| 摘 要： | 羊乳及由其制作的传统奶酪,越来越受到国内人们的青睐。而在国内外,羊乳及其奶酪中掺入牛乳的掺假行为,却常有发生。所以,迫切需要一种准确的检测方法,来避免这种掺假行为对我国的进出口贸易造成损失。文中主要综述了电泳,色谱,免疫化学,DNA技术等方法检测羊乳及其奶酪中掺入牛乳的研究状况。

| Abstract: | Nowadays people have paid more attention to the detection and determination of bovine milk in adulterated ewes' and goats' milk and cheese .In this paper, the most update methods in detecting adulteration, such as electrophoresis, chromatography, immunochemistry, and DNA-based methods were introduced. |
