The effects of high-pressure-modified soy 11S globulin (0.1, 200, and 400 MPa) on the gel properties, water-holding capacity, and water mobility of pork batter were investigated. The high-pressure-modified soy 11S globulin significantly increased (P < 0.05) the emulsion stability, cooking yield, hardness, springiness, chewiness, resilience, cohesiveness, the a* and b* values, and the G′ and G′′ values of pork batter at 80 °C, compared with those of 0.1 MPa-modified globulin. In contrast, the centrifugal loss and initial relaxation time of T2b, T21, and T22 significantly decreased (P < 0.05). Meanwhile, the microstructure was denser, and the voids were smaller and more uniform compared with those of 0.1 MPa-modified globulin. In addition, the sample with 11S globulin modified at 400 MPa had the best water-holding capacity, gel structure, and gel properties among the samples. Overall, the use of high-pressure-modified soy 11S globulin improved the gel properties and water-holding capacity of pork batter, especially under 400 MPa. 相似文献

This paper presents a novel No-Reference Video Quality Assessment (NR-VQA) model that utilizes proposed 3D steerable wavelet transform-based Natural Video Statistics (NVS) features as well as human perceptual features. Additionally, we proposed a novel two-stage regression scheme that significantly improves the overall performance of quality estimation. In the first stage, transform-based NVS and human perceptual features are separately passed through the proposed hybrid regression scheme: Support Vector Regression (SVR) followed by Polynomial curve fitting. The two visual quality scores predicted from the first stage are then used as features for the similar second stage. This predicts the final quality scores of distorted videos by achieving score level fusion. Extensive experiments were conducted using five authentic and four synthetic distortion databases. Experimental results demonstrate that the proposed method outperforms other published state-of-the-art benchmark methods on synthetic distortion databases and is among the top performers on authentic distortion databases. Manufacturing companies not only strive to deliver flawless products but also monitor product failures in the field to identify potential quality issues. When product failures occur, quality engineers must identify the root cause to improve any affected product and process. This root-cause analysis can be supported by feature selection methods that identify relevant product attributes, such as manufacturing dates with an increased number of product failures. In this paper, we present different methods for feature selection and evaluate their ability to identify relevant product attributes in a root-cause analysis. First, we compile a list of feature selection methods. Then, we summarize the properties of product attributes in warranty case data and discuss these properties regarding the challenges they pose for machine learning algorithms. Next, we simulate datasets of warranty cases, which emulate these product properties. Finally, we compare the feature selection methods based on these simulated datasets. In the end, the univariate filter information gain is determined to be a suitable method for a wide range of applications. The comparison based on simulated data provides a more general result than other publications, which only focus on a single use case. Due to the generic nature of the simulated datasets, the results can be applied to various root-cause analysis processes in different quality management applications and provide a guideline for readers who wish to explore machine learning methods for their analysis of quality data. 相似文献

To investigate the effect of cooking temperature (55, 65, 75, 85 and 95 °C) on texture and flavour binding of braised sauce porcine skin (BSPS), sensory acceptance, microstructure and flavour-binding capacity were investigated during the processing of BSPS. Samples cooked at 85 and 95 °C showed better texture and aroma scores. Hardness and chewiness of BSPS were obviously improved at 85 and 95 °C than control group. Collagen structure was significantly destroyed over 85 °C. The porcine skin collagen heated at 85 and 95 °C showed relatively higher flavour-binding capacity than other samples. The improvement of texture of BSPS was mainly attributed to the degradation of collagen. Higher aroma scores of BSPS were related to intense binding abilities with aroma compounds at 85 and 95 °C. Cooking at 85 or 95 °C could be an optimal cooking temperature for BSPS. 相似文献

A recent development in tactile technology enables an improvement in the appreciation of the visual arts for people with visual impairment (PVI). The tactile sense, in conjunction with, or a possibly as an alternative to, the auditory sense, would allow PVIs to approach artwork in a more self‐driven and engaging way that would be difficult to achieve with just an auditory stimulus. Tactile colour pictograms (TCPs), which are raised geometric patterns, are ideographic characters that are designed to enable PVIs to identify colours and interpret information by touch. In this article, three TCPs are introduced to code colours in the Munsell colour system. Each colour pattern consists of a basic cell size of 10 mm × 10 mm to represent the patterns consistently in terms of regular shape. Each TCP consists of basic geometric patterns that are combined to create primary, secondary, and tertiary colour pictograms of shapes indicating colour hue, intensity and lightness. Each TCP represents 29 colours including six hues; they were then further expanded to represent 53 colours. Two of them did not increase the cell size, the other increased the cell size 1.5 times for some colours, such as yellow‐orange, yellow, blue, and blue‐purple. Our proposed TCPs use a slightly larger cell size compared to most tactile patterns currently used to indicate colour, but code for more colours. With user experience and identification tests, conducted with 23 visually impaired adults, the effectiveness of the TCPs suggests that they were helpful for the participants. 相似文献

This study aimed to evaluate the physicochemical characteristics and sensory attributes of beef burgers with the addition of pea fibre as a partial substitute of meat or fat. Three formulations were prepared: control (CON) – similar to the commercial formulation; fibre/less meat (FLM)—5% meat reduction and addition of 1% pea fibre; fibre/less fat (FLF)—7% fat reduction and addition of 1% pea fibre. Non-significant differences were obtained for pH, colour parameters (L* and b*), texture profile, cooking loss and size reduction among formulations. Moreover, sensory analysis with consumers of beef burgers did not indicate differences among the formulations for all the analysed attributes. Therefore, pea fibre is a promising partial replacer for meat and fat in beef burgers due to the preservation of technological parameters and sensory acceptance. 相似文献

The aim of the research is evaluating the classification performances of eight different machine-learning methods on the antepartum cardiotocography (CTG) data. The classification is necessary to predict newborn health, especially for the critical cases. Cardiotocography is used for assisting the obstetricians’ to obtain detailed information during the pregnancy as a technique of measuring fetal well-being, essentially in pregnant women having potential complications. The obstetricians describe CTG shortly as a continuous electronic record of the baby's heart rate took from the mother's abdomen. The acquired information is necessary to visualize unhealthiness of the embryo and gives an opportunity for early intervention prior to happening a permanent impairment to the embryo. The aim of the machine learning methods is by using attributes of data obtained from the uterine contraction (UC) and fetal heart rate (FHR) signals to classify as pathological or normal. For many-objective optimization problems, how to get a set of solutions with good convergence and diversity is a difficult and challenging work. In this paper, a new decomposition based evolutionary algorithm with uniform designs is proposed to achieve the goal. The proposed algorithm adopts the uniform design method to set the weight vectors which are uniformly distributed over the design space, and the size of the weight vectors neither increases nonlinearly with the number of objectives nor considers a formulaic setting. A crossover operator based on the uniform design method is constructed to enhance the search capacity of the proposed algorithm. Moreover, in order to improve the convergence performance of the algorithm, a sub-population strategy is used to optimize each sub-problem. Comparing with some efficient state-of-the-art algorithms, e.g., NSGAII-CE, MOEA/D and HypE, on six benchmark functions, the proposed algorithm is able to find a set of solutions with better diversity and convergence. 相似文献
