不同乳酸菌发酵剂对发酵红肠品质的影响 总被引:1,自引:0,他引:1
为研究乳酸菌发酵对红肠品质的影响,将发酵技术应用于本无发酵工艺的红肠制品中,筛选出能够提高红肠品质的乳酸菌发酵剂。分别将常应用于发酵肉制品的7 种商业乳酸菌发酵剂(木糖葡萄球菌+戊糖片球菌(THM-17)、木糖葡萄球菌+清酒乳杆菌+类植物乳杆菌(PRO-MIX5)、木糖葡萄球菌+肉葡萄球菌+清酒乳杆菌(WBL-45)、木糖葡萄球菌+戊糖片球菌+植物乳杆菌(VHI-41)、木糖葡萄球菌+戊糖片球菌+植物乳杆菌(SHI-59)、肉葡萄球菌+木糖葡萄球菌(WBX-43)和戊糖片球菌+木糖葡萄球菌+肉葡萄球菌+乳酸片球菌(VBM-60))及8 种单菌(弯曲乳杆菌、戊糖乳杆菌、清酒乳杆菌-1、戊糖片球菌、木糖葡萄球菌、肉葡萄球菌、清酒乳杆菌-2、植物乳杆菌)以107 CFU/g的接种量接种至腌制后的肉馅中,拌馅灌肠后于35 ℃、80%湿度条件下发酵12 h,取样测定发酵后样品的乳酸菌数和细菌总数,再经干燥、蒸煮、烟熏、烘烤制得成品,测定其感官、pH值、色差、质构、亚硝酸盐、硝酸盐、生物胺及N-亚硝胺含量等指标。结果表明:15 种发酵剂中以木糖葡萄球菌和植物乳杆菌2 种乳酸菌发酵剂应用效果较好,所制得产品pH值分别为5.26和5.04,色泽美观,弹性适中,亚硝酸盐残留量(10.84、10.13 mg/kg)低,可显著抑制N-亚硝胺的形成(N-二甲基亚硝胺含量分别为1.29、2.51 μg/kg),生物胺总量较低。由此说明,木糖葡萄球菌和植物乳杆菌能够显著提高红肠产品的安全品质。 相似文献

以自然发酵风干肠为研究对象,分析了细菌总数和乳酸菌菌数的变化情况,结果表明,乳酸菌为风干肠发酵过程中的优势菌群.通过对风干肠中乳酸菌的分离鉴定,共分离出戊糖片球菌(Pediococcus pentosaceus)、乳酸乳球菌乳酸亚种(Lactococcus lactis subsp lactis)、短乳杆菌(Lactobacillus brevis)、弯曲乳杆菌(Lactobacillus curvatus)和发酵乳杆菌(Lactobacilus fermentum)5株乳酸菌.24h产酸速率测定结果表明,弯曲乳杆菌>短乳杆菌>乳酸乳球菌乳酸亚种>戊糖片球菌>发酵乳杆菌. 相似文献

以陕西杨凌地区大白菜为原料,切碎,添加2.5%食盐,在22 ℃进行半厌氧自然发酵酸泡菜。发酵过程中在不同时间取泡菜液,测定泡菜pH值、乳酸菌落和菌落总数变化,分离鉴定优势乳酸菌株,检测酸白菜微生物多样性,探究酸白菜腌制过程中菌群的演替变化规律。结果表明:泡菜自然发酵,从第0天到第7天,pH值从初始的6.0降到4.2,乳酸菌数由4.65 lg(CFU/mL)增至7.86 lg(CFU/mL),菌落总数由9.11 lg(CFU/mL)减至8.65 lg(CFU/mL)。在不同发酵阶段共分离鉴定出27株乳酸菌,分别为10株明串珠菌,7株魏斯氏菌,4株乳酸乳球菌,4株弯曲乳杆菌和2株戊糖片球菌。泡菜发酵起始优势乳酸菌种属为魏斯氏菌,发酵中期优势乳酸菌逐渐变成乳酸乳球菌,肠膜明串珠菌演替成优势乳酸菌。整个泡菜发酵阶段异型乳酸发酵菌种占据主导地位,发酵中、后期(5 d后)同型乳酸发酵菌种参与泡菜发酵。 相似文献

对从湘西传统酸鱼4个不同发酵阶段分离的196株乳酸菌种类进行了研究,分离出的乳酸菌主要包括植物乳杆菌、戊糖片球菌、食品乳杆菌、明串珠菌、肠球菌及干酪乳杆菌等,并且这些乳酸菌在发酵过程中呈现出一种动态的变化进程。同时对分离到的乳酸菌进行了一系列的生理生化试验;产酸速率实验,耐食盐、耐亚硝盐实验,耐酸及耐胆盐实验,氨基酸脱羧酶实验以及抑菌实验,选育出具有较好的发酵剂潜力的3株植物乳杆菌和1株戊糖片球菌。 相似文献

为了研究从发酵香肠中分离纯化的3株乳酸菌粪肠球菌(Enterococcus faecalis)、戊糖片球菌(Pediococcus pentosaceus)和肠膜明串珠菌(Leuconostoc mesenteroides)的产酸性能,对这3株菌在不同pH、温度、NaCl、NaNO2条件下的生长情况及产酸情况进行了测定。研究结果显示:这3株菌中,肠膜明串珠菌和戊糖片球菌的生长特性较好;粪肠球菌的生长特性虽不如肠膜明串珠菌和戊糖片球菌,但产酸能力最好,戊糖片球菌耐盐性最好、肠膜明串珠菌耐亚硝酸盐的特性最好;在不同温度和pH条件的测试中,肠膜明串珠菌的生长能力最好,粪肠球菌次之。这3株乳酸菌在发酵肉制品中均产生乳酸。总之,这3株菌均具有用于发酵制备乳酸的能力。 相似文献

比较了巴氏葡萄球菌、肠膜明串珠菌、戊糖片球菌、乳酸乳球菌、植物乳杆菌和干酪乳杆菌6种乳酸菌对红曲黄酒酿造体系中酵母菌生长及风味物质形成的影响。结果表明:除干酪乳杆菌外,其它乳酸菌均能促进酵母菌的生长;添加乳酸菌虽然对酿造终产物中还原糖与乙醇含量的影响并不显著,但都能显著提高其有机酸含量。利用顶空固相微萃取-气相色谱-质谱联用技术共鉴定出34种挥发性成分,并对发酵终产物进行感官评定,结果发现正丁酸、苯乙醛、2-苯乙醇、乙酸异戊酯、正丙醇和1-壬醇与感官总分呈正相关,乙酸丁酯、辛酸、乳酸乙酯、癸酸乙酯、辛酸乙酯、正丁醇和5-甲基糖醛与感官总分呈负相关。研究结果表明:在酿造体系中添加植物乳杆菌或干酪乳杆菌均会对红曲黄酒品质产生不利影响,而戊糖片球菌对红曲黄酒品质有一定提升,是潜在可应用于酿造红曲黄酒中的优良乳酸菌菌株。 相似文献

为获得高抗氧化活性的天然肉品发酵剂,通过清除自由基、还原能力和抗脂质过氧化实验对来源于5种发酵肉制品中30株乳酸菌的发酵上清液、菌体细胞和胞内提取物的抗氧化活性进行研究,并按照肉品发酵剂的筛选标准对高抗氧化性的菌株进行筛选,鉴定出符合要求的菌株。结果表明:这30株乳酸菌具有不同的抗氧化能力且不同组分的抗氧化活性之间存在很大差异,发现菌株L23、L26和L28具有较高的抗氧化活性,其中L23符合肉品发酵剂的筛选标准,可作为天然高抗氧化性肉品发酵剂用于生产。经鉴定L23为希腊魏斯氏菌。 相似文献

Contamination of cooked meat products with Listeria monocytogenes poses a constant threat to the meat industry. The aim of this study was therefore to investigate the use of indigenous lactic acid bacteria (LAB) as protective cultures in cooked meat products. Cooked, sliced, vacuum- or gas-packaged ham and servelat sausage from nine meat factories in Norway were inoculated with 10(3) cfu/g of a mixture of three rifampicin resistant (rif-mutant) strains of L. monocytogenes and stored at 8 degrees C for four weeks. Growth of L. monocytogenes and indigenous lactic acid flora was followed throughout the storage period. LAB were isolated from samples where L. monocytogenes failed to grow. Five different strains growing well at 3 degrees C. pH 6.2, with 3% NaCl, and producing moderate amounts of acid were selected for challenge experiments with the rif-resistant strains of L. monocytogenes. a nalidixic acid/streptomycin sulphate-resistant strain of Escherichia coli O157:H7 and a mixture of three rif-resistant strains of Yersinia enterocolitica O:3. All five LAB strains inhibited growth of both L. monocytogenes and E. coli O157:H7. No inhibition of Y. enterocolitica O:3 was observed. A professional taste panel evaluated cooked, sliced, vacuum-packaged ham inoculated with each of the five test strains after storage for 21 days at 8 degrees C. All samples had acceptable sensory properties. The five LAB strains hybridised to a 23S rRNA oligonucleotide probe specific for Lactobacillus sakei. These indigenous LAB may be used as protective cultures to inhibit growth of L. monocytogenes and E. coli O157:H7 in cooked meat products. 相似文献

The present study evaluated the relationship between the bacterial diversity and metabolites of various sour meats, a traditional fermented meat product. The results showed that sour meats had a low pH (average of 4.34), low water activity (aw, an average of 0.917), and high lactic acid (~19 177.48 mg kg−1) and free amino acid (FAA) (~4047.65 mg kg−1) concentrations. The lactic acid bacteria (LAB), especially Lactobacillus and Weissella, were predominated in the samples. The alcohols, aldehydes and esters accounted for the major components of volatile organic compounds (VOCs). Of which, (E)-2-octenal, nerol, cis-4-decenal, tetradecanal, linalyl acetate, linalool, 1-octen-3-ol, hexanal, 1-heptanol, benzaldehyde and (E)-2-decenal were considered as the key VOCs of sour meats. The redundancy analysis (RDA) and Pearson’s correlation analysis revealed that LAB (Lactobacillus and Weissella) and salt were positively correlated with most FAAs and VOCs. Overall, higher salinity, lower aw and abundant LAB might be the indicators of good sour meat quality. 相似文献

为获得酸笋中高产乳酸乳酸菌,以柳州传统发酵酸笋为原料,利用MRS培养基对乳酸菌进行分离纯化,然后通过溶钙圈法和高效液相色谱(HPLC)法对高产乳酸乳酸菌进行筛选,并采用形态观察及分子生物学技术对其进行菌种鉴定,最后优化该菌种产乳酸的发酵条件。结果表明,分离并筛选得到一株高产乳酸的乳酸菌菌株LB-1-23,并鉴定其为植物乳杆菌(Lactobacillus plantarum),该菌株发酵产乳酸的最适条件为接种量2.6%,pH值5.5,发酵温度32 ℃,发酵时间30 h,葡萄糖为碳源,细菌学蛋白胨为氮源。在此优化条件下,乳酸产量为12.74 g/L。该研究为酸笋来源乳酸菌发酵产生乳酸的应用奠定了理论基础。 相似文献

ABSTRACT: Listeria monocytogenes is the pathogen of concern in ready-to-eat (RTE) meat products. Salt brines are used to chill processed meats. L. monocytogenes and lactic acid bacteria (LAB) can grow under saline conditions, and may compete with each other for nutrients. The objective of this study was to determine the effect of lactic acid bacteria ( Enterococcus faecalis , Carnobacterium gallinarum , and Lactobacillus plantarum ) on the survival of L. monocytogenes and Listeria innocua in brines stored under low temperatures for 10 d. Sterile tap water (STW) and 2 brine solutions (7.9% and 13.2% NaCl) were inoculated with 1 of 5 cocktails ( L. monocytogenes , L. innocua , LAB, L. monocytogenes + LAB, or L. innocua + LAB) at initial concentrations of 7 log CFU/mL. Brines were stored for 10 d at 4 or 12 °C. Three replications of each brine concentration/cocktail/temperature combination were completed. No significant reductions of L. monocytogenes occurred in 7.9%[w/v] or 13.2%[w/v] brines when LAB were present; however, there were significant reductions after 10 d of L. monocytogenes in the STW solution when LAB were present (1.43 log CFU/mL at 4 °C and 3.02 log CFU/mL at 12 °C). L. innocua was significantly less resilient to environmental stresses of the brines than L. monocytogenes , both with and without LAB present ( P ≤ 0.05). These strains of lactic acid bacteria are not effective at reducing L. monocytogenes in brines at low temperatures. Furthermore, use of L. innocua as a model for L. monocytogenes is not appropriate under these environmental conditions. 相似文献

目的:探明孝感米酒中乳酸菌的种类及其对黄酒品质的影响。方法:采用传统可培养方法使用MRS培养基、厌氧工作站,对孝感米酒中乳酸菌进行分离,并接入黄酒对黄酒发酵过程进行干预,进而通过分析黄酒有机酸与滋味等理化特征来评价乳酸菌的发酵特性。结果:从孝感米酒中分离到9株乳酸菌,基于16S rDNA基因对乳酸菌分离株进行了系统发育分析,结果显示它们属于魏斯氏菌属(Weissella)、片球菌属(Pediococcus),种水平上分为戊糖片球菌(Pediococcus pentosaceus)、融合魏斯氏菌(Weissella confusa)、食窦魏斯氏菌(Weissell acibaria)。将这9株菌应用于黄酒发酵制作,在菌株融合魏斯氏菌MJ3-1与MJ4-1、戊糖片球菌MJ6-1、食窦魏斯氏菌MJ8-1干预下,黄酒中乳酸含量显著增加(p<0.05),苹果酸含量显著减少(p<0.05);同时黄酒的滋味中咸味和丰度有显著增加(p<0.05)。总体上来说,乳酸菌对黄酒滋味的影响由酸味、鲜味与丰度引起。结论:融合魏斯氏菌MJ4-1能增加黄酒乳酸,并降低苹果酸含量作用最强,适用于黄酒复合型发酵剂的研发。 相似文献

为了获得适用于柳州酸笋发酵的降亚硝酸盐乳酸菌,利用MRS培养基对柳州酸笋中的乳酸菌进行分离、纯化及鉴定,并探讨影响菌株降解亚硝酸盐能力的因素。结果表明,共分离获得22株乳酸菌,用盐酸萘乙二胺法对这22株乳酸菌进行降亚硝酸盐能力测试,得到一株降解能力较强的乳酸菌LC-3-3,经分子生物学鉴定为植物乳杆菌(Lactobacillus plantarum);该菌株在以葡萄糖为碳源(20 g/L)、蛋白胨为氮源(10 g/L)、接种量为6%、pH值为6.0、温度为37 ℃的条件下,亚硝酸盐的降解率为76.58%,降解效果较好。 相似文献

为探究日粮添加乳酸菌对苏尼特羊生长、肉品质、风味物质和抗氧化能力的影响,选取对照组(基础日粮)和乳酸菌组(基础日粮添加乳酸菌)苏尼特羊各12 只测定生长性能及肠道中乳酸菌和大肠菌群的数量,屠宰后取背最长肌测定肉品质、挥发性风味物质相对含量、抗氧化能力以及抗氧化酶相关调控基因的表达情况。结果表明:乳酸菌组苏尼特羊肠道中的乳酸菌数量显著高于对照组(P<0.05),大肠杆菌的数量显著低于对照组(P<0.05)。乳酸菌的添加提高了苏尼特羊的平均日增体质量(P<0.05)。乳酸菌组的剪切力、b*值和pH24 h显著低于对照组(P<0.05),pH45 min和熟肉率在两组间无统计学差异(P>0.05)。乳酸菌可影响苏尼特羊肉的风味组成及相对含量,羊肉中主要脂质氧化产物为辛醛、壬醛、癸醛、1-戊醇、正己醇和庚醇,其相对含量均表现为乳酸菌组显著低于对照组(P<0.05),说明乳酸菌可抑制肌肉的过度氧化,平衡羊肉风味。与对照组相比,日粮添加乳酸菌可赋予羊肉橙子、洋葱、玫瑰和蘑菇气味。乳酸菌组的过氧化氢酶(catalase,CAT)和总抗氧化能力均显著高于对照组(P<0.05),谷胱甘肽过氧化物酶(glutathione peroxidases,GPx)的活力高于对照组(P>0.05)。通过抗氧化酶相关调控基因表达量的分析得出,乳酸菌组的CAT、GPx基因表达量显著高于对照组(P<0.05),印证了乳酸菌可提高羊肉的抗氧化能力。综上,在日粮中添加乳酸菌可改善苏尼特羊肠道菌群及风味,提高生长性能、肉品质和抗氧化能力。 相似文献
