max L.), in inhibiting oxidation of lipids and proteins was tested in cooked pork meat patties. A commercial CO2 extract from rosemary (Rosmarinus officinalis) was used as a reference material alone and in combination with the other plant materials. The cooked pork meat with added plant materials was oxidized for 10 days at 5 °C under light. The oxidation was followed by measuring the formation of hexanal, pentanal and propanal by headspace gas chromatography and the formation of protein carbonyls by converting them to 2,4-dinitrophenylhydrazones (DNPH). Rapeseed meal (0.5 and 0.7 g/100 g meat) and camelina meal (0.7 g/100 g meat) as such and their combination (addition of 0.5 g/100 g) with rosemary extract (0.04 g/100 g) were effective antioxidants toward both protein and lipid oxidation while soy meal and flour were effective only in combination with rosemary extract.  相似文献
