苹果多酚提取物的组成及其抗氧化性能的研究

摘    要:研究了苹果多酚提取物的组成及其抗氧化作用。结果表明,苹果提取物具有较好的抗油脂氧化作用,其抗氧化效果同浓度,溶解性及其酚类物质的组成有关,当苹果提取物中富含原花青素低聚体、酚酸时,油溶性较好,抗氧化效果最好。此外,苹果提取物与Vc在猪油和菜油中均有很好的协同增效作用,而与柠檬酸的协同作用则在猪油中较显著。

Abstract:The components and antioxidation of apple extracts and their synergistic antioxidation with Vc and citric acid were studied.The results showed that the antioxidant activity of the apple extracts was relative to its polyphenol components,oil solubility,and concentration.the apple extracts with high content of proanthocyandins oligomer had better antioxidantion.In addition,the apple extracts and Vc exhibited remarkable synergistic effect in lard and rape seed oil,but the synergistic antioxidantion of apple extracts with citric acid was better in lard than that in rape seed oil.
