植物甾醇酯与维生素E复配抗氧化剂对玉米油的抗氧化效果研究

本研究将植物甾醇酯与天然维生素E以1∶1比例进行复配作为天然抗氧化剂添加到玉米油中,从测定其不同添加量时的过氧化值、茴香胺值、总氧化值和酸价的变化趋势可以看出,与对照组相比复配天然抗氧化剂对玉米油有较好的抗氧化作用。结果表明,添加200 mg/kg复配抗氧化剂的玉米油抗氧化性和品质较好。在最佳添加量条件下,复配天然抗氧化剂抗氧化效果优于BHT、BHA,因此复配抗氧化剂有其明显的优势,可为玉米油贮存过程中添加天然抗氧化剂提供参考。

Research of Phytosterol estersand VE Composite Antioxidant Properties in corn oil

In this paper, the phytosterol esters and natural vitamin E in a ratio of 1:1 as a natural antioxidant added to the corn oil, from the determination of peroxide value, the value of anisidine, the total oxidation and the acid value, it can be seen that the composite antioxidant has good antioxidant effect on the corn oil compared with the control group. The results showed that the antioxidant and good quality of corn oil supplemented with 200 mg / kg compound antioxidant were better. Under the optimum conditions, the antioxidant effect of natural antioxidant is better than that of BHT and BHA. Therefore, the antioxidant has its obvious advantages, which can provide theoretical support for the addition of natural antioxidant in the process of corn oil storage.
