目的为控释型抗菌活性包装膜在食品工业中的应用与开发研究提供基础。方法综述抗菌活性包装膜及其结合控释技术的国内外研究进展,同时总结抗菌活性包装膜在果蔬类、动物源类食品中的应用,并对控释型抗菌活性包装膜未来的发展趋势进行展望。结果抗菌活性膜与控释技术相结合的研究还处于起步阶段,其抗菌剂的选择、安全性、物理性质、释放规律等问题还需深入研究。结论国内外抗菌薄膜的实验室研究阶段基本成熟,但是在结合控释技术的应用方面还有待进一步推广,因此,开发安全、高效的控释型抗菌活性包装膜和推广食品包装应用是食品包装技术的研究方向。  相似文献

目的 为制备性能良好和绿色环保的聚乙烯醇薄膜提供一定的理论依据。方法 分类介绍壳聚糖、纳米纤维素、可降解塑料、蛋白质等生物质材料增强聚乙烯醇薄膜及其在食品包装领域的研究现状。 结果 虽然通过与不同的生物质材料共混改性,可获得性能较为优良的聚乙烯醇薄膜,且用作食品包装时,具有抗菌与抗氧化、智能标签和整体保鲜的效果,但成本问题制约了实际生产。结论 利用生物质材料可以增强聚乙烯醇薄膜的综合性能,在食品包装领域有较好的发展前景。  相似文献

目的综述微胶囊技术在食品包装领域的研究进展,为进一步开发微胶囊技术在食品包装中的应用提供科学的研究基础。方法通过对国内外研究现状和研究成果的分析和总结,介绍了微胶囊的功能、作用机理、制备和表征方法,概括了微胶囊技术在食品包装中(包括抗菌包装、防虫包装、果蔬保鲜包装、可食膜、冷鲜肉包装、相变材料-控温包装、生物质包装材料)的研究进展。结果分析表明微胶囊技术能够增加活性成分的稳定性,与包装系统结合能够达到缓释抗菌或控制温度等效果,提高了产品的货架期,其与包装系统的结合主要有4种方法(原料共混、涂覆、装入小袋置于包装系统、固载纤维法)。结论研究微胶囊与聚合物原料的最佳加入比例能够获得综合性能较好的包装膜,微胶囊技术在可食膜、相变材料-控温包装、生物质包装材料方面的发展潜力较大。  相似文献

目的综述环保纳米包装材料的最新进展,为食品包装行业提供理论指导。方法从活性包装、智能包装和生物基包装这3个方面进行阐述,再对其安全性进行分析。结果纳米材料因其独特的尺寸效应,优异的物理化学性能、生态性能和加工性能等,使之在包装领域,尤其是食品包装得到了广泛的关注与应用,但需重点关注其安全性问题。结论纳米材料能有效改善包装材料的性能,使包装材料智能化,虽然该研究尚处于起步阶段,但纳米技术在食品包装领域具有显著的发展前景。由于可参考的数据不够充分,纳米材料的毒性问题以及迁移到食品中的安全性等还需进一步研究。  相似文献

目的研究气体监测类智能包装标签技术的原理、特点及研究进展。方法综述气敏类智能包装中泄漏指示标签、新鲜度指示标签、射频识别标签的研究现状及应用。重点阐述面向CO_2气体监测和识别的智能包装的分类及其制作方法,并对CO_2传感器在气敏类智能包装中的应用进行阐述。结论近年来智能包装标签技术方面取得了大量研究成果,推动了食品保鲜包装行业的快速发展。气敏类智能包装能够有效检测和监测被包装食品的质量及安全性,对推进包装技术的信息化与智能化起到了重要作用。CO_2传感器在食品新鲜度智能监测方面具有广泛应用,也是未来食品保鲜包装技术领域的发展方向。  相似文献

目的论述活性食品包装膜的研发技术与功能分类,为食品包装行业的材料开发与研究提供基础。方法以抑菌及抗氧化活性食品包装膜为主,总结活性包装膜的制备方法及应用效果,对活性膜研究过程中存在的问题进行较为深入的分析,并总结抑菌性、抗氧活性食品包装膜在国内外的研究进展,同时展望活性包装膜的未来发展趋势。结果抑菌及抗氧化活性食品包装膜的研究与开发处于起步阶段,尚未建立起完善的研究应用体系,其抑菌机理、抗氧化机理、安全性、时效性等相应的理论模型和检测方法还需进一步的深入研究。结论抑菌及抗氧化活性食品包装膜有一定的高效性、稳定性及安全性,具有较大发展潜力与市场价值。  相似文献

Migration tests at different temperatures and storage periods were performed to evaluate the release of active compounds from active whey protein films (WPFs) to a food and food simulants. Whey protein film incorporated with different levels of an optimized essential oils (EOs) blend (1%, 2%, 2.7%, and 5%, w/w) were prepared by casting. This blend contained EOs from rosemary and 2 species of cinnamon. Salami was packaged with WPF and stored during 180 days at 5°C. Temperature influenced significantly the migration of compounds (P<.1). It was observed that eucalyptol was the compound that presented the highest potential of migration into 95% ethanol (v/v). After contact of film with salami, it was observed that, in general, more than 50% of active compounds released from WPF to salami. It was observed that higher amounts of active compounds were released to salami than to fatty food simulant. Results suggested that the release of compounds depends on their affinity with the food/food simulant, temperature, their concentration in packaging, and composition of food. Active packaging may ensure the quality of food due the migration of compounds from EO with antimicrobial and antioxidant activity incorporated in the film to the foodstuff.  相似文献

目的介绍缓释抗菌包装在食品包装中的研究现状。方法从实验和理论2方面详细讨论其发展现状,并指出目前的研究瓶颈。结果在实验研究方面,多集中于单层抗菌材料,对影响抗菌剂缓释过程的因素缺乏深入探讨。在理论模型研究方面,缺少对活性成分释放机理的研究。结论缓释抗菌包装的研究还处于初级阶段,还有很多问题有待解决,如加工方式、环境条件以及食品-材料界面等对缓释动力学过程的影响等。  相似文献

目的 综述包装技术在食品生物胺安全控制领域的研究现状及应用进展,为新型高效的食品生物胺控制包装的研发提供借鉴与参考,助力食品安全国家战略的实施。方法 通过收集和整理相关文献,在概述食品中生物胺的形成机制和危害的基础上,探讨传统食品包装在控制生物胺形成方面的成效和局限性,重点总结近年来出现的新型生物胺控制包装技术(气调包装、抑脱羧酶活性包装及抑菌活性包装)及其研究进展,并对其未来发展方向进行展望。结论 食品包装可实现生物胺的安全控制,研发新型、高效的生物胺安全控制包装技术对于保障消费者舌尖上的安全具有重要的现实意义。  相似文献

Sterilization of packaging materials for pharmaceutical or food products with ionizing irradiation can cause chemical and physical changes in polymer materials. The effects of γ‐irradiation on the formation of solvent extractable radiolysis products of six flexible packaging materials for foodstuffs and/or pharmaceutical applications were studied after treatment in a 60Co‐irradiation plant. The polymer materials polyethylene, polypropylene, poly(ethylene terephthalate), polyamide, polystyrene and poly(vinyl chloride) were investigated after treating with an irradiation dose of 44 kGy. The compositional changes in solvent extractable radiolysis products of each packaging material were quantified. In most cases the radiolysis products formed could be identified using GC/MS. The polyolefine materials (PE and PP) showed an increase of low volatile compounds after irradiation due to an oxidative decomposition of the polymer and typical polymer substances like oligomers and additives. Other packaging materials such as PET, PA and PS did not significantly change their amount of solvent extractable compounds after irradiation with 44 kGy. The PVC packaging material used in this study was not resistant to irradiation treatment at all. Because of the release of HCl during irradiation a large amount of volatile substances could be extracted from the PVC sheet. For consumer protection and also to meet general food packaging legislative requirements for irradiated packaging materials, it is necessary to evaluate the compositional changes in the polymers during irradiation, especially for irradiated polyolefines and PVC. Most attention should be paid to low volatile radiolysis products which are the most likely to migrate into a foodstuff or a pharmaceutical product. Copyright © 1999 John Wiley & Sons, Ltd.  相似文献

目的 对纤维素纳米纤维的制备及其在食品包装领域的研究进行综述,以期为食品包装材料的发展提供理论支持。方法 总结近几年纤维素纳米纤维的不同加工制造方法,关注食品包装材料的气体阻隔性能、抑菌性能、紫外线阻隔性能、疏水性能和新鲜度监测性能等,阐明纤维素纳米纤维在食品包装中的研究进展。结果 可以通过化学法、化学法结合机械法和酶法等方法制备纤维素纳米纤维,但均存在产率低、能耗高、尺寸分布不均匀等问题。纤维素纳米纤维可以应用于气体阻隔、抗菌、防紫外线、疏水及智能包装材料,现阶段的纳米纤维制品很难兼顾多功能性。结论 纤维素纳米纤维食品包装材料有望取代石油基塑料包装,在食品包装领域具有较大的应用前景。  相似文献

Food wastage is a critical and world-wide issue resulting from an excess of food supply, poor food storage, poor marketing, and unstable markets. Since food quality depends on consumer standards, it becomes necessary to monitor the quality to ensure it meets those standards. Embedding sensors with active nanomaterials in food packaging enables customers to monitor the quality of their food in real-time. Though there are many different sensors that can monitor food quality and safety, pH sensors and time-temperature indicators (TTIs) are the most critical metrics in indicating quality. This review showcases some of the recent progress, their importance, preconditions, and the various future needs of pH sensors and TTIs in food packaging for smart sensors in food packaging applications. In discussing these topics, this review includes the materials used to make these sensors, which vary from polymers, metals, metal-oxides, carbon-based materials; and their modes of fabrication, ranging from thin or thick film deposition methods, solution-based chemistry, and electrodeposition. By discussing the use of these materials, novel fabrication process, and problems for the two sensors, this review offers solutions to a brighter future for the use of nanomaterials for pH indicator and TTIs in food packaging applications.  相似文献

Packaging plays an important role in ensuring food safety and quality, and the development of active packaging, especially antimicrobial packaging, enables actively inhibiting/killing the microorganisms causing food spoilage and thus extending the product's shelf life. A survey of the publications revealed that generally 50% shelf life extension is possible. The goal of this study is to assess the overall environmental performance of the food and packaging system considering the effect of food loss reduction by using active packaging. A comparative life cycle assessment has been carried out, focusing on a case study: essential oil component‐enabled packaging for fresh beef. Different scenarios were set up to contrast the situations of food using conventional packaging (current situation) and food using novel active packaging (containing active coating). Additionally, a sensitivity analysis has been integrated, aiming to identify the breakeven point of the balance. In the scenarios using the best‐performance active packaging, it was shown that a breakeven point can be achieved across the four impact categories evaluated, including global warming, fossil energy demand, acidification potential and eutrophication potential. It is expected that the obtained results would serve as guidelines for active packaging development striving for a positive eco‐profile of the food and packaging system. Active packaging provides a way to prevent the food putrefaction effectively . Various studies provide information on the actual preservation effect of active packaging or the migration of active agents from active films into various food stimulants separately. However, there is little related data available regarding the combined analysis of release and preservation effect. In this work, we examined the properties of active food packaging films successfully produced by extrusion of ethylene vinyl alcohol copolymer (EVOH) films with clove essential oil (C). The characterization of mechanical, thermal and barrier properties of the packaging polymers film showed that the addition of clove essential oil did not decrease their properties and C as plasticizer improved process fluidity of EVOH resin. The release of C from film to various food stimulants was measured by using HPLC, and Fickian diffusion models were used to fit the data with appropriate equation. The effects of E/C (ethylene vinyl alcohol copolymer/clove essential oil) films on quality assessment of Grass Carp slice based on sensory analysis and biochemical indices during refrigerated storage (4 ± 1°C) were examined over the period of 10 days. Total volatile basic nitrogen (TVB‐N), total viable counts, pH, TBA, water holding capacity (WHC) and texture properties were evaluated. The results indicated that the active film containing 3% clove essential oil had different release parameters in four food stimulants and it could effectively maintain the fish freshness and extend the shelf life to 7–8 days during cold storage compared with control group, which was only 4 days. 目的 探索材料智能型包装的分类体系、应用领域与设计实现。方法 以现行材料智能型包装案例及文献为基础,对国内外相关的设计实践、专利及相关理论进行系统分析,并根据材料功能特性对其进行分类研究。结果 提出了更完善的材料智能型包装的概念、分类、应用领域与设计关键。根据材料本身及其应用在材料智能型包装上表现出来的功能特征,在包装的展示销售、保鲜提醒、商品防伪以及安全防护等方面具有良好的应用前景,重点阐述了功能特征表现较为明显的变色材料包装、发光材料包装、智能水凝胶材料包装、活性包装等,并提出材料在智能型包装设计过程中应着重把握材料选择的恰当性、信息传达的准确性以及图形表现的巧妙性3个方面。结论 对材料智能型包装的分类及设计应用进行了细化研究,为智能化包装的拓展研究提供了更多的方向,有利于推动包装产业的转型升级。  相似文献
