Microgreens are new and emerging products, which are young seedlings of vegetables and herbs. A recent study showed that microgreens contain higher nutrients compared to their mature counterparts. However, they typically have a short shelf life (1–2 days) at ambient temperature. The objective of this study was to optimize postharvest handling conditions to reduce the quality loss and extend the shelf life of daikon radish (Raphanus sativus L. var. longipinnatus) microgreens. Storage temperature, packaging film, and wash treatment were investigated. Changes in headspace composition, quality index, chlorophyll concentration, tissue electrolyte leakage, and aerobic mesophilic bacteria (AMB) and yeast & mold (Y&M) counts were monitored periodically during storage. Results indicated that (1) storage temperature significantly (P < 0.05) affected package atmosphere, product quality and shelf life. One degree Celsius was the optimal temperature for storage of radish microgreens with no chilling injury observed; (2) film oxygen transmission rate (OTR) significantly (P < 0.05) affected O2 and CO2 composition, but OTR did not significantly affect quality attributes during 28 days of storage at 1 °C; (3) Chlorine wash treatment (100 mg/L) significantly reduced initial microbial populations by 0.5 log cfu g−1, including AMB and Y& M. Use of Carbon Monoxide Packaging for Improving the Shelf Life of Pork   总被引:3,自引:0,他引:3  
ABSTRACT: Effects of carbon monoxide in modified-atmosphere packaging (MAP-CO) for pork were investigated. Eighty pork loins (40 injected, 40 uninjected) were used to evaluate color, microbial growth, rancidity, purge, and sensory quality of pork chops in 4 packaging environments (aerobic-overwrap, vacuum, MAP without CO, and MAP-CO). Treatments were evaluated during 36 d of refrigerated storage. Overall Hunter a values were significantly ( P < 0.001) greater in MAP-CO (11.25) than aerobic (6.93) packages. Sensory color values (100 point scale) were also greater for chops in MAP-CO (85.91) than aerobic (62.47) packages. However, MAP-CO did not reduce purge loss. Results showed that CO significantly improved color stability and sensory panel scores for both injected and noninjected pork chops.  相似文献

We investigated the effects of ice storage in a modified atmosphere on levels of glutathione (GSH) and its related enzyme activities, the metmyoglobin to total myoglobin ratio (metMb%), and the K value (a freshness index) of yellowtail fish muscle. GSH in ordinary muscle (fast skeletal muscle) as well as in dark muscle (slow skeletal muscle) stored in air decreased. GSH in those muscles was almost unchanged during storage when packaged with an oxygen absorber or with an oxygen absorber-CO(2) generator. Glutathione disulfide in each type of packaging remained at low concentrations during storage. The GSH peroxidase activities of ordinary muscle and of dark muscle after 7 d of storage in air were lower than when packaged with the oxygen absorber or with the oxygen absorber-CO(2) generator. The GSH reductase (GR) activities of ordinary muscle at the 4th and 7th day of storage when packaged with the oxygen absorber showed a tendency to be lower than when stored in air. The GR activity of dark muscle in each type of packaging method was unchanged during storage. The packaging method did not influence the K values of either the ordinary muscle or the dark muscle during storage. The metMb% of dark muscle when packaged with the oxygen absorber was lower than in the other types of packaging during storage. Therefore, packaging with the oxygen absorber is an effective method to prevent the loss of GSH in fish meat as well as to reduce the discoloration during storage. PRACTICAL APPLICATION: This study examined whether modified atmosphere packaging preserves the level of GSH, which is unstable to oxidative stress, in fish muscle. The use of an oxygen absorber for packaging can allow us to take in a sufficient amount of the bioactive compound from fish meat after storage as well as fresh fish.  相似文献

Near-infrared reflectance (NIR) spectra was recorded of 105 samples of cod mince prepared from chill stored thawed cod fillets of varying quality in modified atmosphere packaging (MAP). Traditional chemical, physical, microbiological and sensory quality methods developed for assessing fresh fish products were determined on the same cod fillets. The purpose was to evaluate the potential of NIR spectroscopy for estimating (i) frozen storage temperature, (ii) frozen storage period and (iii) chill storage period of thawed-chilled MAP Barents Sea cod fillets. Furthermore, the potential for measuring of selected quality attributes as drip loss, water holding capacity and content of dimethylamine by NIR was evaluated. The results of the investigation were presented using multivariate modelling methods such as partial least-squares regression (PLSR) and discriminant partial least-squares regression (DPLSR). Systematic differences in the NIR measurements on minced cod fillets were primarily due to the chill storage duration (days at 2°C) on thawed-chilled MAP fillets. PLSR models based on wavelengths selected by a new Jack-knife method resulted in a correlation coefficient of 0.90 between measured and predicted duration of chill storage period (days at 2°C). The root-mean-square error of cross-validation (RMSECV) was 3.4 d at 2°C. NIR measurements provided promising results for evaluation of freshness for thawed-chilled MAP cod fillets completing the traditionally quality methods. However, it is necessary to study the effect of e.g. sample preparation, season, fishing ground and cod size together with more sophisticated pre-treatments of NIR spectra before the NIR method can be integrated as a method for evaluation of thawed-chilled MAP cod fillets.  相似文献

研究了气调包装技术对草莓贮藏保鲜的效果。结果表明,草莓最佳气调贮藏的条件为2.5%O2 16%CO2,它能够把草莓的货架寿命延长4~6d;利用LDPE和PVC复合膜明显优于LDPE膜和PVC膜。气调贮藏效果表明,MAP能明显抑制草莓的呼吸作用和水分的蒸腾作用,抑制糖、酸和花色苷等物质的降解。最后研究了包装内气体组分的动态变化。  相似文献

The combined effects of injection, packaging (modified atmosphere packaging [MAP] with 70% O2/ 30% CO2 and vacuum packaging [VP]), storage temperature (‐1 °C and +4 °C), and storage time on the color, microbial and oxidative stability of beef and bison longissimus lumborum (LL) steaks were investigated. Beef LL steaks in MAP retained their bright red color longer than bison steaks. Bison steaks developed higher 2‐Thiobarbituric acid reactive substances (TBARS) during storage, and this might have influenced the resulting rapid loss of redness from the bloomed meat. Storage at ‐1 °C in MAP provided greater color stability and a longer storage life for both meat species studied. Injection of salt/phosphate had a beneficial effect on the color stability of steaks during retail display; however, this positive effect was more pronounced for bison steaks compared with those of beef. Steaks stored overnight under MAP before retail display maintained the highest a* values for up to 5 d compared with those stored under vacuum. MAP‐OV steaks generally maintained the highest OMB content for up to 5 d during retail display compared with those stored under vacuum. Nevertheless, OMB levels were significantly (P < 0.05) lower in bison steaks compared with those of beef irrespective of packaging treatments. Injected steaks and those stored at ‐1 °C had significantly (P < 0.05) higher OMB levels compared with non‐injected counterparts and those stored at +4 °C, respectively. MAP is an excellent option for short‐term storage due to its positive effects on meat color, but for longer storage, VP may be necessary. Storing meat under vacuum and then placing it under MAP just before retail display might be another option to increase shelf life.  相似文献

In this work the influence of different packaging strategies on the shelf life of ready to use peeled shrimps was investigated. First, the effectiveness of the coating (Coat) and the active coating loaded with different concentrations of thymol (Coat-500, Coat-1000, and Coat-1500) on the quality loss of the investigated food product packaged in air was addressed; afterwards, the thymol concentration that had shown the best performance was used in combination with MAP (5% O2; 95% CO2). Microbial cell load of main spoilage microorganisms, pH and sensorial quality were monitored during the refrigerated storage. Results of the first step suggested that the sole coating did not affect the microbial growth. A slight antimicrobial effect was obtained when the coating was loaded with thymol and a concentration dependence was also observed. Moreover, the active coating was effective in minimizing the sensory quality loss of the investigated product, it was particularly true at the lowest thymol concentration. In the second step, the thymol concentration (1000 ppm) that showed the strike balance between microbial and sensorial quality was chosen in combination with MAP. As expected, MAP significantly affected the growth of the mesophilic bacteria. In particular, a cell load reduction of about 2 log cycle for the samples under MAP respect to that in air was obtained. Moreover, the MAP packaging inhibited the growth of the Pseudomonas spp. and hydrogen sulphide-producing bacteria. The MAP alone was not able to improve the shelf life of the uncoated samples. In fact, no significant difference between the control samples packaged in air and MAP was observed. Whilst, the use of coating under MAP condition prolonged the shelf life of about 6 days with respect to the same samples packaged in air. Moreover, when the MAP was used in combination with thymol, a further shelf life prolongation with respect to the samples packaged in air was observed. In particular, a shelf life of about 14 days for the active coating under MAP compared to the same samples in air (5 days) was obtained.  相似文献

Freshness of common mushrooms was related to the internal atmosphere composition during modified atmosphere packaging (MAP) experiments at 20 °C and 80% RH with stretchable polyvinylchloride (PVC) film, paper, and the same paper coated with a wheat gluten solution. MAP with the stretchable film led to a detrimental deterioration of mushrooms after only one day of storage: dark brown blotches appeared and almost 30% of mushrooms exhibited open veil. This was due to the formation of condensed water at the inner surface of the material and onto mushrooms combined to a high O2 partial pressure (16 kPa) in the headspace. Wheat gluten (WG) coated paper was the most effective to improve the shelf-life of mushrooms since it allowed the preservation of a fair colour, unbroken veils, and an acceptable texture during 3 days. This beneficial effect was attributed to the combination of a medium CO2 (9.5 kPa) and low O2 (2.5 kPa) partial pressure, without condensation. The main drawback of using WG-coated paper was its high water vapour permeability that led to an important weight loss (3.8 wt.% on day 3). However it did not affect the overall quality of mushrooms within the storage duration.

Industrial relevance

Even with the development of micro-perforated materials that provide the largest range of O2 and CO2 permeability values, several limitations are still encountered for synthetic MAP applications such as
– an insufficient perm-selectivity ratio that remains lower than 6 (value of 1 for micro-perforated material): generated atmosphere cannot reach both low O2 and low CO2 partial pressures and then are not adapted to CO2-sensitive fresh produces.
– unattractive water condensation at the inner surface of the packaging that might occur due to a low water vapour permeability, favouring the development of microorganisms.
– their non biodegradability.
Previous studies reported a high selectivity ratio and a high water vapour permeability for biodegradable materials made from crops proteins (wheat gluten, for instance) that appeared well adapted for fresh fruits and vegetables preservation. However, despite low cost and such interesting functional properties, these materials exhibited poor mechanical properties and cannot be used as packaging material. Combination with other materials, such as cellulosic fibres, appeared to one way to get round this major drawback without losing its biodegradability. Indeed paper exhibits an environmental-friendliness potential (recyclability, sustainability, biodegradability, and compostability) and a high versatility in food packaging.By choosing common mushrooms, known to be sensitive to high CO2 content, and a stretchable PVC film, commonly used to over-wrap mushrooms in tray (on European market), we demonstrate that this material was greatly less effective than a new biobased material (wheat gluten film coated onto paper) developed in collaboration with Smurfit Worldwide Research Center. This work confirms the interest in developing functionalised paper based packaging material with agro-based polymers adapted to the storage of fresh fruits and vegetable storage in ambient temperature.  相似文献
