The most commonly used methods to generate microbial inactivation curves are based on the assumptions that microbial mortality follows first order kinetics and that the temperature effect on the 'D value' or exponential rate constant is determined by the log linear model or the Arrhenius equation, respectively. However, many bacterial cells and spores follow the Weibull-Log Logistic (WeLL) model and software to simulate pasteurization and sterilization processes using this model has been available for some years as free downloadable programs written in MS Excel. According to this model, an organism's heat resistance parameters are T(c), a marker of the temperature level where the inactivation accelerates, k, the steepness of the Weibullian rate parameter in the lethal regime where T>T(c) and n, a measure of the semi logarithmic isothermal survival curve's concavity and its direction. Because the traditional first order kinetics is just a special case of the Weibullian model with n=1.0, the software is applicable to both linear and non-linear inactivation. Recently, Wolfram Research Inc., the maker of Mathematica, has made its interactive program Mathematica Player free downloadable software. A user, who need not have a copy of Mathematica, can view and download any of the numerous graphic demonstrations from the Wolfram Demonstrations Project web site, and continuously manipulate their dynamic parameters with sliders on the screen. One set of five such demonstrations allows the user to generate and adjust the temperature profile of heat processes, modify the targeted organism's Weibullian survival parameters and immediately observe the corresponding semi-logarithmic survival curve and the equivalent time at a reference temperature, which can also be manipulated by a slider. This free program enables food microbiologists, technologists and engineers to examine a large number of heat processing options and assess their potential safety implications. It can also serve as a training and educational tool in industry and academia.  相似文献

Tocotrienols are members of the vitamin E family that provide many nutritional benefits. Developing tocotrienol-fortified functional foods introduces vitamin E into consumers diets without changing their food habits. The purpose of this study was to compare the stability of tocotrienols in bulk form and six food matrices at a fixed dose (40 mg kg−1) under accelerated and conventional storage conditions. The delta- and gamma-tocotrienol content was measured using HPLC, and the sensory attributes were evaluated using triangle and hedonic tests. Tocotrienol in bulk powder was less stable under stressed conditions than in bulk oil, with the powders having approximately 40% and 80% reduction in δ- and γ- after storage and bulk oil with no significant degradation. HPLC analysis demonstrated that tocotrienol content remained unchanged in dry mix lemonade, yogurt, raw and UHT milk, and margarine over time; however, complete degradation of γ- and partial degradation (up to 50%) of δ-tocotrienol was observed in bread during ambient and stressed storage conditions. A significant decrease in the δ-tocotrienol relative concentration was also observed in HTST processed milk samples. Tocotrienol addition was not perceived, and no significant difference in the product attributes and overall liking was reported in the discrimination sensory testing.  相似文献

Over the last 80 years, malting and brewing has evolved through increased scientific understanding, driven by numerous factors including efficiency improvement, cost reduction, quality enhancement, risk minimisation, brand marketing and image enhancement. The aim of this work was to review the historical trends in global brewing research in order to identify current opportunities and emerging trends, as well as uncover future key drivers. A bibliometric analysis was performed with English language peer reviewed literature from the Scopus database together with mapping using the VOSviewer clustering software. The bibliometric results were structured to identify which affiliations, authors, and journals have been involved in brewing research, as well as the average number of citations per paper. The bibliometric mapping yielded ‘research term maps’, where the words occurring more frequently in the research papers were grouped in coloured clusters by area of interest, and their relationships indicated. The year maps revealed which average terms tended to emerge in chronological order. The estimated average citation number per paper was about nine. Countries, including Spain, Czech Republic, Italy and Belgium displayed higher average citation scores than the world average. In the period 1940-79, brewing publications were mainly process oriented whereas between 2008-18, there was a shift in focus to the consumer (health and social responsibility) and to environmental sustainability. © 2020 The Institute of Brewing & Distilling  相似文献

In this paper, it is shown that the performances of a class of high-gain practical observers can be improved by estimating the time derivatives of the output up to an order that is greater than the dimension of the system, which is assumed to be in observability form and, possibly, time-varying. Such an improvement is achieved without increasing the gain of the observers, thus allowing their use in a wide variety of control and identification applications.   相似文献

Fluorescent molecular rotors (MRs) are compounds whose emission is modulated by segmental mobility; photoexcitation generates a locally excited (LE), planar state that can relax either by radiative decay (emission of a photon) or by formation of a twisted intramolecular charge transfer (TICT) state that can relax nonradiatively due to internal rotation. If the local environment around the probe allows for rapid internal rotation in the excited state, fast non-radiative decay can either effectively quench the fluorescence or generate a second, red-shifted emission band. Conversely, any environmental restriction to twisting in the excited state due to free volume, crowding or viscosity, slows rotational relaxation and promotes fluorescence emission from the LE state. The environmental sensitivity of MRs has been exploited extensively in biological applications to sense microviscosity in biofluids, the stability and physical state of biomembranes, and conformational changes in macromolecules. The application of MRs in food research, however, has been only marginally explored. In this review, we summarize the main characteristics of fluorescent MRs, their current applications in biological research and their current and potential applications as sensors of physical properties in food science and engineering.  相似文献

In this paper the performances of an electronic nose based on metalloporphyrin‐coated quartz microbalance sensors and of an experienced panel of seven human assessors in the evaluation of gases derived from degradation reactions in tomatoes are presented and discussed. The performances are measured in terms of the capability of both systems to distinguish between samples of different quality coming from conventional and organic production systems. The study deals with the application of pattern recognition techniques based on either multivariate statistical methods (PCA, GPA) or artificial neural networks using a self‐organising map (SOM). The response pattern of the sensor array and the sensory data are analysed and compared using these methods. The aim of this study was to analyze the expression of peroxisome proliferator-activated receptor γ (PPARγ) and retinoid X receptor α (RxRα), a binding heterodimer playing a pivotal role in the successful trophoblast invasion, in the placental tissue of preeclamptic patients. Furthermore, we aimed to characterize a possible interaction between PPARγ and H3K4me3 (trimethylated lysine 4 of the histone H3), respectively H3K9ac (acetylated lysine 9 of the histone H3), to illuminate the role of histone modifications in a defective trophoblast invasion in preeclampsia (PE). Therefore, the expression of PPARγ and RxRα was analyzed in 26 PE and 25 control placentas by immunohistochemical peroxidase staining, as well as the co-expression with H3K4me3 and H3K9ac by double immunofluorescence staining. Further, the effect of a specific PPARγ-agonist (Ciglitazone) and PPARγ-antagonist (T0070907) on the histone modifications H3K9ac and H3K4me3 was analyzed in vitro. In PE placentas, we found a reduced expression of PPARγ and RxRα and a reduced co-expression with H3K4me3 and H3K9ac in the extravillous trophoblast (EVT). Furthermore, with the PPARγ-antagonist treated human villous trophoblast (HVT) cells and primary isolated EVT cells showed higher levels of the histone modification proteins whereas treatment with the PPARγ-agonist reduced respective histone modifications. Our results show that the stimulation of PPARγ-activity leads to a reduction of H3K4me3 and H3K9ac in trophoblast cells, but paradoxically decreases the nuclear PPARγ expression. As the importance of PPARγ, being involved in a successful trophoblast invasion has already been investigated, our results reveal a pathophysiologic connection between PPARγ and the epigenetic modulation via H3K4me3 and H3K9ac in PE.  相似文献
