摘    要:本研究以气味指标探究不同饲喂模式下脊尾白虾气味差异,分析两种饲喂条件可替代性。以脊尾白虾(小白虾)为研究对象,采用顶空固相微萃取-气相色谱-质谱联用技术(HS-SPME-GC-MS)和电子鼻技术研究了配合饲料喂养的脊尾白虾和传统饵料喂养的脊尾白虾挥发性成分间的差异,以探讨不同饲喂方法对脊尾白虾气味的影响。GC-MS分析结果显示,在配合饲料喂养脊尾白虾雄虾与雌虾中分别检测出30和30种挥发性物质,两种脊尾白虾中的挥发性成分主要包括壬醛、庚醛、癸醛、甲基庚烯酮、苯乙酮、苯并噻唑、D-柠檬烯、柏木脑、萘等。在传统饵料喂养脊尾白虾雄虾与雌虾中检测出29和31种挥发性成分,且两种饲喂模式下的脊尾白虾挥发性成分极为相似;电子鼻不能较好地区分两种脊尾白虾,说明配合饲料喂养与传统饵料喂养在挥发性成分上并无明显区别。从气味角度来说,配合饲料喂养可以代替传统饵料喂养。

Abstract:In this study,odor indexes were used to explore the odor difference of Palaemon carinicauda with different feeding modes and to analyze the substitutability of the two feeding conditions.The Palaemon carinicauda was used as the research object.The head-space solid phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS)and electronic nose technique were used to study the compound-fed Palaemon carinicauda.The difference between the volatile components of the Palaemon carinicauda fed with traditional bait was investigated to explore the effects of different feeding methods on the flavor of Palaemon carinicauda.The results of GC-MS analysis showed that the volatile components in the two species of Palaemon carinicauda were mainly furfural,heptaldehyde,furfural,methylheptenone,acetophenone,benzothiazole,D-limonene,cypress,naphthalene etc.30 kinds of volatile substances were detected in the compound-fed Palaemon carinicauda males and females.In the traditional feeding method,29 kinds of volatile components were detected in the male Palaemon carinicauda,and 31 kinds of volatile components were detected in the female Palaemon carinicauda.The electronic nose can’t distinguish between two kinds of Palaemon carinicauda.It is indicated that there was no significant difference in the volatile components between compound-fed and traditional feed.From the perspective of odor,compound feed can replace traditional feed.
