Polybrominated diphenyl ethers (PBDEs) are environmental contaminants structurally similar to polychlorinated biphenyls (PCBs), and correlations between PBDE concentrations and concentrations of lipid, PCBs, dioxins and furans in feed and farmed Atlantic salmon filet indicate PBDEs may be derived from similar sources. PBDE concentrations (3.9 ± 0.6 ng g?1 wet wt) in farmed Atlantic salmon correlated well with lipid content and these other halogenated contaminants, however, lower concentrations of PBDEs (1.6 ± 0.3 ng g?1 wet wt) showed no correlation. Possible explanations for the non‐linear behaviour of PBDE concentrations in Atlantic salmon are discussed.  相似文献

Numerous studies have focused on arsenic in marine organisms, and relatively high natural levels of the element have been reported in marine samples. Despite their seemingly consistent presence in marine oils and fats, there is currently only limited knowledge available on arsenic compounds that exhibit lipid soluble characteristics, the arsenolipids, in contrast to the water-soluble arsenic species. The development of analytical techniques has, however, renewed the interest in these arsenic species and significant novel findings have been published in the last couple of years. The aim of this review is to present current knowledge on the occurrence and chemistry of arsenolipids in marine oils, and to identify future research needs. The occurrence of arsenolipids and their relevance in marine organisms will be discussed, in addition to their relevance for consumers and industry, with respect to feed and food safety and legislative issues. Analytical techniques, including techniques in the early work on arsenolipids in addition to methods employed today, and relevant sample preparation will be discussed.  相似文献

The feed additive ethoxyquin (EQ) is a commonly used synthetic antioxidant preservative in animal feeds. In farmed Atlantic salmon fillets, EQ residues are present, both as the parent compound and as EQ derivatives. One of the main EQ derivates in fish muscle is an ethoxyquin dimer (EQDM), and the potential toxicity of this metabolite is not known. The aim of this study was to evaluate the metabolism and potentially toxicological effects of EQDM. A 90-day subchronic exposure study with repeated dietary exposure to EQDM at 12.5 mg/kg of body weight per day was performed with male F344 rats. Hepatic Cyp1a1 mRNA was significantly reduced to <3% of the control in rats fed EQDM, and hepatic Cyp2b1 mRNA was increased to 192%. EQDM increased Gstpi1 mRNA expression to 144% that of the control, but the activity level of this phase II enzyme was reduced. Biomarkers of liver and kidney function did indicate adverse effects of EQDM when F344 rats were fed 12.5 mg/kg of body weight per day. The present study revealed that EQDM produces responses that are comparable to those produced by the parent compound (EQ) in terms of activating the same enzyme systems.  相似文献

Antioxidant activities of red and white European grape juices towards copper induced lipid oxidation of human low-density lipoproteins (LDL) were examined in vitro . LDL lipid peroxidation was assessed spectrophotometrically by monitoring the development of conjugated lipid hydroperoxides at 234 nm. Red grape juice concentrate inhibited lipid peroxidation of LDL by prolonging the lag phase by 2.7 times relative to a control when evaluated at a total phenolic concentration of 10 μM gallic acid equivalents (GAE). Both red grape juices tested blocked lipid peroxidation of LDL at 20 μM GAE. White grape juice exerted prooxidant activity at 5–20 μM GAE. The antioxidant activity, inhibition of lipid peroxidation of LDL in vitro , was correlated with the juices' levels of total phenols ( r  > 0.98, P  < 0.01), anthocyanins ( r  > 0.99, P  < 0.01), flavan-3-ols ( r  > 0.97, P  < 0.05), and hydroxybenzoates ( r  > 0.96, P  < 0.05) when the phenolic composition of each grape juices was analysed by HPLC. 5 μM ascorbic acid alone did not exert antioxidant activity towards LDL, but combinations of 5 μM ascorbic acid with 5 μM GAE juice phenols eliminated the prooxidant activity of white grape juice, and significantly improved the antioxidant activities of red grape juices.  相似文献

Experiments with elderberry genotypes, ripening stage and pectinolysis were carried out in order to investigate the possibility to improve different quality characteristics of elderberry juice. Raw juice was processed using either an optimised method with respect to enzyme concentration and treatment time or produced directly without any enzymatic treatment. Neochlorogenic acid, chlorogenic acid, cyanidin-3-sambubioside-5-glucoside, cyanidin-3,5-diglucoside, cyanidin-3-sambubioside, cyanidin-3-glucoside, quercetin-3-rutinoside (rutin) and quercetin-3-glucoside (isoquercitrin) were identified in the raw juice by liquid chromatography-mass spectrometry (LC-MS) and quantified by high-performance liquid chromatography-diode array detection (HPLC-DAD). The content of phenolic acids and flavonoids in elderberries were shown to be affected by berry development stage at harvest (ripening stage). Furthermore, a considerable variation in juice yield and physicochemical properties such as turbidity, soluble solids, titratable acidity, and content of phenolic acids and flavonoids was found between juices processed from elderberries by pectinolysis of different elderberry genotypes. Pectinolysis appeared not to have any major effect on juice yield and the content of phenolic acids and flavonoids in the juice compared to non-enzymatic processed juice. Factor analysis revealed correlations among quality characteristics such as soluble solids, titratable acidity, turbidity, and content of phenolic acids and flavonoids and it is shown that these correlations may be useful for the selection of elderberry genotypes best suited for the preparation of juice.  相似文献

Pre-press maceration treatments with 10 different pectinolytic enzyme preparations were investigated in experimental black currant juice production using response surface design templates. Enzyme dosage, maceration time, reaction temperature, and degree of berry crushing were varied, and the juice yields, anthocyanins, total phenols, and turbidity in the resulting juices were compared for a total of 250 different enzymatic treatments. The yields of anthocyanins and total phenols in the juices ranged from 900 to 2200 and 3050 to 5100 mg/kg wet weight black currant mash, respectively. Juice yields ranged from 66.4% to 78.9% by wet weight of mash. Turbidity levels ranged from 25 to 916 formazan nephelometric units (FNU). The reaction parameters induced larger variations in the responses than the different enzyme preparations, but the cloned Aspergillus niger/Aspergillus aculeatus preparation Pectinex BE® consistently tended to be among those giving the best responses regarding anthocyanin yields, phenols, and low juice turbidity. The optimal maceration was achieved using an enzyme dosage of 0.18% by wet weight of berries with a reaction at 60 °C for 30 min on the most finely crushed berry mash. This treatment gave similar profiles of anthocyanins in the juices with all the 10 enzyme preparations. The same 10 juices all exhibited antioxidant activity against human low-density lipoprotein oxidation in vitro, but the antioxidant potency varied depending on the enzyme preparation used in the pre-press maceration.  相似文献

The consumer safety of farm-raised salmon could be improved by determining the transfer efficiency of hazardous pollutants from fish feed to the salmon. A controlled feeding trial for 30 weeks was carried out to investigate the transfer of polybrominated diphenyl ethers (PBDEs) in Atlantic salmon (Salmo salar). Using three feed concentrations, an average of 95% of the total PBDE content of feed accumulated in whole salmon. Skinned fillet accumulated 42-59% of the PBDE intake. Equal partitioning according to the lipid content of the tissue was demonstrated. The formation of less brominated PBDEs via preferential debromination from the meta-position was thought to explain the exceptional accumulation efficiencies of BDE 47, BDE 66, BDE 75, BDE 119 and BDE 183 that were either >100% or else increasing with the exposure dose. Monitoring of a larger number of PBDE congeners is recommended to verify the biotransformation routes. The PBDE concentration in salmon of different ages, fed on a known concentration of PBDEs in fish feed, could be predicted by using the accumulation efficiencies determined in this study.  相似文献

The results from part of a monitoring programme of contaminant levels in fish and other seafood products initiated by the Directorate of Fisheries in Norway in 1994 are presented. Concentrations of 22 elements (four are presented here: As, Cd, Hg and Pb) and HCB, HCH, PCB 28, 52, 101, 105, 118, 138, 153, 156, 180, pp-DDD, p-DDE, p-DDT, sum DDT and 137Cs were determined in 17 species of fish caught in three sampling locations: the Barents Sea, the Norwegian Sea and the North Sea. The fish species analysed in the survey were limited to species of commercial importance for Norway with catching volumes of at least 10 000 metric tons year-1. The survey started in 1994 and is expected to continue beyond 2010. The analyses were carried out on 25 individual fish from each species and each sampling location, and the locations were representative of commercial fishing grounds for the species in question. The concentrations of contaminants found were considerably lower than the maximum levels permissible in fish set by CODEX and the European Union for contaminants in seafood products.  相似文献

Several synthetic antioxidants are authorized for use as feed additives in the European Union. Ethoxyquin (EQ) and butylated hydroxytoluene (BHT) are generally added to fish meal and fish oil, respectively, to limit lipid oxidation. The study was conducted to examine the concentrations of EQ, BHT and butylated hydroxyanisole (BHA) in several commercially important species of farmed fish, namely Atlantic salmon, halibut and cod and rainbow trout, as well as concentrations in fish feed. The highest levels of BHT, EQ and BHA were found in farmed Atlantic salmon fillets, and were 7.60, 0.17 and 0.07 mg kg(-1), respectively. The lowest concentrations of the synthetic antioxidants found were in cod. The concentration of the oxidation product ethoxyquin dimer (EQDM) was more than ten-fold higher than the concentration of parent EQ in Atlantic salmon halibut and rainbow trout, whereas this dimer was not detected in cod fillets. The theoretical consumer exposure to the synthetic antioxidants EQ, BHA and BHT from the consumption of farmed fish was calculated. The contribution of EQ from a single portion (300 g) of skinned fillets of the different species of farmed fish would contribute at most 15% of the acceptable daily intake (ADI) for a 60 kg adult. The consumption of farmed fish would not contribute measurably to the intake of BHA; however, a 300 g portion of farmed Atlantic salmon would contribute up to 75% of the ADI for BHT.  相似文献
