通过低温压榨亚麻籽获得冷榨亚麻籽油(cold—pressed flaxseed oil,CFO),并分析其主要理化指标,着重研究CFO的静态、动态流变特性,同时分别采用Casson、Herschel-Bulkley和Bingham模型对其流体行为进行拟合,并采用Arrhenius方程分析其粘度热动力学参数。研究结果表明:在剪切速率为0.1~200s“下,CFO由非牛顿流体逐渐转化为牛顿流体;当剪切速率大于10s^-1时,CFO呈牛顿流体;同时分析得出CFO的粘度活化能为3095.4cal/mol;CFO的粘度、剪切应力、损耗模量、塑性稠度系数、高剪切极限粘度和稠度系数随着温度升高而降低,但是温度变化对CFO的贮能模量影响不显著;另外通过比较3个流变模型得出Bingham模型适用于CFO。  相似文献

以菜籽毛油为原料,分析了脱胶、脱酸、脱色和脱臭(四脱精炼)对菜籽油流变特性以及品质的影响。研究结果表明,四脱精炼对菜籽油的脂肪酸组成和折光指数无显著影响;在恒温下,随着剪切速率的增加,菜籽油的粘度先逐渐减小再趋于稳定,即菜籽油是由非牛顿流体逐渐向牛顿流体转化;同时在大范围的剪切速率下,剪切应力与剪切速率呈近线性关系,菜籽油为牛顿流体;精炼所导致的菜籽油粘度差别与微量成分相关,并且精炼可以降低菜籽油的屈服应力值;Herschel-Bulkley的简化方程τxy=τo+K(dVx/dY)或者Bingham方程相对适用于表征菜籽油在四脱精炼过程中的流变特性。  相似文献

Goldenberry (Physalis peruviana) juice was prepared and enzymatically treated with two dosages (300 and 600 ppm) of Pectinex Ultra SP‐L, then, the juice was concentrated to 30 and 40°Brix. Rheological properties of juices were studied at a wide range of temperatures (5 to 100C) and shear rate range from 0.3 to 100/s using Brookfield Digital Viscometer. The Herschel–Bulkley, Casson and Bingham rheological models were applied to describe the rheological properties of different juices. These properties are key parameters required to solve food industry problems in numerous areas such as quality control, evaluation of consumer acceptance and texture. The results indicated that juice concentrates behave as non‐Newtonian fluids (pseudoplastic) and have a definite yield stress. The Bingham and Casson, plastic viscosity, yield stress, consistency index and flow index decreased with increasing enzyme dosage and temperature. The effect of temperature on the viscosity described by means of an Arrhenius‐type equation. The activation energy for viscous flow depends on the total soluble solids. Moreover, sensory evaluation for juices was carried out. In consideration of industrial utilization, detailed knowledge on the rheological and physicochemical characteristics of cape gooseberry juice is of major importance.  相似文献

The rheological behavior of pomegranate juice (Punica granatum L.), prepared from fresh pomegranates, was studied as a function of solids concentration in the range 17.5–75°Brix at 10–55C, using a controlled stress rheometer. Concentration methods did not influence flow behavior. There were no significant differences (P > 0.05) between viscosity and activation energy values for the pomegranate juices concentrated by different methods. The juices exhibited Newtonian behavior regardless of the concentration method. The effect of temperature was described by an Arrhenius‐type equation with an activation energy in the range 5.34–32.2 kJ/mol depending on concentration. An exponential model described better the effect of the soluble solids on the viscosity and Eavalues. A simple equation was proposed for describing the combined effect of temperature and soluble solids content on the juice viscosity.  相似文献

Suitability of Bingham, Herschel-Bulkley, Casson, and Mizrahi-Berk models, to characterize the flow behavior of peach products during extrusion was investigated. The Casson equation sufficiently described the flow of peach extrudates within the 49 to 125 s-1 shear rate range. As concentration increased, yield stress and consistency coefficients increased. A rheological model was proposed to describe the viscosity of peach extrudates. The model incorporates the effect of shear rate by the Casson equation and the effect of concentration by a linear expression. The model provided good fit to the experimental data for peach extrudates reconstituted from drum-dried peach purees.  相似文献

The vane method in controlled shear stress mode was used to determine the yield stress and the shear rate—shear stress data of tomato purees containing 10–35% pulp of two different average particle sizes: 0.34 and 0.71 mm. Consistency index and apparent viscosity increased significantly with pulp content and decreased with average particle size. The effect of pulp weight fraction (P) on relative viscosity (ηr) could be described by the single parameter equation: ηr= [1 – (P/A)]−2, while the effect of particle diameter on ηr could be described using Peclet number. Magnitudes of yield stress determined directly by the vane method were higher than those obtained by using the Casson model, and were proportional to the square of pulp content. Reduced Casson yield stress—P data on purees of both particle sizes followd a single curve. Effects of pulp content and particle size on vane yield stress and apparent viscosity were evident from the correlation forms with high values of R2.  相似文献

以3种不同芥酸含量的油菜籽为原料,通过低温压榨获得冷榨菜籽油(cold-pressed rapeseed oils,CROs),分析其静态和动态流变特性以及特征指标,同时采用Bingham模型对其流体行为进行拟合。结果表明:在剪切速率为0.1~200s-1条件下,CROs呈剪切变稀的假塑性流体;当剪切速率大于5s-1时,CROs表现为牛顿流体行为;温度是影响CROs流变性质的重要因素,CROs的黏度、损耗模量(GO`)和塑性稠度系数(ηp)随着温度升高而降低,但是温度变化对CROs的贮能模量(GO`)影响较小;另外CROs的黏度和GO`随芥酸含量增加而提高,而且ηp值与芥酸含量成正相关。  相似文献

ABSTRACT: Rheological behavior of a slurry consisting of 1- to 3-mm diced tomatoes suspended in tomato juice was evaluated by an in-line measurement method based upon ultrasonics. This technique permitted the measurements of yield stress, consistency index, and apparent wall slip. The suspension exhibited a yield stress at every flow rate studied, and its value was found to be 0.79 ±0.11 Pa. The shear viscosity at different shear rates was obtained in-line without assuming a specific constitutive equation. A comparison of Herschel-Bulkley, Power Law, Bingham Plastic, and Casson models showed that this suspension was best characterized with the Herschel-Bulkley model. The apparent wall slip region was successfully modeled as a Bingham fluid. This study shows the usefulness of this method for in-line characterization of particulate tomato products.  相似文献

In this paper, rheological properties of tahin are reported at temperatures from 20 to 70 °C and shear rates in the range 0.13–500 s?1. Temporary hysteresis loops were observed in the first cycle of the flow curves. The steady shear behaviour of tahin was pseudoplastic and described by a power law model. The consistency coefficient exhibited strong temperature dependence for which the activation energy of flow was 21.6 kJ mol?1. The flow behaviour index of tahin tended to increase whereas the consistency coefficient tended to decrease during storage at room temperature. Tahin oil exhibited Newtonian behaviour with a strong dependence of viscosity on temperature. The activation energy of flow for tahin oil was 35.7 kJ mol?1. While reconstituted suspensions containing up to 20% solids exhibited Newtonian behaviour, those with more solids and the original tahin showed pseudoplastic behaviour. The Krieger–Dougherty model fitted the suspension viscosity data well. Below 20% solids level there was no effect of particle size on the viscosity of the reconstituted suspensions. It was shown that for the same amount of solids the viscosity of a ‘polydisperse’ suspension was lower than that of a ‘monodisperse’ suspension. Rheological characteristics of pimento purée were investigated at different temperatures (5 to 40 °C). The purée serum was a cloudy liquid (0to40 μm particles) with Newtonian behavior, and flow activation energy of 25.9 kJ/ mol. The power law model was applied to fit the pseudoplastic behavior of pimento purée. The activation energy for flow, evaluated with the Arrhenius‐Guzman equation, was low and depended on the variety. A modified Krieger‐Dougherty model with 2 parameters was proposed to describe the effect of wet pulp fraction on the relative viscosity. In the semi‐empirical model, the colloidal contribution to the viscosity at low shear rate and the parameter variations with the shear rate were considered.  相似文献

The steady shear viscosity and yield stress of cocoa powder dispersed in three cocoa butter replacers (CBRs) are measured over a wide range of powder concentration and temperature. The flow activation energies of the three CBRs are nearly the same, and close to that of cocoa butter. Values of intrinsic viscosity of cocoa powder dispersed in corn oil and Socolate 36–38 are in the range of 4.0–5.0, (similar to that in cocoa butter), suggesting that these two CBRs are good cocoa replacers. A lower value of intrinsic viscosity is found for the powder dispersed in Super YZ-2. Viscosity measurements indicate that all three CBR dispersions exhibit Newtonian behavior at low volume fraction, but non-Newtonian shear thinning characteristics when the volume fraction φ > 0.3 at 60C. The non-Newtonian behavior can be described by the Casson model when φ exceeds a critical value, φ mo , the maximum packing fraction at zero shear. The yield stress can be related to the powder volume fraction using a four-parameter equation originally proposed by Zhou et al. (1995).  相似文献

Flow curves of aqueous dispersions of tragacanth gum (T) with sucrose and glucose at different temperatures were determined using a controlled‐stress rheometer. The effect of sodium chloride without or with sucrose (at the highest content) on the rheology of T dispersions was evaluated. The presence of sucrose and glucose promoted a noticeable enhancement impact on the apparent viscosity of aqueous T dispersions, which depended on sugar type/content, shear rate and temperature. In all cases, the glucose addition led to the largest enhanced viscosities at low shear rates (<10 s?1) and temperature. The joint action of sugar and salt exhibited a notable effect on apparent viscosity at low shear rates, softening the strong shear‐thinning behaviour of T samples. Flow curves of T in the presence of sugars were satisfactorily described by the Cross‐Williamson model, being semi‐empirical correlations of the model parameters with ingredients content and temperature stablished.  相似文献

对经45、32、24和16目筛网过筛所得番茄汁液的流变性质进行了研究。采用旋转式粘度计测定了番茄汁的剪切速率-剪应力数据。通过剪切速率-剪应力实验数据的关联发现,番茄汁液的流变行为可用Bingham模型表征。确定了不同温度和不同网目下番茄汁液的稠度指数和屈服应力。同时也建立了不同网目下番茄汁液的表观粘度与温度函数关系的关联式。  相似文献

This study aimed to evaluate the thermal conductivity and rheological behavior of acerola pulp at concentrations of 5.5, 7.5, 9.5, 11.5 and 13.5 °Brix and temperatures of 20, 30, 40, 50 and 60 °C. Among the models used to determine conductivity, Maxwell-Eucken was used for data acquisition. Linear equations were fitted to evaluate the influences of concentration and temperature on the thermal conductivity of the pulp. The pulp structure, particle sizes and relation between insoluble and soluble solids were also discussed. The rheological behavior, specifically apparent viscosity versus shear rate, was influenced by both the soluble solids content and the temperature. Among the mathematical models used to test the fit of the experimental data, the Herschel–Bulkley model provided the best statistical adjustments and was then used to determine the rheological parameters. Apparent viscosity was correlated with temperature by the Arrhenius equation. Acerola pulps were shear thinning and thermal conductivity increases with viscosity decreasing with increasing temperature. The structures and concentrations had an impact upon the effective thermal conductivity. The temperature and concentration values have been fixed and equation expressing conductivity as a function of apparent viscosity was proposed, which enable the evaluation of an existing relationship between the two properties.  相似文献

以造纸污泥为研究对象,采用NXS-11型旋转黏度计在室温(23·5℃)条件下对质量浓度为55%、60%和65%的污泥进行剪切应力测试,获得不同剪切速率下对应的剪切应力和黏度值,得出造纸污泥的流变曲线,并回归出流变方程和黏度表达式。可以看出浓度为55%和65%污泥的流体类型为假塑性流体,60%污泥的流体类型为宾汉流体。  相似文献

A study was conducted to investigate the effect of temperature on viscosity of sweet potato (SP) puree. Rheological data of the puree were measured using a Bohlin VOR Rheometer. Shear rates employed ranged from 0.01–921 s?1. Thermal scans were run at 15, 25, 40, 60, 75, and 90C. The puree exhibited “shear thinning” behavior with a yield stress value of 10 Pa at each temperature tested. The characteristic of the flow behavior of the puree was determined by fitting the experimental data to Herschel-Bulkley, Casson and Modified Casson models. The model with the best fit was then used to represent the combined effect of shear rate and temperature on the apparent viscosity of SP puree in a model based upon the Modified Casson model. The model was validated using data for SP puree samples at 50C. Results showed that, within the experimental conditions used in this study, the model could adequately predict apparent viscosities of sweet potato puree processed at different temperatures.  相似文献

In this study, rheological properties of several food hydrocolloids (carrageenan, pectin, gelatin, starch and xanthan) were evaluated using a rotational viscometer at three concentrations (1–6%, depending on the type of hydrocolloid) and four temperatures (20, 40, 60 and 80°C). Samples were subjected to a programmed shear rate increasing linearly from 0 to 300 s−1 in 3 min, followed by a steady shear at 300 s−1 for 10 min and finally a linearly decreasing shear rate from 300 s−1 to 0 in 3 min. Experiments were performed in duplicate. In general, the power law model fitted most of the experimental results. Xanthan gum and carrageenan (at 20oC) were exceptions, characterized by a yield stress and hence the rheograms were fitted with the Herschel-Bulkley model. Furthermore, gelatin showed a Newtonian behavior. Three models (power, exponential and polynomial) were used to evaluate the concentration effect on apparent viscosity. Arrhenius model was used to describe the temperature effect. Among the samples, carrageenan showed the most temperature dependency and xanthan gum, the least.  相似文献

Effects of pasteurization and frozen storage on the rheological behavior of liquid whole egg (LWE) were studied using a cone and plate viscometer. Homogenized LWE control and LWE heated at 60°C, 64°C or 68°C for 3.5 min were evaluated during 80 days storage at ?24°C. Thixotropic behavior was observed in all frozen samples. Apparent viscosity increased with pasteurization and frozen storage. Unpasteurized LWE exhibited Newtonian behavior throughout storage. Pasteurized LWE flow properties changed from Newtonian to Bingham Plastic during storage. Identification of rheological parameters will help understand the molecular changes that occur during the processing and storage of LWE and help processors monitor LWE quality.  相似文献
