| 摘 要： | 从中草药中天然抗氧化剂的开发、天然抗氧化剂抗氧化效果的评估及其影响因素、天然抗氧化剂之间的相乘作用、天然抗氧化剂对油脂氧化稳定性的促进作用等几方面对天然抗氧化剂的发展近况进行了概述。
