In this study, drying of red-fleshed dragon fruit at different temperatures (40, 50, 60, 70 and 80 °C) and air velocities (1.0 and 1.5 m s−1) was conducted under the specific humidity of 25 g H2O kg−1 dry air. The results showed that drying at higher temperatures resulted in shorter drying times. However, temperature and air velocity did not significantly affect the total betacyanin contents and antioxidant capacities in dried products. Seven betacyanins identified by LC-MS were betanin, isobetanin, phyllocactin, isophyllocactin, betanidin 5 –O-(6′O-3-hydroxybutyryl)-β-glucoside, isobetanidin 5 –O-(6′O-3-hydroxybutyryl)-β-glucoside and decarboxylated phyllocactin. In addition, the temperature increased the isomerisation of betacyanins. The most preferable condition for preserving the colour and betacyanin contents of red-fleshed dragon fruit was the drying at a temperature of 80 °C and air velocity of 1.5 m s−1 since it could shorten the drying time and give a bright red colour to the dried product as well as it had no significant impact on the betacyanins.  相似文献

Litchi (Litchi Chinensis Sonn.) is an important commercial fruit in Thailand and Vietnam. Litchi fruit is consumed both as fresh and dried products. Also most of the export of litchi is in the form of dried whole litchi fruit. Thermo-physical properties and drying model of litchi fruit is important for optimum design of litchi dryer. This paper presents moisture diffusivity, shrinkage and finite element simulated drying of litchi fruit. The moisture diffusivities of litchi were determined by minimizing the sum of square of deviations between the predicted and experimental values of moisture content of thin layer drying under controlled conditions of air temperature and relative humidity. The components in the form of cylinder for seed and seed stalk and slab for seed coat, shell and flesh were dried in thin layers at the air temperatures of 50, 60, 70 and 80 °C and relative humidity in the range of 10–25%. The mean diffusivity of flesh, seed and shell of litchi fruit increased with temperature and was expressed by the Arrhenius-type equation, but the diffusivities of seed coat and seed stalk were independent of temperature. The moisture diffusivities of seed coat and seed stalk were much lower than those of the other parts of the litchi. The shrinkage of litchi fruit has also been determined experimentally and it was expressed as a function of moisture reduction. A two-dimensional finite element model has been developed to simulate moisture diffusion in litchi fruit during drying. Shrinkage of the flesh and different component diffusivities of litchi during drying were also taken into account. The finite element model was programmed in Compaq Visual FORTRAN version 6.5. This finite element model satisfactorily predicts the moisture diffusion during drying. Moisture contents in the different components in the litchi fruit during drying were also simulated. This study provides an understanding of the transport processes in the different components of the litchi fruit.  相似文献

The objective of this research was to study the effect of osmotic pretreatment with combined anti-browning agents (acid, glycerol and/or trehalose) on the colour characteristics of dried litchi after drying and during 5 months of storage compared to samples without pretreatment. The pretreated samples showed good inhibition of polyphenol oxidase activity when compared with the control, while the total phenolic contents in the dried products were not reduced. The results demonstrated that water activity, lightness difference, chroma, degree of browning (DB), and 5-hydroxymethylfurfural values of all pretreated samples increased, while hue angle decreased with storage time. Samples pretreated with glycerol showed the best potential for browning retardation, followed by glycerol combined with trehalose, and trehalose, respectively. In addition, the colour parameters were used to calculate the luminescence values, representing the data in grey scale, which were correlated with a non-enzymatic browning index. The results showed grey value could be adequately used to represent the DB of dried litchi with r 2 value of 0.92.  相似文献

Coconut is grown in tropical and subtropical areas worldwide. The endosperm (water and meat) is consumed and processed in different forms. This study investigated the antioxidant activities and identified the phenolic compounds existing in the water and meat of coconut fruits at three different maturity stages, i.e., 180, 190, and 225 days after pollination from two planting areas in Thailand. Total phenolic content and antioxidant activity indices increased as the coconut matured from 180 to 190 days after pollination and then decreased or remained unchanged at 225 days after pollination. Catechin and salicylic acid were the major phenolic compounds found in the water, while gallic, caffeic, salicylic, and p-coumaric acids were found in the meat. The fat content of the meat increased significantly with maturity stage. Medium chain fatty acids profiles were also analyzed. The results are important for producers, processors, and consumers to realize an optimal quality and functionality of coconut water and meat when used for specific purposes.  相似文献

The equilibrium moisture contents of litchi (Litchi Chinensis Sonn.) were experimentally determined using the dynamic method at temperatures of 30, 40, and 50°C over a range of relative humidity values of 12 to 95%. Five models were tested to fit the experimental isotherm data of litchi. The GAB model fitted the best to experimental isotherm data. The agreement between experimental and predicted values of this model is excellent (RMSE 1.8 to 3.4%). The isosteric heats of sorption water were also determined from the equilibrium data using the Clausius-Clapeyron equation and it was found to be a function of equilibrium moisture content.  相似文献

Bulk layer shifting during industrial drying of whole longan was evaluated. Analysis of drying conditions and product quality of samples from different areas of the dryer was conducted. The study found that both temperature and air velocity were non‐uniformly distributed during drying, which affected drying kinetics and product quality. High humidity and convective cooling of the drying air passing through the bulk caused condensation on fruits surfaces in the upper layer during the initial hours of drying. Those samples towards the sides of dryer, those initially in the upper layers, and especially those near the air inlet showed consistently lower quality. Four shifting schemes were tested, one of which was found to be exceptional in terms of end‐product uniformity. Issues concerning the improvement of industrial longan drying are addressed and an optimal shifting procedure is proposed.  相似文献

Longan is one of the most widely cropped fruits in Northern Thailand, where a significant amount of the annual harvest is commercially dried and exported as a commodity. Liquefied petroleum gas is generally used as the energy source for heating the drying air, but concern is growing as fuel prices are expected to increase for the foreseeable future. Meanwhile, with the ample solar radiation in Thailand, the roofs of drying facilities could be adapted to serve as solar collectors to preheat the drying air, thus reducing the energy requirement from fossil fuels. In this study, a simulation program for a flat-plate solar air heater was used to estimate the potential to preheat drying air given the conditions of several longan drying facilities. Results showed that solar collectors can replace up to 19.6% of the thermal energy demand during the drying season. Bigger collectors and smaller air channels result in more useful heat, but attention has to be paid to costs and pressure drop, respectively. Annual monetary savings can reach up to THB 56,000 (≈US$ 1800 at US$ 1 = THB 31).  相似文献

This study explored the effects of calcium chloride (CaCl2) and calcium lactate (Ca‐L) pretreatments prior to osmotic dehydration on physicochemical characteristics and consumer acceptance of dried papaya. Three different calcium concentrations [0.5, 1.5 and 2.5% (w/v)] were applied to samples before they were soaked in a 30 °Brix sucrose solution and subsequently dried at 70 °C. The results showed that the dried samples treated with calcium exhibited significantly lower moisture content, water activity, apparent density and shrinkage, while volume was higher when compared to the control. Calcium applications did not obviously influence sugar content of samples and maintained the quality of dried papaya in terms of colour and textural characteristics. Calcium chloride at 2.5% (w/v) was found to particularly impart undesirable bitterness to the dried papaya. In contrast, using 2.5% (w/v) Ca‐L provided the best acceptance scores. Thus, the use of Ca‐L could be an alternative to CaCl2 in the pretreatment of fruits prior to drying as it offers improved quality.  相似文献

Modifications including air deflector installations in the plenum and insulation to improve performance of an industrial longan dryer were evaluated. Trials were carried out at a commercial drying facility according to industrial practices. Analyses of drying conditions, product quality and energy consumption were conducted. The study found that air velocity distribution was improved by plenum modifications and heat supply was more consistent after insulation. Modifications increased drying uniformity and insulation produced more homogenous product color. Evaluation of dryer performance showed that inverted mesh in the plenum and insulation reduced energy demand and increased efficiency by 1.51–4.27% respective of dryer modification. Cost savings of US$ 4–10 per batch were calculated with an estimated payback period of 5–12 batches. In conclusion, simple modifications of this dryer type show potential for improving product uniformity, reducing energy requirement and increasing profitability. Combination of the best modifications is recommended for further research.  相似文献

This article presents experimental and simulated results of drying of peeled longan in a side-loading solar tunnel dryer. This new type of solar tunnel dryer consists of a flat-plate solar air heater and a drying unit with a provision for loading and unloading from windows at one side of the dryer. These are connected in series and covered with glass plates. A DC fan driven by a 15-W solar cell module supplies hot air in the drying system. To investigate the experimental performance, five full-scale experimental runs were conducted and 100 kg of peeled longan was dried in each experimental run. The drying air temperature varied from 32 to 76°C. The drying time in the solar tunnel dryer was 16 h to dry peeled longan from an initial moisture content of 84% (w.b.) to a final moisture content of 12% (w.b.), whereas it required 16 h of natural sun drying under similar conditions to reach a moisture content of 40% (w.b.). The quality of solar-dried product was also good in comparison to the high-quality product in markets in terms of color, taste, and flavor. A system of partial differential equations describing heat and moisture transfer during drying of peeled longan in this solar tunnel dryer was developed and this system of nonlinear partial differential equations was solved numerically by the finite difference method. The numerical solution was programmed in Compaq Visual FORTRAN version 6.5. The simulated results agreed well with the experimental data for solar drying. This model can be used to provide the design data and it is essential for optimal design of the dryer.  相似文献
