Ripe carambolas are hard to store and transport, while freeze-dried ones are easy to store. However, its long production time leads to higher costs. This study shows that high hydrostatic pressure (HHP) treatment could shorten the freeze-drying time of carambola slices. After HHP treatment (25–250 MPa), the drying time of the fresh sample can be shortened by 33.3–44.4% and the distribution of water and pigment in tissues is much uniform. With the increment of the pressure, 2,2-diphenyl-1-picrylhydrazyl (DPPH) and hydroxyl radical scavenging rate are increased. At 250 MPa, the total phenolic content (TPC) increased from 11.34 to 13.36 mg GAE g1, and the total flavonoid content (TFC) of the control sample was increased from 10.77 to 12.73 mg RE g1. Compared with the untreated sample, HHP treatment can enhance the flavour and shorten the freeze-drying time. This work guides the application of HHP technology for drying food processing.  相似文献

The potential of high-pressure homogenization (HPH) to allow the production of a fermented potato protein isolate-based yogurt alternative with low and high oil concentration was investigated. The yogurt alternatives containing different oil concentrations (1.5%, 3%, and 10%) were obtained by inoculating the homogenized (0.1 MPa, 30 MPa, and 200 MPa) emulsions. HPH reduced emulsion particle size (all oil levels) compared to the non-homogenized samples (0.1 MPa). The overall emulsion whiteness index increased after HPH treatment while the highest value was obtained for 200 MPa 10% oil, 76.01 ± 0.50, compared to 65.33 ± 2.05 obtained for 0.1 MPa 10% oil. The creaming velocity was decreased by HPH, e.g., for 3% oil from 10.70 ± 0.11 (0.1 MPa) to 0.59 ± 0.04 after 200 MPa. Microscopic images of gels from HPH treated emulsions revealed smaller oil droplets and narrower component distribution. This study further highlights the possibility of HPH technology to produce plant-protein-based yogurt alternatives with different oil concentrations.Industrial relevanceIn recent years, the food industry has changed rapidly and has faced new consumer demands and global food trends. Consumers pay attention to food and its effect on their health, and the popularity of dairy alternatives with reduced-oil and, on the other hand, Greek-style yogurt analogs has grown. (Ultra) high-pressure homogenization ((U)HPH) is a continuously emerging technology that can potentially provide simultaneous homogenization and microbial inactivation and induce changes in solution physicochemical properties such as emulsion stabilization mainly by significantly reducing oil droplet size and improving interactions between emulsifiers and oil phase. By utilizing HPH, plant-based yogurt alternatives can be formed with a wide range of oil concentrations and similar texture profiles and water holding capacity, free of additional stabilizers and artificial emulsifiers. The results of this bottom-up approach study could be of great importance for considering the potential for scaling-up and future implementation of (U)HPH in the food industry to produce plant-based milk and yogurt alternatives with low and high oil content, having a clean label.  相似文献

The objective of this study was to investigate the effects of electron-beam generated X-ray irradiation on the postharvest storage quality and antioxidant capacity of Agaricus bisporus. All mushrooms were treated with different doses of electron-beam generated X-ray irradiation (0, 0.5, 1.0, 1.5 and 2.0 kGy) followed by stored at 4 °C for 21 days. Results showed that when compared with the control group at the end of storage, the firmness of Agaricus bisporus treated with 1.0 kGy was increased by 43.68%, the cell membrane permeability and malondialdehyde (MDA) content were decreased by 14.48% and 32.27% respectively, and the polyphenol oxidase (PPO) activity was reduced by 44.30%. One-kGy treatment was better than the control group to maintain superoxide dismutase (SOD) and catalase (CAT) activity. The finding suggested that the dose of 1.0 kGy generated by electron beam was suitable for keeping the postharvest quality for 21 days of Agaricus bisporus.Industrial relevanceThis study stated that electron-beam generated X-ray pretreatment could be a green and safe technology to improve the overall quality of Agaricus bisporus at 4 °C for 21 days.  相似文献

Objective

To provide a basis for the selection of suitable emulsifiers in oil-in-water emulsions used as tissue analogs for MRI experiments. Three different emulsifiers were investigated with regard to their ability to stabilize tissue-like oil-in-water emulsions. Furthermore, MR signal properties of the emulsifiers themselves and influences on relaxation times and ADC values of the aqueous phase were investigated.

Materials and methods

Polysorbate 60, sodium dodecyl sulfate (SDS) and soy lecithin were used as emulsifiers. MR characteristics of emulsifiers were assessed in aqueous solutions and their function as a stabilizer was examined in oil-in-water emulsions of varying fat content (10, 20, 30, 40, 50%). Stability and homogeneity of the oil-in-water emulsions were evaluated with a delay of 3 h and 9 h after preparation using T1 mapping and visual control. Signal properties of the emulsifiers were investigated by 1H-MRS in aqueous emulsifier solutions. Relaxometry and diffusion weighted MRI (DWI) were performed to investigate the effect of various emulsifier concentrations on relaxation times (T1 and T2) and ADC values of aqueous solutions.

Results

Emulsions stabilized by polysorbate 60 or soy lecithin were stable and homogeneous across all tested fat fractions. In contrast, emulsions with SDS showed a significantly lower stability and homogeneity. Recorded T1 maps revealed marked creaming of oil droplets in almost all of the emulsions with SDS. The spectral analysis showed several additional signals for polysorbate and SDS. However, lecithin remained invisible in 1H-MRS. Relaxometry and DWI revealed different influences of the emulsifiers on water: Polysorbate and SDS showed only minor effects on relaxation times and ADC values of aqueous solutions, whereas lecithin showed a strong decrease in both relaxation times (r1,lecithin = 0.11 wt.%1 s1, r2,lecithin = 0.57 wt.%1 s1) and ADC value (Δ(ADC)lecithin =  − 0.18 15; 10–3 mm2/s⋅wt.%) with increasing concentration.

Conclusion

Lecithin is suggested as the preferred emulsifier of oil-in-water emulsions in MRI as it shows a high stabilizing ability and remains invisible in MRI experiments. In addition, lecithin is suitable as an alternative means of adjusting relaxation times and ADC values of water.

Objective

Neonatal brain and cardiac imaging would benefit from the increased signal-to-noise ratio levels at 7 T compared to lower field. Optimal performance might be achieved using purpose designed RF coil arrays. In this study, we introduce an 8-channel dipole array and investigate, using simulations, its RF performances for neonatal applications at 7 T.

Methods

The 8-channel dipole array was designed and evaluated for neonatal brain/cardiac configurations in terms of SAR efficiency (ratio between transmit-field and maximum specific-absorption-rate level) using adjusted dielectric properties for neonate. A birdcage coil operating in circularly polarized mode was simulated for comparison. Validation of the simulation model was performed on phantom for the coil array.

Results

The 8-channel dipole array demonstrated up to 46% higher SAR efficiency levels compared to the birdcage coil in neonatal configurations, as the specific-absorption-rate levels were alleviated. An averaged normalized root-mean-square-error of 6.7% was found between measured and simulated transmit field maps on phantom.

Conclusion

The 8-channel dipole array design integrated for neonatal brain and cardiac MR was successfully demonstrated, in simulation with coverage of the baby and increased SAR efficiency levels compared to the birdcage. We conclude that the 8Tx-dipole array promises safe operating procedures for MR imaging of neonatal brain and heart at 7 T.
