| Abstract: | The methods based on antioxidant inhibiting lipid oxidation, scavenging free radical, inhibiting substrates oxidized by free radical and the reduce ability are reviewed in this paper. And the methods and parameters of evaluation and characterization results of antioxidant activity tests and the requirements related on the methods of determining antioxidant activity are also discussed. |
