摘    要:食品胶是一类高分子量亲水性生物聚合物,作为功能性组分被广泛应用于食品工业,目前其系统介绍、技术应用和学术研究仍十分匮乏。文章系统介绍食品胶定义、分类、组成、功能特性与作用机理及其在食品工业中应用,并展望其发展趋势,为进一步研发食品胶在食品中的应用提供理论参考。
