啤酒菌种组合式使用的技术

啤酒菌种源应用有单项性直接启用原种、启用原种和汉生罐菌种相结合和组合式启用菌种。组合式启用菌种技术有：(1)原料的保藏，包括培养斜面菌种和制备液体石蜡菌种；(2)菌种的启用：液体石蜡菌种的启用；汉生罐菌种的使用、贮存与再启用；扩大罐菌种的使用、培养与再启用；生产闲季大罐酵母菌种的留取、贮存与再启用。组合式启用种源不需增添设备而达到生产要求，所产啤酒产量高、质量好、风味一致。
