The gel-forming ability of myofibrillar protein (MP) is highly correlated with the characteristics of emulsified meat products. Incorporation of Agaricus bisporus (Ab) powder into MP gels may enhance its gel properties to facilitate the development of a novel and safe meat product. Therefore, this study investigated the effects of Ab powder on gel strength, water holding capacity (WHC), texture, rheological behaviour, LF-NMR spin–spin relaxation (T2), microstructure and protein secondary structure of the MP gel system. The results indicated that the gel strength, WHC, G' value and G" value were significantly improved when the addition of Ab powder increased from 0% to 6% (P < 0.05). Meanwhile, the T2 relaxation time was shortened, and free water was transformed into immobilised water. The texture of the gel was improved when 1%–4% Ab powder was added compared to the control. Furthermore, Ab filled in the gel network and promoted the unfolding of MP α-helix and the formation of MP β-sheet during the thermal denaturation of MP, leading to a dense aggregated network structure. The study suggested that Ab could be a promising ingredient in improving chicken MP's gel properties and developing fat-reduced meat products.  相似文献

The 2D semiconductor MoS2 in its mono‐ and few‐layer form is expected to have a significant exciton binding energy of several 100 meV, suggesting excitons as the primary photoexcited species. Nevertheless, even single layers show a strong photovoltaic effect and work as the active material in high sensitivity photodetectors, thus indicating efficient charge carrier photogeneration. Here, modulation spectroscopy in the sub‐ps and ms time scales is used to study the photoexcitation dynamics in few‐layer MoS2. The results suggest that the primary photoexcitations are excitons that efficiently dissociate into charges with a characteristic time of 700 fs. Based on these findings, simple suggestions for the design of efficient MoS2 photovoltaic and photodetector devices are made.  相似文献

A common feature of both apoptosis and inflammation is the activation of caspases. Caspases are aspartate-directed cysteine proteases that have numerous cellular targets. It has been discovered that several flavonoids are inhibitors of caspases. Flavonoids are members of a family of polyphenolic compounds from plants that have many biological properties, one of which is the ability to induce cell death. Some flavonoids are selective inhibitors of particular caspases. Since some of the inhibitory flavonoids are nevertheless cytotoxic, these results suggest that flavonoid-induced cell death may be occurring through a non-classical apoptosis pathway that is not dependent on caspase activity.  相似文献

Molecular relaxation and polarization phenomena of twelve single-ion-conducting nanocomposite polymer electrolytes (nCPEs) are studied using Broadband Electrical Spectroscopy (BES). The electrolytes are obtained by combining PEG400 oligomers with increasing amounts of anionic nanofiller comprised of fluorinated-TiO2 associated with Li+ cations (LiFT®), resulting in [PEG400/(LiFT)y] systems with 0 ≤ y ≤ 26.4. This new class of [PEG400/(LiFT)y] electrolytes allows us to achieve a significant single-ion conductivity (1.1·10−5 S cm−1 at 30 °C for nLi/nO = 0.113) without the addition of lithium salts. To the best of our knowledge, this is the highest conductivity value reported for this class of electrolytes. This study, in conjunction with the results reported in Part 1, leads us to hypothesize a conduction mechanism in terms of two types of long-range charge-transfer processes. The first charge-transfer occurs at the interface between the filler nanoparticles and filler-PEG domains, while the second occurs through the PEG400 matrix with the assistance of polymer segmental motion. The measured Li+ transference numbers confirm that the studied materials are single-ion conductors.  相似文献

Frozen samples of common fish species, sea trout (Salmo trutta), from Norway and Siberia, herring (Clupea harengus pallasi), rock sole (Lepidopsetta bilineata) and cod (Gadus morhua maris-albi), collected from a wholesale market in Krasnoyarsk city (Siberia, Russia) were analyzed. Special attention was paid to long-chain essential polyunsaturated fatty acids: eicosapentaenoic, 20:5ω3 (EPA) and docosahexaenoic, 22:6ω3 (DHA). Heat-treatment (cooking and frying) did not in general significantly decrease the contents of EPA and DHA compared to raw fish species, except for a modest reduction in Norwegian trout during frying. Boiled trout appeared to be a more valuable fish dish for obtaining the officially recommended appropriate daily intake of EPA + DHA for humans. Herring and sole had intermediate values, while boiled cod had a comparatively low value.  相似文献

Recently, we reported the presence of dihydroxyacetone (DHA), the active ingredient in sunless tanners, in the aerosol of an electronic cigarette. DHA has been shown to react with DNA in vitro. The FDA restricts the use of DHA to external application only. It states that it should not be inhaled, ingested, or come into contact with any areas containing mucous membranes, due to unknown risk. Herein, the quantification of DHA in the aerosols of three brands of e-cigarettes has been carried out. These included two devices with horizontal heating coil configurations as well as one with a sub-ohm resistance vertical heating coil. In order to understand and begin to address the origin of DHA and related aerosol products, the wicking properties of the three e-cigarettes were compared. DHA levels were analyzed by a combination of GS/MS and 1H NMR. DHA was found in all three e-cigarettes, with substantially less in the sub-ohm, vertical coil device as compared to the horizontal coil devices (e.g., 0.088 µg/puff vs. 2.29 µg/puff, respectively). Correspondingly, the temperature of the wet layer of the wick for the vertical coil was relatively stable, compared to the wicks for the horizontal coils, upon increasing battery power output. This result is in agreement with prior studies of e-cigarette wicking efficiency and aerosol toxin formation. The temperature measurements reported are a simple means for comparing devices with different design properties during operation.

Highly unsaturated fatty acids (HUFA), namely eicosapentaenoic acid (20:5n‐3, EPA) and docosahexaenoic acid (22:6n‐3, DHA), which are essential for many animals, including humans, are mainly produced in aquatic trophic webs. In fast‐flowing rivers, macrozoobenthos is the main source of HUFA for fish and may be particularly vulnerable to thermal alterations associated with climate change. We studied benthic communities in a unique natural ecosystem: the Yenisei River downstream of the dam of Krasnoyarsk Hydroelectric Power Station with very low temperature in summer because of discharge of cold water from deep in the reservoir and its tributaries with high summer temperature. This ‘natural experiment’ allowed to get rid of confounding factors, such as differences in light, seasonality, geology (biogeochemistry) and biogeography (regional species pools). As found, in spite of an increase of biodiversity and rates of daily production in warm rivers compared with cold sites, DHA and partly EPA production of zoobenthos decreased with the increase of temperature because of changes in species composition. Thus, in a climate warming context, we can predict a decrease of production of these HUFA by river zoobenthos and thereby a diminishing of their supply for fish and next to humans.
