海藻酸钠分子质量对低脂乳化肠凝胶特性的影响 总被引:1,自引:1,他引:1
以低脂(10%)乳化肠为研究对象,在0%~0.75%添加水平下,研究3 种分子质量(2660、3890、4640 kDa)海藻酸钠(sodium alginate,SA)对其凝胶特性(持水与质构)的影响及机理。结果表明:3 种分子质量的SA均显著改善了低脂乳化肠的持水性(P<0.05),且SA分子质量越大,凝胶持水性越强;但对低脂乳化肠质构的改善作用不显著(P>0.05);随着SA分子质量的增大,静电排斥和空间位阻作用增强,降低了肉蛋白的表面疏水性,形成了具有更大孔隙的微结构,可截留更多的水分,进而显著改善了凝胶的持水性。 相似文献

目的 构建JJJ1突变株以提高酿酒酵母在发酵过程中的乙酸耐受性,提高发酵效率。方法 本研究采用CRISPR-Cas9基因编辑技术构建酿酒酵母JJJ1Δ突变株,检测突变对酿酒酵母菌株的乙酸耐受性影响,基于转录组学分析突变株耐受乙酸的分子机制。结果 在含有5 g/L乙酸的液体培养基中,酿酒酵母JJJ1Δ存活率是野生型菌株的4.44倍,发酵72 h后酿酒酵母突变株JJJ1Δ的细胞生物量是野生型菌株的1.15倍,酿酒酵母JJJ1Δ的生长延滞期比野生型菌株缩短了30 h;转录组学研究表明,敲除JJJ1基因增强酿酒酵母的代谢、生物调控、膜流动性以及转运活性和电子转移活性,减少酿酒酵母细胞生理过程、细胞连接和拟核功能以及细胞结合功能。结论 敲除JJJ1基因的酿酒酵母突变株通过提高能量代谢和氨基酸合成,降低核糖体生物发生减少细胞生理活动,增强酿酒酵母菌株乙酸耐受性。 相似文献

研究丙烯酰胺(acrylamide,AA)和苯并芘(Benzo(a)pyrene,BaP)单独和联合暴露对模式生物秀丽隐杆线虫(Caenorhabditis elegans,C.elegans)的生殖腺细胞凋亡的影响。将线虫分别暴露于不同剂量水平的AA和BaP中,检测其对线虫生殖腺细胞凋亡的影响,结果显示,AA和BaP诱发生殖腺细胞凋亡具有明显的剂量效应,2.0 mg/L AA和0.001 mg/L BaP暴露12小时后,可诱发细胞凋亡明显增加(p<0.05),0.02 mg/L AA或0.000 2 mg/L BaP暴露36 h以内对细胞凋亡均没有影响(p>0.05),但0.02 mg/L AA和0.000 2 mg/L BaP共同处理12小时后即可诱发线虫生殖腺细胞凋亡明显增加(p<0.05),并导致后代数量的显著减少(p<0.05)。结果表明AA和BaP诱发线虫生殖腺细胞凋亡具有协同作用。 相似文献

The expression of the multi-functional cellulase gene mfc in Coprinopsis cinerea is modulated using glyceraldehyde-3-phosphate dehydrogenase (gpd) promoter fragments from Agaricus bisporus, Flammulina velutipes, and Lentinula edodes. In submerged fermentation, with banana peels as the growth substrate, highest activities of endo-β-1,4-glucanase (0.48 U/ml), total cellulase (0.26 U/ml) and endo-β-1,4-xylanase (38.10 U/ml) were noted in the culture liquid Cabm44, which uses a 275 bp gpd fragment from A. bisporus. The lignocellulolytic enzymatic activities were increased nearly twofold in comparison with the wild-type strain. 相似文献

Technology-enhanced learning environments (TELEs) deliver instructional content and provide an array of scaffolding features designed to support independent student learning. TELEs also support teacher efforts to guide student inquiry within these sometimes complex environments. Self-efficacy, defined by Bandura [Bandura, A. (1994). Self-efficacy. In V. S. Ramachaudran (Ed.), Encyclopedia of human behavior (Vol. 4, pp. 71–81). New York: Academic Press] as a person’s beliefs about his capabilities is also known to influence student academic performance in a learning environment. This paper discusses the potential importance of designing scaffolds in TELEs that intentionally promote academic self-efficacy. We advocate for designing asynchronous Audio/Visual tools into TELEs to promote student self-efficacy and ultimately performance. 相似文献
