摘    要:花生原料独特的营养成分决定了其在我国食品工业中的特殊地位 ,文中综述了我国花生食品产业的发展现状 ,尤其是花生酱、花生蛋白、花生油和副食品的开发利用 ,总结了花生作为食品工业原料利用的 3个制约因素 ,花生蛋白质营养不均衡、黄曲霉毒素污染和存在过敏原 ,并对今后我国花生食品产业研究和生产发展趋势进行了展望

Abstract:The unique nutritional ingredients of peanut establishes its special status in Chinese food industry The present situation of peanut food industry, especially the development and utilization of peanut butter, peanut protein, peanut oil and byproducts, was briefly reviewed in this paper. The three limiting factors of peanut as foodstuff for utilization were summarized as the unbalanced protein nutrition, aflatoxin contamination and allergens Moreover, the research and the developing trend of production in future peanut food industry are projected
