全麦粉馒头是以全麦粉为原料制作的产品,因其含有丰富的膳食纤维、矿物质、维生素等营养成分而备受消费者喜爱。为了提高全麦粉馒头的营养品质,以传统酸面团为发酵剂,结合冷藏中种发酵法制作酸面团全麦粉馒头。通过单因素试验,研究酸种的添加量、中种面团中全麦粉的添加比例、全麦粉中种面团的冷藏发酵时间对馒头品质的影响。进一步通过Box-Behnken设计进行响应面优化试验,以全麦粉馒头的感官评分为响应值确定出最佳工艺参数:酸种的添加量为40%、中种面团中全麦粉的添加比例为70%、全麦粉中种面团的冷藏发酵时间为27 h。在此工艺条件下制作酸面团全麦粉馒头,感官评分为86.22,与预测值86.50无显著性差异。与酵母全麦粉馒头相比,酸面团全麦粉馒头具有更大的比容,更细腻、更均匀的组织结构,更松软的口感,并具有传统老面馒头特有的发酵风味。 相似文献

The study was conducted to evaluate the effect of non-traditional and highly available and nutrient-dense ingredients in the production of value-added crackers. The crackers were prepared by combining partially defatted chia flour, wheat germ, quinoa, and oat. The antioxidant activity and the polyphenol content were 7.0–8.4 times higher in crackers produced with non-traditional ingredients compared to the control snack. The hydroperoxide value indicated a low oxidative deterioration of the oil. The sample with 10% of partially defatted chia flour was selected for shelf-life test under storage conditions and sensory evaluation. Modified atmosphere exerted a protective effect on the lipid stability regardless of the incorporation of BHT to the formulation. All the evaluated attributes scored highly during consumer acceptance. The formulated cracker presented a relevant content of protein, dietary fibre and omega-3 and -6 fatty acids. Based on these results, the crackers containing non-traditional ingredients resulted in a product with a good potential for both consumer acceptance and outstanding nutritional benefits. 相似文献

A long fatty side chain was introduced into the macromolecule of hydroxyethyl cellulose (HEC) via esterification reaction. The hydrophobicity of hydroxyethyl cellulose lauric acid ester (HECLAE) was enhanced in comparison with HEC. The obtained HECLAE was used as macromolecular coupling agent in poly (butylene succinate)/wood flour composites and exhibited a positive influence on improving the mechanical performance of composites. Besides, HECLAE plays a role as a hydrophobic agent in composites. A significant increase in storage modulus (E’) was observed upon the incorporation of treated wood flour. This study determined the physicochemical, sensorial and nutritional properties of breadsticks to which a resistant starch (RS)-rich ingredient was incorporated by partial substitution, that is, 40%–70%, of hard wheat flour in the control recipe. Wheat flour substitution at the levels exceeding 50% lightened the colour while decreasing the moisture content and hardness of breadsticks, which was explainable by the microstructure. Changes in properties of breadsticks also affected the suitability of its sensory attributes, particularly colour and texture. Breadsticks, of which half of wheat flour was substituted, contained less protein and calories but higher carbohydrate than the control formula. Such flour substitution increased RS content closed to its effective dose of 15 g in a 45-g serving, which led to approximately 15% reduction in in vitro glycaemic index. Therefore, incorporating effective dose of RS in breadsticks could be performed, without causing substantial changes in product quality, by partial substitution of wheat flour. 相似文献

Xylo-oligosaccharides (XOS) are known to have beneficial health properties, and are considered to be functional food ingredients. The objective of this study is to compare corn fibers separated from ground corn flour and distillers dried grains with solubles (DDGS) for XOS yield and optimum autohydrolysis conditions. Based on the initial xylan content, the fiber separated from ground corn flour (FC) resulted in higher XOS yield (71.5%) than the fiber separated from DDGS (FD) (54.6%) at the maximum XOS production conditions. XOS produced were mainly xylobiose and xylotriose. Based on total initial material also, FC resulted in higher XOS yield (8.9%) than FD (8.0%), based on total original masses. Thus, fiber separated from ground corn flour would be a better feedstock for production of XOS than fiber separated from DDGS. The conditions for maximum XOS production from FD and FC were 180 °C with 20 min hold-time and 190 °C with 10 min hold-time, respectively. 相似文献

Although much research has been conducted on wheat flour dough rheology, the principal focus has been the role of the protein fraction. Starch is the main component of flour and plays a key role in dough dynamic properties, particularly during heating. This study assesses the effect of two different waxy flours, a durum and a bread wheat, and their blends with commercial bakers' flour on dough rheology during heating with a concurrent investigation into baking performance. Both waxy flour blends produced similar effects on dough rheological behaviour despite differences in protein content, acting to delay gelatinisation and reduce storage modulus. The main effects in bread were to increase loaf expansion during baking and reduce loaf firmness. It is postulated these effects are largely water mediated, with the higher swelling ability of the waxy starch granules reducing overall water availability and driving complete gelatinisation to higher temperatures. 相似文献

Canola is widely grown in the northern latitudes for its vegetable oil, generating large quantities of residual, low value canola flour used as animal feed. The common wood adhesive poly(diphenylmethylene diisocyanate) (pMDI) should react with the wide variety of functional groups in proteins. Therefore, it would seem that canola flour with added pMDI could be an effective adhesive. Two main questions are addressed in this study: How do the wood adhesive properties of canola flour compare to the better-studied soy flour? How well do proteins, which contain an abundance of functional groups, cure with the very reactive pMDI? These questions were addressed using the small-scale adhesive strength test ASTM D-7998, with various adhesive formulations and bonding conditions for canola flour plus pMDI compared to soy adhesives. The more challenging wet cohesive bond strength was emphasized because the dry strengths were usually very good. Generally, soy adhesives were better than canola ones, as was the polyamidoamine-epichlorohydrin cross-linker compared to pMDI, but these generalizations can be altered by the conditions selected.
