摘    要:以蛋白水解度和羟自由基清除率为指标,采用胰蛋白酶法提取秘鲁鱿鱼皮中的胶原蛋白肽,并通过单因素试验和正交试验优化了鱼皮胶原蛋白肽的制备工艺条件,同时测定了鱼皮的基本组成成分.结果表明,加酶量5%,酶解时间7h,酶解温度50℃,pH值8.0,酶解效果最好.此条件下,鱿鱼皮胶原蛋白肽的水解度为26.1%,羟自由基清除率为83.3%,在医用保健食品和抗衰老美容护肤产品上具有很好的实用价值.

Abstract:The collagen peptide from squid skin has been extracted by using protease based on the protein degree of hydrolysis (DH) and hydroxyl rad-icals scavenging rate. Through single factor experiment and orthogonal test, the preparation technology conditions of fish skin collagen peptide were optimized and the basic composition of squid skin was also analyzed. The results showed that the optimum addition of trypsin was 5%, the enzymoly- sis time was 7h, enzymolysis temperature was 50℃, and pH value was 8.0. Under these conditions, the maximum DH was 26. 1% and the hydroxyl radical scavenging rate was 83.3%. Squid skin collagen peptide has wide practical application value in medical healthy food and anti-aging, beauty skin care.
