紫苏水提取物抑菌作用的研究

摘    要:以3%硼砂水溶液为提取剂,采用超声波辅助水浸提法提取紫苏梗中的活性成分(黄酮类化合物和迷迭香酸),并通过喷雾干燥法制备紫苏水提物。本文主要采用微生物活性纸片法、最小抑菌浓度法和pH值变化法对紫苏水提物的抑菌作用进行了研究。分别测定了紫苏水提物对供试大肠杆菌,枯草芽孢杆菌,酵母菌和霉菌的抑菌圈直径和最低抑菌浓度,以及对枯草芽孢杆菌脲酶活性的影响。结果表明:紫苏水提物对4种供试菌有一定的抑制作用,对大肠杆菌和枯草芽孢杆菌的抑制作用强于黑曲霉和酵母菌。通过研究紫苏水提取物对细菌、真菌的抑制作用,了解其抑菌特性,为紫苏提取物在食品天然防腐剂领域中的开发利用提供实验依据,也为紫苏的综合利用开辟一条新途径。
